What is Toffee?

Toffee is a type of hard candy, made by boiling sugar and butter together.  If often has a nut based bottom and chocolate top.  For this recipe, we’re going to use pecans for the base and white chocolate for the top!  Lots of people confuse toffee and caramel, but toffee is more crunchy while caramel is more sticky!

Do you guys know about Joe’s Special?  It’s a dish that started in San Francisco in the 1920s that consisted of eggs, ground beef, spinach and garlic.   A few places make their own version, including a Brooklyn based restaurant that my husband fell in love with.  I wanted to try a modern spin on it, removing the spinach and replacing it with green beans and peppers. The result is a delicious Scrambled Egg and Ground Beef Casserole!

We got a Cuisinart ice cream maker a few weeks ago and it’s changed our Summer!

Having a ice cream maker is a great idea. And by great idea I mean a deliciously bad idea.  Its like you can make ice cream whenever you want.  Which means if you happen to keep all the supplies on hand you can eat ice cream every single day.  Delicious, totally.  Dangerous, totally.

Easy Indian Basmati Rice

Learn how to cook PERFECT Indian Basmati Rice in under 30 minutes! This easy recipe uses basmati rice and fragrant spices to create authentic tasting Indian rice. Pair it with roasted vegetables to make a healthy, vegan meal for dinner!

I love Indian food.  The problem is that I don’t have any experience with Indian cooking, or traditional Indian spices so I was always scared to try cooking it in my own kitchen.  Instead I forked over the money for Indian take-out, wishing I could make my own!   Finally,  I decided I was going to learn how to make basmati rice, Indian style.

easy Indian Basmati Rice Recipe

How authentic is this recipe?  It tastes so much like our favorite Indian restaurant that Matthew thought I bought it from there!  And here’s the best part – it’s so easy to make! You can be a total Indian food cooking newbie and totally nail this basmati rice recipe!

Let’s talk rice first because not all rice is created equal.  Indian rice calls for basmati (baz-mah-tee) rice which is a long grain rice that’s more expensive than typical plain white rice.   You will find various brands of it in your local grocery store but here’s the one I use.  Basmati is my favorite, not just because of the taste but the smell – it smells amazing!

Nutritionally, white and basmati rice have pretty much the same calorie content as basmati rice is about 200 calories per 1 cup cooked rice.

Roasted Soybeans

Salted Roasted Soybeans recipe using fresh soybeans.  This baked recipe is so easy to make! These are perfect for healthy snacking!

A few years ago I learned how easy it is to grow soybeans in your garden.  They tend to be one of those plants where you plant a seed, don’t do much else and suddenly you have beans galore to pick.

Soybean recipes

Soybeans can be used in many recipes, including fresh edamame,  pesto for pasta/dip.   For this harvest I wanted to use some of our soybeans for a roasted healthy snack, something where I can throw a bunch in a bag and enjoy at my desk at work or a road trip.     I love guilt free snacking so I love these Roasted Salted Soybeans.

Crock Pot Corned Beef Brisket with Vegetables

DELICIOUS CROCK POT Corned Beef Brisket with Vegetables recipe!  This slow cooker recipe cooks a 4 pound corned beef brisket with cabbage, carrots, potatoes and onion to create a amazing dinner! Use the leftovers the next day for the best BBQ sandwiches!

When it was my first time buying brisket many years ago, I didn’t know where to look for it at – with the meats on the shelf? Behind a refrigerated door?Is it at the meat counter?  And what does it look like?  I had no idea. So after a google image search and phone in hand, there I found it in the meat department on the top shelf all the way to the left.
My first thought- yikes, that is expensive.
Raw Corned Beef Brisket in Grocery Store

My second thought – they had point cut and flat cut.  What is the difference?  Again… to Google I went in the meat department.  Point cut has more fat content but is more tastier.  Flat cut is less fat, less tender.  Also to note Flat cut is about twice the price (twice the yikes).

Best type of meat for Brisket

So when I saw a reviewer saying “If you want taste, go with the Point Cut” that was it. I wanted the flavor and texture,  I wasn’t about to take that away for less fat.   If this is a special meal you have a few times a year, do the point cut – just do it.

Delicious Vanilla Sprinkle Blondies with a vanilla glaze frosting on top is everyone's favorite treat! This easy dessert recipe makes fudgy, ooey gooey cake tasting vanilla brownies (blondies!). Add pretty sprinkles on top and they're perfect for a birthday party!

I should warn you now, these blondies are dangerously good.  I can’t tell you how many blondies I ate because you would have this image of me being a blondie monster in your head and none of you think that.  Right?  Oh goodness, I’m glad I’m right (thanks for making me feel better).

I love a blondie that is ooey gooey, with some frosting on top.   And this frosting is gorgeous.  It’s my new go to frosting for… well, everything.  It sets perfect and has a shine to it.  I’ve always had a problem making a frosting that was thick enough to set without dripping off the sides of brownies, cakes and donuts.  But this one is a keeper.  Expect to see it often in the next few months in different forms because I have a bunch of donut recipes in my head that  need this frosting!
