Some people refer to Candied Jalapenos as Cowboy Candy because of how addictive they are to eat!  They’re sugary just like candy, but also spicy due to the jalapenos.  

They’re sweet.  They’re spicy.  They’re just right. They are the perfect combo of sweetness with a kick.  They are amazing on crackers with a little piece of cheddar cheese.  The cheese balances out the heat with a little coolness.    

They’re also perfect chopped up and thrown in hamburger meat for the perfect homemade hamburger.  Try them on top of tacos or nachos too! Oh and they are just the most delicious on top of some pulled pork.

You only need 5 ingredients for this recipe: broccoli, bread crumbs, shredded cheddar cheese, eggs and salt. After you boil your broccoli to soften it, you’re going to add your broccoli to a food processor until smooth.

Then add the rest of the ingredients into a bowl with the broccoli, mixing until it’s all combined. Pour the mixture onto a pan lined with parchment paper for easy cleanup, shaping it into a 8×11 rectangle shape.

Roasted Tomatillo Salsa

This year we’ve grown the most tomatillos in our gardening history so I’ve been excited to experiment with new tomatillo recipes.  I usually rely on my Tomatillo Salsa Verde recipe to make with our tomatillos (plus it freezes great for preserving) but I wanted to make a Tomatillo Salsa that was creamy, thick but not too thick and very tasty.

This recipe calls for tomatillos, onions and jalapenos which makes it a triple threat if you have all 3 growing in your garden.   Roasting them in the oven gives them a rich, smoky taste and helps in making the salsa creamy instead of watery.

What I Love: Lollipops! (Especially Blueberry Muffin Lollipops!)

I love lollipops.  Not just any lollipops though.  I’m talking about the ones that are bursting with flavor and take at least 30 minutes to finish.  Lollipops are one of  my go to snacks during the afternoon to prevent me from snacking away when I’m between lunch and dinner.   The taste makes me happy while keeping me preoccupied so I don’t reach for a brownie instead.  

My favorite brand of lollipops is Linda’s Lollies.  They are the best!  When you compare Linda’s Lollies to another brand you can immediately taste the difference.  These lollipops don’t taste artificial at all.  They come in amazing flavors with each actually tasting like their name.   A lollipop that tastes like a blueberry muffin? It exists.  A lollipop that tastes like maple pancakes? It exists.  A lollipop that tastes like sherbet ice cream? It exists.    Every time I try a new flavor I’m amazed by how they do it.  How do they possibly get a lollipop to taste just like a Cinnamon Bun? I have no idea, but it makes me very happy. I recommend getting the assorted box to try all the flavors.

Do you snack when you get home from work (or school)? Or do you have the willpower to wait until dinner?  I often get scolded because even if dinner is only 30 minutes away, I usually spoil my appetite just a touch with a snack.   Usually it’s a piece of string cheese, a big handful of almonds, a banana or crackers.  One of my favorite snacks is candied jalapenos on a small slice of cheddar on top of a cracker, but sadly I’m all out of candied jalapenos (weep, weep).   So while I was looking for something to become best friends with my beloved salted crackers I came up with this simple Chipotle Lentil Dip. 

This Chipotle Lentil Dip is smoky, flavorful, and brings a touch of heat. Use it to dip chips, crackers or vegetables in! Or use it as a spread on a sandwich! Either way, you can't go wrong!

This is a type of dip that keeps giving.  You get one taste in your first bite but then it develops into a new taste as you continue.  First you’ll taste the smokiness, then a slight sweetness and finally a hint of heat due to those chipotle peppers.   Some people fear spicy foods so this isn’t a heat overload.  It’s not going to burn your mouth, or even make you wince.  It’s a good middle in the road dip that spicy food lovers and haters can both enjoy.   But if you are a heat seeker, add in 2 chipotle peppers and you’ll get double the kick.    With some major football games coming up be sure you make enough if you have guests coming over or are going to a friends house.   This dip is completely veggie friendly and is a good alternative to snack on instead of those greasy finger goods we all eat while watching the big games.

There’s something about a afternoon get together with mini sandwiches that makes me happy.  Can you imagine a brunch with friends and there’s heart shaped delicious sandwiches waiting for you on the table?  Doesn’t that scream love and yum at the same time?  In this super easy to put together recipe we’re going to make Ricotta and Tomato Tea Sandwiches that you can whip up in just a few minutes.

Ricotta and Tomato Tea Sandwich Ingredients

You only need a few ingredients for this recipe: bread, ricotta/garlic/basil mixture, diced tomatoes, and more basil.   You’ll also need some adorable cookie cutters where you can be creative.  I used hearts here because I love you guys, but stars and festive shapes like pumpkins for Thanksgiving would be super cute too.  Also, cat cookie cutters are always a good idea.  Anything cat is always a good idea.  Trust me.

You can use any type of bread, I used whole wheat because that’s always something I have in my refrigerator.  Grab a bunch of pieces of bread and start cutting your shapes out.

In this quick and on the go recipe,  I’m going to show you how to make a delicious treat in less than a minute that will satisfy your sweet tooth and make you everyone’s favorite person.

You’ll need:
Go-Paks! – These are a favorite for road trips and to keep at work.  For this recipe I’d recommend something sweet like Golden OREOs, Chocolate OREOs, Nutter Butter Bites, Chips Ahoy! or Teddy Grahams. I love their Ritz bits but I’d save those for snacking.

Best Store Bought Protein

The body uses protein for energy, to keep us up and running every single day.  That makes protein real important y’all.  I was feeling down with super low energy at the beginning of the Summer because of a diet change and that resulted in low protein.  I started to skim the labels on my food and realized I was only getting 20% of my daily needed intake of protein. It was time for me to take a trip to the grocery store and walk the aisles to figure out what protein was right for me.  

The best sources of protein are meat products (beef, chicken, fish), dairy products (cheese, milk, yogurt, cottage cheese), eggs, tofu, lentils and beans and soy.   Did you know that after water protein is the most plentiful substance in the body?  Our muscles, organs, and immune systems are made up of mostly protein.    Even more important is if you’re a vegetarian you need to pair your meals wisely and eat protein filled snacks to get your daily intake.

So let’s walk into my kitchen and look at some of my favorite store bought food items, filled with protein. These are my go to breakfast and afternoon snack foods to keep my energy going for the day.
