I hope you had a great weekend!  This past Sunday we cheered the runners on outside our apartment during the NYC Marathon! The weather was chilly and the raindrops were falling so I knew we were going to have a comforting slow cooker Sunday night meal!

EASY Salisbury Steak Recipe

Salisbury Steak has been one of my favorites since I was a child but I wasn’t in the mood to do a baked salisbury steak, instead I wanted something to throw in the Slow Cooker and make dinner easy. 

 I love creamy slow cooker meals, like Meatball Potato Casserole, and Sweet Potato and Ham Soup, so I gave this a extra creamy gravy made with cream of mushroom soup! 

The actual Salisbury Steak patties are easy to make.  Throw ground beef, dry onion soup mix,  bread crumbs and milk in a bowl and mix around with your hands, and then form the patties.

A helpful hint: use lean, less fat ground beef.   If you don’t use a lean beef, it’s going to make your creamy gravy more on the greasy side.  This can totally be made with non lean beef, but I think it overall tastes better with a 90/10 blend.   After you shape your steak patties then roll around in a dusting of flour.

Ingredients

  • 12 oz penne pasta
  • 1 pint of cherry tomatoes halved
  • 1 green pepper chopped up
  • 3 radishes chopped up
  • 1 packed cup of lettuce chopped up
  • 1/2 sliced mushrooms
  • 1/2 cup Italian salad dressing
  • 1 tablespoon dried basil
  • 1 tablespoon dried oregano
  • 1/2 cup shredded mozzarella

Instructions

  1. Prepare your pasta as directed. Drain.
  2. Put your pasta in a big bowl.
  3. Add your chopped vegetables, salad dressing and dried herbs.
  4. Mix together so everything is coated in salad dressing.
  5. Add in your mozzarella cheese, toss around.
  6. Cover, put in fridge to chill.
  7. Enjoy!

CHEESY STOVETOP Meatball Lasagna Skillet! This quick and easy stovetop lasagna recipe includes ricotta and mozzarella cheese to make it extra cheesy! Ready in 25 minutes!

Ingredients

  • 12 lasagna noodles
  • 15 cooked meatballs
  • 24 oz jar of spaghetti sauce
  • 15 oz container of ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 8 oz mushrooms - sliced
  • 1 tablespoon dried basil

Instructions

  1. Break lasagna noodles in half and cook as directed. Drain.
  2. When noodles are cooked add them to the skillet with meatballs. Add in spaghetti sauce, ricotta cheese, 1 cup shredded mozzarella cheese and mushrooms.
  3. Cook 10 minutes on medium heat until melted and well heated. Stir so ricotta is distributed evenly.
  4. Put remaining 1 cup mozzarella cheese on top. Sprinkle dried basil on top.
  5. Cover and cook until cheese is completely melted.
  6. Serve and enjoy!

Chinese Bok Choy and Mushroom Noodles

Ingredients

  • 2 tablespoons olive oil
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon ginger
  • 1 large head bok choy - chopped
  • 1/2 cup kale - chopped
  • 8 oz sliced mushrooms
  • 4 cups chicken broth
  • 12 oz rice noodles
  • salt + pepper to taste

Instructions

  1. In a pot heat olive oil over medium high heat. Add red pepper flakes, ginger, bok choy, kale and mushrooms. Stir to combine them while cooking for 2-3 minutes until the greens wilt.
  2. In a large pot bring chicken broth to a boil. Once boiling add rice noodles, cooking as instructed on noodle package. When the noodles have 4 minutes left, add vegetables and stir.
  3. Season with salt + pepper if needed.
  4. Enjoy!

Last week I made my favorite Crockpot Tacos and we had them 4 days in a row, and every single night I looked forward to them.  That’s one leftover I love!  Then there are those leftovers where you just don’t  know what to do with.  Usually I can talk Matthew into eating them for lunch, but sometimes there’s even still a few meals left over (I tend to cook for a army).

When I make spaghetti, there’s usually always leftover noodles.    I’d rather not have spaghetti two nights in a row, so I wanted to find something a little more exciting to do with the leftover spaghetti so I came up with this casserole.

How good was it?  Matthew asked if we could have it again, which made me feel pretty happy in having a meal requested from leftovers!

Ingredients

  • 8 ounces leftover spaghetti noodles
  • 1 cup leftover pasta sauce
  • 1 egg beaten
  • 1 teaspoon Italian seasoning
  • 1/4 cup Parmesan cheese
  • 1/2 cup mozzarella cheese
  • 1/2 cup chopped mushrooms
  • optional: 1/2 cup shredded leftover chicken

Instructions

  1. Preheat oven to 350 degrees.
  2. Mix leftover spaghetti noodles and pasta sauce with egg, Italian seasoning, Parmesan cheese and shredded chicken (optional).
  3. Place spaghetti mixture into baking dish and bake uncovered for 30 minutes.
  4. Spread mozzarella cheese and mushrooms on top and bake for a additional 10 minutes until cheese is melted.

Do you love Chop Suey in the can? I’m totally guilty of loving it. I’m also totally guilty of eating that sauce by the spoonful. Goodness, it’s delicious.    

If you love it you can probably agree that it’s not the most healthy for you.  Low in calories, sure, but not exactly the best homemade ingredients that a dinner can offer you, so I set out to make a homemade version of La Choy’s Chop Suey.

Homemade Condensed Cream of Mushroom Soup

Homemade Condensed Cream of Mushroom Soup recipe – tastes just like Campbell’s!

How many times have you tried to make a recipe and it calls for Condensed Cream of Mushroom Soup so you go into your cabinet and realize you have zero cans?  Don’t let this happen to you anymore!

This scenario has happened to me so many times in life.  Condensed Cream of Mushroom Soup is something I use often in soups and casseroles but somehow I always manage to forget to buy a can.  If you have some mushrooms on hand, then I bet you have the rest of the ingredients as well to make your own!

I have to say as well that not only is this easy to make (we’re talking 10 minutes) but it tastes a million times better then the canned version.  There’s something about the fresh mushrooms in this that makes me weak in the knees, but if you don’t have fresh on hand feel free to used canned mushrooms instead. Also I made this with regular milk and unsweetened vanilla almond milk for a vegan recipe and both turned out great!

Homemade Condensed Cream of Mushroom Soup

Ingredients

  • 1 cup regular milk or unsweetened almond milk
  • 1 teaspoon onion powder
  • 2 tablespoons cornstarch
  • 1 tablespoon vegetable oil
  • 1/8 teaspoon pepper
  • 1/2 teaspoon salt
  • pinch of sugar
  • 1 cup of mushrooms sliced (fresh or canned)

Instructions

  1. Put all your ingredients except mushrooms in a food processor and pulse until it's smooth.
  2. Add your mushrooms to food processor and pulse a couple times to chop them up.
  3. Pour mushroom mixture into a saucepan on the stove.
  4. Bring to a boil then lower the heat to simmer for 10 minutes.

Recipe Notes

If you find it's too thin, add a bit of extra cornstarch and stir. This will thicken it up.

Not My Mom’s Meatloaf

Do you like the title?  I hope you do.    So many of my favorite meatloaf recipes are inspired by the cook’s mother or grandmother, but because this recipe is inspired by Amy’s mother’s meatloaf, and she’s not my mother, I decided to name it Not My Mom’s Meatloaf.   

I don’t think meatloaf gets the love it deserves but I’m here to change that.  I love meatloaf. It reminds me of my childhood, it reminds of plaid printed aprons, and mothers with perfect hair and televisions with antennas.  Doesn’t it have that vintage feel to it?  I like to think June Cleaver in the picture below is whisking eggs for meatloaf.  Also I’d like to think that one day I will look that fabulous in the kitchen.  Someone remind me to buy a strand of pearls.

Have you been to Disney World before? AKA, the greatest place on Earth (honestly, it’s amazing).  At Hollywood Studios they have a restaurant named 50’s Prime Time Cafe and it’s everything you hoped it would be like, from the tables to the waiters.   Everything on the menu is home cooking inspired from Dad’s Grilled Pork Chops to Aunt Liz’s Golden Fried Chicken to Grandma’s Chicken Pot Pie and of course Cousin Ann’s Traditional Meatloaf. I got the Meatloaf when I was there and it was served with green beans by our waiter Uncle Gary.  Throughout the dining experience he would introduce us to our cousins and just be that Uncle we all know.  When we left we we wrote him a love letter, he was so much fun.

Meatloaf is often made with ketchup but I love this recipe because it uses spaghetti sauce instead which personally I find more pleasing and tasty.  The spaghetti sauce acts like a gravy that you can lather your meatloaf in which I love, I definitely will put a few spoonfuls on.    Also, this meatloaf has mushrooms that are baked in it which will cause your entire dinner table to fight over who gets the mushrooms, so be sure to fight hard for them. 🙂

Not My Mom's Meatloaf

Ingredients

  • 1.5 pounds ground turkey
  • 3/4 cup Italian bread crumbs
  • 1 egg
  • 1 1/2 teaspoon salt
  • pinch of pepper
  • 2 cups pasta sauce
  • 3 tablespoons brown sugar
  • 1 tablespoon dried mustard
  • 1 tablespoon worcestershire sauce
  • 8-10 whole fresh mushrooms

Instructions

  1. Preheat oven to 350 degrees.
  2. Mix ground turkey, bread crumbs, egg, salt, pepper and 1/2 cup of the pasta sauce together completely. I use my hands for this to mix thoroughly.
  3. Form turkey mixture into a loaf and put in a loaf pan.
  4. Push mushrooms into the top of the meatloaf, pushing their stems into the loaf.
  5. Mix the rest of the pasta sauce, brown sugar, dried mustard and worcestershire sauce together in a bowl. Pour this sauce mixture over the mushrooms and meatloaf.
  6. Bake for 1 hour and 15 minutes.
  7. Enjoy and be sure to slather in sauce!

Not only are these mini pizzas delicious, but they’re so easy to make because they’re made with biscuit dough. You can find this in your refrigerated part of your grocery section where the other refrigerated dough and rolls are located.

You’ll want to add your favorite tomato sauce on top of each with a nice handful (ok maybe 2!) of mozzarella cheese.

Now add your favorite toppings on the pizzas!   I usually dice up some green peppers and mushrooms for mine!  These Mini Pizzas are great because they take 12 minutes in the oven.   That means you can have yummy pizza to eat in about 15 minutes!   Isn’t this a great hectic weeknight recipe for the family?

Speaking of kids, they’re also great to send to school for lunches.  We often pack mini pizzas for my daughter to take to daycare.  You can make a bunch at once and freeze them too!

Ingredients

  • 16 oz can Pillsbury Grands refrigerated biscuits
  • 1 cup Pizza sauce
  • 2 cups shredded mozzarella cheese
  • 24 pepperoni slices
  • 1/2 cup diced green peppers
  • 1/2 cup chopped mushrooms

Instructions

  1. Preheat oven to 375 degrees
  2. Press each biscuit down with your hand or rolling pin until it becomes around 5 inches round.
  3. Place biscuits down on greased cookie sheets.
  4. Top each biscuit with pizza sauce, cheese, pepperoni, peppers and mushrooms.
  5. Bake for 12-15 minutes or until bottoms are golden brown.
  6. Enjoy!

Easy Cheesy Lasagna Skillet

Welcome to a new week, I hope you all had a lovely weekend.   

We have a new favorite dinner that we’ve been making almost bi-weekly now, it’s Easy Cheesy Lasagna Skillet.   Lasagna is hands down one of our favorite dinners, but sometimes you just don’t have the time to organize the layers and bake in the oven, this skillet is quick, cheesy and oh goodness is it delicious.    What makes this lasagna extra special?  Well besides the ricotta cheese which makes everything creamy, there’s Sweet Italian Sausage which I’m pretty  much in love with at the moment.  After I brown the sausage there’s a good 3 minute period where I just stand by the stove and eat it out of the pan.

Added into the lasagna is garden fresh spaghetti sauce, fresh basil, green peppers and some mushrooms.  In my opinion life is better when there is mushrooms and green peppers involved.  Lately, we’ve been putting them on our pizza too – what a great combo.

Easy Cheesy Lasagna Skillet

Ingredients

  • 12 lasagna noodles - broken in half
  • 1 pound sweet Italian sausage - out of their casings
  • 24 oz jar of spaghetti sauce
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 8 oz cut up mushrooms
  • 1 green pepper diced
  • handful of fresh basil

Instructions

  1. Brown sausage in skillet.
  2. Break lasagna noodles in half and cook as directed. Drain.
  3. When noodles are cooked add them to the skillet of browned sausage. Add in spaghetti sauce, ricotta cheese, 1 cup shredded mozzarella cheese, mushrooms and diced green pepper.
  4. Cook until melted and well heated, about 10 minutes on medium heat. Stir so ricotta is distributed evenly.
  5. Put remaining 1 cup mozzarella cheese on top, sprinkle fresh basil on top. Cover and cook until cheese is completely melted.
  6. Enjoy!

Creamy Beef Stroganoff

Beef Stroganoff, Beef Stroganoff, Beef Stroganoff, Beef Stroganoff.   I’ve had this word written in my “to do” page for months now because Matthew has been craving Beef Stroganoff.  How bad has he been craving it?  See above for hints.  So finally I made the first step, I bought sour cream.  This is a pretty big step for me considering sour cream scares me beyond belief.  The texture of sour cream reminds me of my archnemesis, mayonnaise.  I know they taste nothing alike but I worry the mayonnaise companies might be following me, watching me when I shop (how embarrassing) and then sneak mayonnaise into my sour cream tub instead.  Can you imagine the nightmares I would have?   Actually there is a mayo dream I have had a few times but that’s for another time entirely…

Beef Stroganoff.   So I made it, with sour cream.  And onions.  Are you shocked?   I pretty much am.  When Matthew saw me frying onions up with the beef I think he nearly fainted with surprise.  Look at me, throwing onions in a pan, buying sour cream,  life changing actions right here folks!  And get this, I absolutely loved it.  It was creamy, moist and delicious.  Give me mushrooms in a creamy sauce and you have one happy girl!  Beef Stroganoff – thanks for a great dinner!

Creamy Beef Stroganoff

Ingredients

  • 2 pounds beef chuck roast or beef sirloin steak
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 ounces butter
  • 2 cloves minced garlic
  • 1 onion cut up into slices
  • 1 1/2 cup beef broth
  • 3 tablespoons cornstarch
  • 1 tablespoon worcestershire sauce
  • 1/2 teaspoon ground mustard
  • 12 oz mushrooms canned or fresh
  • 1/3 cup sour cream
  • parsley to garnish

Instructions

  1. Remove any fat from your beef and cut into pieces that are about 1/2 inch thick and 2-3 inches long.
  2. Season meat with salt and pepper, rub so all meat is evenly coated.
  3. In a large skillet over medium high heat, melt the butter and garlic. Add the beef and cook until browned. Add onion slices and continue to stir for 3 minutes.
  4. Place beef broth in small bowl and add cornstarch slowly, continuing to stir.
  5. Add beef broth/cornstarch mixture to beef and onion skillet, bring to a boil. Lower the heat and add in ground mustard and worcestershire sauce. Stir until combined.
  6. Cover and simmer for 1 hour.
  7. When your 1 hour is up, remove lid and stir in mushrooms and sour cream.
  8. Once heated, serve over egg noodles or rice.
  9. Add parsley to garnish on top.

First, I would like to give a shout out to the ever changing Sun that enters our loft around 5:30PM and blinds me until about 7PM.  The light is dramatic, feels great on the skin, but it’s all over the place for pictures.

Here’s your mushrooms. I use whatever I have, fresh or canned, whole or cut up.  Go mushroom crazy in my opinion. Also, I see you creeping behind the mushrooms Sour Cream.  Don’t even think about it, my eye is on you like a hawk.

Do you know how good this was already smelling?  Essy showed up and tried to jump from the table to the counter, which is a enormous jump that her 19 year old body would have never made.  She had her eye on the prize (the beef) and her nose knew it was nearby.

Add your onions, your place is going to smell like a Stroganoff paradise starting now. Once you add your broth, mustard and worcestershire sauce then you’ll let simmer for 1 hour.
