How many peppers should you make? I’d recommend about 2-4 peppers per person, so you can use your judgement here on how many you need to make!
Mummy Pepper Ingredients
- Sweet Peppers, also known as lunchbox peppers. Stems removed and cut in half.
- Black Beans, open up a can and drain and rinse them. You most likely won’t need a full can (unless you’re making lots of mummy peppers!) so use the rest for baked black bean tacos. 🙂
- Mozzarella Cheese, you can slice your own from a block or use shredded cheese – it’s up to you! I will say that I’ve made them with both options and the block cheese is more thicker so the mummy bandages are more visible.
- Candy Eyes, you can find these candy eyes at pretty much any store that has a Halloween section, or on Amazon. My kids love candy eyes and I’m often found adding them to their weekend pancakes so we always have some in our cabinet!
How to Make Stuffed Mummy Peppers
First, remove the stem off each pepper and then cut in half. Place the peppers on a baking sheet.
Fill each pepper with black beans. Add 2-4 strips of cheese per pepper, depending on their size. I think ripping up a mozzarella cheese ball works best because the cheese is thicker, but you can also use already bagged shredded cheese if you want.
Throw them in the oven for 5 minutes so the cheese completely melts.
Now grab some candy eyeballs because the Mummy needs eyes! Press two eyes into each pepper on the melted cheese. I would recommend you do this immediately when they come out of the oven, so the cheese is still soft, it will keep the eyes in place better.

Can I make these in advance?
You can make these in advance by a few hours, but I don’t recommend letting them sit overnight. If you are making in advance, don’t put the eyeballs on them until you are close to serving. Sometimes the moisture in the refrigerator will cause the eyeballs to bleed, which although is spooky – isn’t as cute!

Instructions
- Preheat oven to 350 degrees F. Remove the stem off each pepper and then cut in half. Place the peppers on a baking sheet.
- Fill each pepper with black beans. Add a couple pieces of cheese on top of each one, resembling mummy bandages.
- Bake for 5 minutes to melt the cheese. When removed from the oven, add 2 eyes to each mummy on top of the cheese, gently pressing it down to stick. Serve and enjoy the cutest mummy peppers!
