Look, I’m not saying all people from the Midwest love Slow Cooker meals filled with meat and vegetable (especially potatoes) but that’s totally what I’m saying. My husband, a man raised in good ol Ohio, raves about my Slow Cooker Kielbasa, Brussels Sprouts and Potatoes.
I could give him the option of having a fancy schmancy French cuisine or Slow Cooker Kielbasa for dinner and there would be no discussion – it’s Slow Cooker Kielbasa, Brussels Sprouts and Potatoes all the way!
Slow Cooker Kielbasa, Brussels Sprouts and Potatoes Recipe
This easy slow cooker meal has everything you need for homemade comfort food – meat, vegetables and enough broth to pour it on top of egg noodles! The meat is beef kielbasa, cut into bite size pieces. The vegetables are potatoes, celery, brussels sprouts and onion. The broth is a savory beef broth.
This is such a easy meal as all you have to do is throw everything into a crock pot, cook on low for 5 hours and then dinner is ready. That’s it! This dish is packed full of vegetables so it’s a perfect meal for a cold Winter night!
In just 5 hours you’ll have one great smelling kitchen and one delicious slow cooker meal to eat! We always serve this meal over egg noodles, but you could also serve over rice!

- 1 pound beef kielbasa cut into 2 inch pieces
- 1 pound Brussels sprouts bottoms trimmed
- 3 medium potatoes peeled and chopped
- 3 stalks celery chopped
- 1 medium onion chopped
- 2 cups beef broth
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons brown sugar
Instructions
- Add all ingredients to slow cooker. Stir so broth coats everything. Cook on low for 5 hours.
- Serve on top of egg noodles or rice!

Husband’s comment after tasting this….”You can make this again!” Really tasty, and the brussels sprouts had a good flavor due to the other ingredients. (Some times they taste a little strong to me.) Next time I think I’ll add more sausage, as there weren’t any packages of kielbasa over 14 oz. Husband and son were worried that one of them might get more meat than the other, and I was lucky to score three little chunks. A keeper!
