100 CALORIE Single Serving Brownie

100 CALORIE Brownie is a healthy single serving brownie recipe! This easy microwave recipe makes a fudgy chocolate brownie for one!  These low calorie brownies are perfect for satisfying a sweet tooth!

I’m obsessed with this 100 Calorie Single Serving Brownie! If you’re like me then when you make brownies, it’s a batch. There’s 2 of us who live here and the cats can’t eat chocolate, so what do I have to do? Ok, I have to eat them all.  Remember these black bean brownies? Yeah, I would eat them all if they were nearby!

I mean if not, they go bad and we wouldn’t want that.  I mean, ok, I could share with friends, but I could also not share with friends and just eat them all myself.  This is great, but also very bad.

Healthy Brownie Recipe

So what do you do when you want a brownie but you don’t want to make a entire batch to prevent the guilt? You make single serving 100 calorie brownies! You microwave them and they’re done in a minute.

These will hit your chocolate craving without the guilt – isn’t that the best?

A few more facts on these brownies:

They are really good.  Last winter these were our post dinner, dessert favorites.

These are made with applesauce, no oil.  I recommend my home applesauce recipe here.  Yum!

Sugar Glazed Cucumber Bread

This Sugar Glazed CUCUMBER Bread is delicious and so moist!   It tastes just like zucchini bread, but it’s made with 1 cup grated cucumber.  The healthy dessert recipe is easy to make and is a great way to eat your vegetables!  A powdered sugar glaze is poured on top once baked! Everyone in my family LOVES it – even toddlers!

This weekend there were many surprises in the garden. The monster pumpkin plant just won’t stop growing.  There was a 5 pound bag of potatoes waiting for us under the soil.   Carrots were pulled.   Jalapeno peppers were picked.   Cucumbers were spotted.

These are all vegetables I was hoping for, but maybe in a few weeks…. but in typical garden fashion, they make their own rules and showed up to the party early.  I couldn’t have been more happy to see them!

I saw a few baby cucumbers growing on the vine last weekend but somehow those babies transformed to multiple large cucumbers in just a few days, ready to be picked and enjoyed.    My Half Sour Pickle recipe and Cucumber Tomato Salad is a favorite way to use cucumbers, but I was trying to figure out how to bake with them.

Baking with Cucumbers!

This Sugar Glazed Cucumber Bread was created because of that!  This bread is similar to Zucchini Bread, but instead is made with grated cucumbers.  After the bread cools, a delicious powdered sugar glaze is poured on top to make it really special.    This is our new breakfast recipe that I’ll be making weekly until the cucumbers finish in the garden.

This is one of my family’s favorite cucumber recipes – perfect for Mom and Dad, but also perfect for toddlers and kids! Even my 1 year old loves a piece of this for breakfast in the morning!

Pumpkin Roll With Cream Cheese Filling

HOW TO make the BEST Pumpkin Roll With Cream Cheese Filling- my most requested Thanksgiving dessert! This delicious homemade Pumpkin Roll recipe is easy to make and walks you through the steps on how to make it.  The roll is so moist and delicious!    Includes how to make video!

The first time I made a Pumpkin Roll years ago I was ecstatic.  There was so much preparation and fear in the roll.  For those who have made a roll I think you can all remember your first time, whether it was a success or a flop.  I researched it profusely online watching rolling videos, looking at step by step blog posts, very intimidated by the rolling process.

Easy Pumpkin Roll Recipe

How was I supposed to roll the cake without cracking it? How was I supposed to add the cream? What is cheesecloth?  And how was I supposed to get the cake out of the cookie sheet without having it stick at all losing big points in presentation and pretty factor (we all want a pretty roll).
HOW TO make the BEST Pumpkin Roll With Cream Cheese Filling- don't worry it's easy!  This delicious homemade Pumpkin Roll recipe is easy to make and walks you through the steps on how to make it.  The roll is so moist and delicious!  My family considers this the best pumpkin recipe and it's always requested for Thanksgiving!

So I made the roll, I had it timed, I had my supplies ready and the first time – it was a success.  My heart was racing during that very short time frame from getting the cake removed from the cookie sheet (hot!) almost immediately out of the oven, onto damp cheesecloth and roll it (hot!).

After it was rolled, I let out a big sigh of relief. I might have even fell on the kitchen floor in victory.  Actually that’s probably what I did, I am very dramatic when it comes to baking success.  I’m just so darn happy.

How to make a Pumpkin Roll from scratch!

-Don’t let the cake stick to the pan when baking it. This is a big important factor.  You have a very short time when you remove it from the oven and flip it upside down to flop onto the cheesecloth. If it sticks, the cake will fall apart, a little or completely.  What saves this? PAM.  Pam is my hero.  What a great name too, right? 🙂

Toffee is a type of hard candy, made by boiling sugar and butter together.  If often has a nut based bottom and chocolate top.  For this recipe, we’re going to use pecans for the base and white chocolate for the top!  Lots of people confuse toffee and caramel, but toffee is more crunchy while caramel is more sticky!

Chocolate Peanut Butter Ice Cream

AWARD WINNING Chocolate Peanut Butter Ice Cream recipe! This homemade recipe is made in the ice cream maker and is for chocolate lovers! It’s my family’s favorite Summer ice cream!

We got a Cuisinart ice cream maker a few weeks ago and it’s changed our Summer!

Having a ice cream maker is a great idea. And by great idea I mean a deliciously bad idea.  Its like you can make ice cream whenever you want.  Which means if you happen to keep all the supplies on hand you can eat ice cream every single day.  Delicious, totally.  Dangerous, totally.

But I like to live on the wild side… when it comes to ice cream.  I live so wild that I checked out 2 ice cream recipe cookbooks from the library and I got a 10 cent fee because one was a day late back.  See.  I’m a wild child.

Delicious Vanilla Sprinkle Blondies with a vanilla glaze frosting on top is everyone's favorite treat! This easy dessert recipe makes fudgy, ooey gooey cake tasting vanilla brownies (blondies!). Add pretty sprinkles on top and they're perfect for a birthday party!

I should warn you now, these blondies are dangerously good.  I can’t tell you how many blondies I ate because you would have this image of me being a blondie monster in your head and none of you think that.  Right?  Oh goodness, I’m glad I’m right (thanks for making me feel better).

I love a blondie that is ooey gooey, with some frosting on top.   And this frosting is gorgeous.  It’s my new go to frosting for… well, everything.  It sets perfect and has a shine to it.  I’ve always had a problem making a frosting that was thick enough to set without dripping off the sides of brownies, cakes and donuts.  But this one is a keeper.  Expect to see it often in the next few months in different forms because I have a bunch of donut recipes in my head that  need this frosting!

Sweet Potato Baby Led Weaning Cookies

HOMEMADE COOKIES recipe for baby led weaning and soothing a teething baby! These healthy Sweet Potato cookies are made with mashed sweet potato, banana, baby cereal and oatmeal!   My favorite part is that these cookies are so delicious we can share them together!

Can you believe Enceladus just turned 8 months?  How time flies!  With month 7 came her craving for finger food!  No Mom, she doesn’t want to be fed with a spoon, she wants to feed herself!

I admit, it does get a little messy when she feeds herself but it’s lots of fun to watch!  And honestly, nothing warms my heart more than to know she loves Mama’s cooking (she’s a big fan of my mashed cauliflower potatoes!).

Homemade Teething Baby Cookies

Life has been filled with happy moments of “first foods”.  The messy first time she ate watermelon, the slippery first time she ate avocado, the sour face lemon taste, the happy face of tasting jam on toast,  etc.    Sweet potatoes have been a favorite of hers for a few months, but I had to figure out a way to serve them in a way that she could feed herself since she prefers finger foods over purees nowadays.

The color green.  What do you think of?

In many people’s minds, the color green isn’t something you usually think of when you think of sweet desserts.   I hear that little kids fear their green vegetables so sneaky parents have to find ways to incorporate it into their meals.  Well I don’t have a little kid, but I still like being sneaky, even if it  means just being sneaky to myself.
