Creamy Slow Cooker Sweet Potato Soup

CREAMY SLOW COOKER Sweet Potato Soup recipe! This easy Crock Pot meal includes ham and sweet potatoes in a creamy cheesy broth! Even my kids love this soup!

Ingredients

  • 3 cups cooked ham diced
  • 3 cups sweet potatoes peeled and diced
  • 1 cup celery diced
  • 1 cup carrots diced
  • 1 small red pepper diced
  • 1 small onion diced
  • 1 15 oz can corn (drained)
  • 1 15 oz can white beans (drained)
  • 5 cups chicken broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon minced garlic
  • 5 tablespoons butter
  • 6 tablespoons flour
  • 2 cups milk
  • 1 cup cheddar cheese

Instructions

  • Add ham, sweet potatoes, celery, carrots, red pepper, onion, corn, white beans, chicken broth, basil, parsley, salt, pepper and minced garlic into a slow cooker.
  • Cook on on low for 8 hours.
  • When there is 10 minutes left on the slow cooker, add butter to a small saucepan.  Once melted add your flour and whisk until smooth.  Add milk and continue stirring until creamy.  Add cheddar cheese and stir until completely melted.
  • Add your milk mixture to slow cooker and stir.  Cook for 1 hour on high.
  • Serve, enjoy.
