We love Quaker Granola bars in this house! Our favorite are the chocolate chip bars, which are great for a quick snack.  I can’t tell you the amount of boxes that we have bought in the past years.  One thing though I’ve never liked, the price.  A box of granola bars usually ranges in the $4-$5 range which is pretty expensive considering it’s made with pretty basic ingredients.  

So before I would go to the store and buy more, I decided to try to make my own.  I’m so glad I did because not only are they (much) cheaper, but I find them more filling.  Plus it’s a great feeling knowing every single ingredient (and being able to pronounce them) that’s going into them.

Spinach Sweet Potato Fruit Pouch

Easy to make fruit puree pouches – perfect for baby and toddler!  My daughter is anemic, so I came up with this Spinach Sweet Potato Fruit Pouch recipe to give her more Iron Rich foods! She loves these!

When we went to our 15 month old doctor’s appointment, we found out that Enceladus was anemic and that she needed more iron rich foods in her diet.   She was drinking too much milk, which was causing iron not to be absorbed. 

Iron Deficiency is fairly common with toddlers, especially when they drink a large amount of milk everyday. On average, doctors say toddlers shouldn’t have more than 24 ounces of milk, but even at 16 ounces of milk a day Enceladus was anemic.

Always being one to try to naturally cure things, I came up with this Spinach Sweet Potato Fruit Pouch, which helped her get her iron levels to where they needed to be!

Leafy dark greens are one of the best sources of iron, such as spinach or kale. If you wanted to substitute kale for spinach in this recipe, go for it! I find that spinach works for taste and in general, kids love it in fruit puree!  Sweet Potatoes are a great iron rich food too, so that’s why I’m including both spinach and sweet potatoes!

Baked apple chips are one of the best healthy snacks for a weight watcher and a health freak. Plus, they don’t require any effort and aren’t too expensive. 

Whichever your kind of apple you choose, it depends on your taste. Start by removing the core of the apples. Thinly slice the apple. The thinner the apple slice, the crispier the chips. If you want to get them to look like apple rings (like the photos in this post) use a apple corer.  Sprinkle them with some salt. The salt adds a nice contrast to the sweet flavor the crisps.

Pop the apple crisps in the oven. Let them bake in the oven for 45 minutes and then flip them to the other side for 30 more minutes. This guilt-free snack will surely make your day as you will neither be feeling heavier on the stomach, nor on the heart.

With October just arriving, and a weekend spent with my family picking apples – I couldn’t wait to make these Apple Chips!  Bonus: The entire family family loves them, including my toddler daughter!
