SLOW COOKER Meatball Potato Casserole with a creamy beef gravy is delicious!  This easy to make crockpot recipe is perfect for busy weeknights! This Italian Meatballs dish uses cream of mushroom soup and is filled with vegetables including potatoes, carrots, celery and onion!  My husband officially declares this one of his favorite meals!  

Crockpot Meatballs and Potatoes

When my husband tasted this meal, his first words (with eyes closed) were “This is good.  Real good.”  I immediately agreed! Not only does this Slow Cooker Meatball Potato Casserole taste great, but it smells amazing too!  Don’t you love the way your home smells after you’ve been slow cooking a home cooked meal all day long?  

For this dish, we’re slow cooking Italian meatballs, potatoes, carrots, celery, and onion in a delicious cream of mushroom soup/beef onion mix gravy to make one delicious complete meal!

How to Make In the Slow Cooker

This Slow Cooker Meatball Potato Casserole is simple to make!

Add gravy ingredients into the slow cooker.

Add meatballs on top of gravy mixture.

Slow Cooker Meatballs and Potatoes

Slow Cooker Meatballs & Potato Casserole recipe, served with a creamy beef gravy.  These Crockpot Italian Meatballs are made with cream of mushroom soup, potatoes, carrots, celery and onion!  
Prep Time: 15 minutes
Cook Time: 5 hours 30 minutes
Total Time 5 hours 45 minutes
serves 4

Ingredients

  • 1 (15 ounce can) Condensed Cream of Mushroom Soup
  • 1 package dry onion beef soup mix
  • 2 3/4 cup water or beef broth
  • 1 teaspoon rosemary
  • 1 pound Italian Meatballs I used Carando Italian Style meatballs
  • 3 cups potatoes peeled and diced
  • 1 cup carrots peeled and diced
  • 1 cup celery
  • 1 small onion chopped

Instructions

  • Add mushroom soup, dry onion beef soup mix, 3/4 cup water and rosemary to slow cooker.  Stir.
  • Add meatballs in slow cooker on top of gravy mixture.
  • Cook on high for 3 hours.
  • Add potatoes, carrots, celery and onion to slow cooker.  Add remaining 2 cups of water.  Stir.
  • Cook on high for an additional 2.5 hours.
  • Serve on plate.  Enjoy!

    Can this be cooked on low and for how long?

      Hey Kim, I usually cook this on high but I would cook the meatballs on low for 5 hours, and then add the vegetables and cook for 4-5 more hours. Hope this helps!

    Just made first time. Used broth. Used cream of chicken instead of cream of mushroom.

    Hi, I made this and my husband and I loved it!!!! My kids however didn’t care for the rosemary infused into it! 🙁 Have you ever used any other seasonings or have a yummy substitute suggestion?
    I still give it a 2 thumbs up!!! 🙂

      Hey Rebecca, I’m glad half of your family liked it! Hah. Sure, you can substitute with 1 teaspoon oregano instead – that’s usually a more kid friendly thumbs up! Enjoy!

      Hey Brooke, it’s 2 3/4 cup water total. Step 1 calls for 3/4 cup and Step 4 calls for 2 cups. Enjoy the casserole!

    Oh my word, I hopped over here from #ThisIsHowWeRoll the second I saw this because: 1)I have two teenagers with insane schedules that change every single night, one self-employed husband who works long hours, and a slow cooker that needs to be filled with something for them to eat; and 2)I have this enormous bag of frozen meatballs leftover from my daughter’s HS grad party last June that need to be used. I think it is no exaggeration to say that this recipe might just change our lives. 😉 Thank you so much!

    Really enjoyed this! Made it tonight. Added thyme from the garden, in addition to fresh rosemary. Mine was more liquid-y broth than stew-like. Did I do something wrong? But amazing, none-the-less.
