Halloween Mummy Stuffed Peppers

These mini mummy sweet peppers are the ultimate Halloween snack, perfect for parties or spooky family fun. Stuffed with black beans, wrapped in mozzarella “bandages,” and topped with candy eyeballs, they’re as cute as they are delicious. Easy to make and vegetarian-friendly, they’re a guaranteed crowd-pleaser that will disappear faster than a ghost at your next Halloween bash!

Halloween Stuffed Peppers

Looking for the perfect Halloween snack or party appetizer that’s not only spooky but also irresistibly cute? These mini mummy sweet peppers are exactly what you need! If you’re looking for the perfect side dish next to Halloween Guacamole and Bloody Finger Cheese Sticks on the Halloween table – this is it!

Stuffed with savory black beans and wrapped in gooey mozzarella “bandages,” these adorable peppers are sure to steal the show. Topped with candy eyeballs, they transform into little edible mummies that kids and adults will love.

Not only are they fun and festive, but they’re also easy to make—ideal for busy families or last-minute party prep (because your kid just told you that their class is having a Halloween party TOMORROW!) . Whether you’re hosting a Halloween bash, preparing spooky snacks for your kids, or just getting into the Halloween spirit, these stuffed mummy peppers are perfect!

Plus, they’re vegetarian-friendly, making them a great option for a variety of guests. Serve these up and watch them disappear faster than a ghost in the night!

How many peppers should you make?  I’d recommend about 2-4 peppers per person, so you can use your judgement here on how many you need to make!

Mummy Pepper Ingredients

  • Sweet Peppers, also known as lunchbox peppers. Stems removed and cut in half.
  • Black Beans, open up a can and drain and rinse them. You most likely won’t need a full can (unless you’re making lots of mummy peppers!) so use the rest for baked black bean tacos. 🙂
  • Mozzarella Cheese, you can slice your own from a block or use shredded cheese – it’s up to you! I will say that I’ve made them with both options and the block cheese is more thicker so the mummy bandages are more visible.
  • Candy Eyes, you can find these candy eyes at pretty much any store that has a Halloween section, or on Amazon. My kids love candy eyes and I’m often found adding them to their weekend pancakes so we always have some in our cabinet!

How to Make Stuffed Mummy Peppers

First, remove the stem off each pepper and then cut in half.  Place the peppers on a baking sheet.

Fill each pepper with black beans. Add 2-4 strips of cheese per pepper, depending on their size. I think ripping up a mozzarella cheese ball works best because the cheese is thicker, but you can also use already bagged shredded cheese if you want.

Throw them in the oven for 5 minutes so the cheese completely melts.

Now grab some candy eyeballs because the Mummy needs eyes! Press two eyes into each pepper on the melted cheese.  I would recommend you do this immediately when they come out of the oven, so the cheese is still soft, it will keep the eyes in place better.

Can I make these in advance?

You can make these in advance by a few hours, but I don’t recommend letting them sit overnight. If you are making in advance, don’t put the eyeballs on them until you are close to serving. Sometimes the moisture in the refrigerator will cause the eyeballs to bleed, which although is spooky – isn’t as cute!

Ingredients

  • 24 sweet peppers stems removed, cut in half
  • 1 cup black beans drained and rinsed
  • 1/2 cup mozzarella cheese block, sliced into thin pieces (or you can use shredded cheese)
  • candy eyes

Instructions

  • Preheat oven to 350 degrees F. Remove the stem off each pepper and then cut in half.  Place the peppers on a baking sheet.
  • Fill each pepper with black beans.  Add a couple pieces of cheese on top of each one, resembling mummy bandages.
  • Bake for 5 minutes to melt the cheese.  When removed from the oven, add 2 eyes to each mummy on top of the cheese, gently pressing it down to stick. Serve and enjoy the cutest mummy peppers!
