Sweet Potato Soup
This Sweet Potato soup is the real deal. Your entire family (kids and adults!) is going to declare this meal the best! This soup is creamy, comforting and packed with vegetables (sweet potatoes, celery, carrots, red pepper, corn, onion and white beans!). What’s not to love?
And yes – you heard me correct, your kids are going to love this soup too! If you’re looking for ways to introduce them to sweet potatoes, then this soup is the way to do it. Even my 1 year old gladly picks the sweet potatoes up out of this soup and gobbles them down!
Over the weekend I was itching to make something with sweet potatoes so I decided to make a classic Fall recipe – Sweet Potato soup! We love sweet potatoes so much, we might have to start growing our own sweet potatoes soon!
What I love about cold weather soups is that they can be creamy (and cheesy) but you pack them full with vegetables! As I mentioned so many times before I’m in love with my slow cooker, so you’re going to love how easy this is!
Sweet Potato Soup Recipe
First you’ll throw your cooked dice ham, corn, sweet potatoes, celery, red pepper, white beans and onion in the slow cooker. And then add 5 cups of chicken broth. By the way, this is such a great recipe to make with leftover ham, so make sure to bookmark it for the holidays! (Need another ham recipe? Make sure to try Italian Ham Sliders!).
After you pour in your broth, you’ll want to add your spices, salt, pepper, basil, parsley and garlic.
Creamy Sweet Potato Soup
You’ll cook it on low for 8 hours and then add your creamy milk/cheese mixture and cook for 1 more hour.
After a full 9 hours you’re going to have an AMAZING Creamy Slow Cooker Sweet Potato and Ham Soup to serve and eat your heart out!
How to Freeze Sweet Potato Soup
As a bonus, this soup is one of those dishes that tastes just as good as leftovers, so we usually enjoy these 2 nights in a row! Make sure to serve with some crusty bread for delicious dipping too! Love using your slow cooker? Make my Crockpot Bread!
If you don’t want to eat leftovers right away, that’s ok too. Just throw this soup it in some freezer bags, and when you’re ready to use defrost in the refrigerator the night before.

Creamy Slow Cooker Sweet Potato Soup

- 3 cups cooked ham diced
- 3 cups sweet potatoes peeled and diced
- 1 cup celery diced
- 1 cup carrots diced
- 1 small red pepper diced
- 1 small onion diced
- 1 15 oz can corn (drained)
- 1 15 oz can white beans (drained)
- 5 cups chicken broth
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- 1/2 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon minced garlic
- 5 tablespoons butter
- 6 tablespoons flour
- 2 cups milk
- 1 cup cheddar cheese
Instructions
- Add ham, sweet potatoes, celery, carrots, red pepper, onion, corn, white beans, chicken broth, basil, parsley, salt, pepper and minced garlic into a slow cooker.
- Cook on on low for 8 hours.
- When there is 10 minutes left on the slow cooker, add butter to a small saucepan. Once melted add your flour and whisk until smooth. Add milk and continue stirring until creamy. Add cheddar cheese and stir until completely melted.
- Add your milk mixture to slow cooker and stir. Cook for 1 hour on high.
- Serve, enjoy.

Thought this was wonderful. My only problem was the carrots weren’t cooked enough, a little crunchy. Everything else was perfect. Loved the flavor and putting sweet potatoes in soup was a new for me. Definitely worth making again! Thank you!
