My daughter was 18 months old when she started to ask me to fill up her tea cups with water, her with a smile and happily slurping it down (and then immediately asking for a refill).  She saw Mom drinking tea every morning and afternoon, so when she wanted to be part of my daily rituals, I welcomed it.  I’m pretty excited that in a few years I’ll finally have a tea house partner!

Friday Catch Up: A Trip to Los Angeles

Hey guys,

I hope everyone is doing great!  It’s been ages since I did a weekly catch up post, but I thought I’d try to start doing this again.  This gives a glimpse on what’s happening during my week, but let’s be honest, it’ll mostly be food, and pictures of Enceladus (or pictures of Encealdus’s food!).

Last week we headed to Los Angeles for Reed + Rader work, and while we were there we had a few days to explore with Enceladus.   We went to playgrounds, ate lots of tacos, went on a date without baby (it involved tacos too),  had a video shoot and much more.  

The flight to Los Angeles was kinda terrible.  Flying with a toddler is hit or miss, and she was pretty finished with the flight while we flew over the Midwest.   She was happy when we finally landed and got to stretch her legs.  I was also happy to get off the plane so we could get her in a better mood.

So I made the roll, I had it timed, I had my supplies ready and the first time – it was a success.  My heart was racing during that very short time frame from getting the cake removed from the cookie sheet (hot!) almost immediately out of the oven, onto damp cheesecloth and roll it (hot!).    

After it was rolled, I let out a big sigh of relief. I might have even fell on the kitchen floor in victory.  Actually that’s probably what I did, I am very dramatic when it comes to baking success.  I’m just so darn happy.

-Don’t let the cake stick to the pan when baking it. This is a big important factor.  You have a very short time when you remove it from the oven and flip it upside down to flop onto the cheesecloth. I love a blondie that is ooey gooey, with some frosting on top.   And this frosting is gorgeous.  It’s my new go to frosting for… well, everything.  It sets perfect and has a shine to it.  I’ve always had a problem making a frosting that was thick enough to set without dripping off the sides of brownies, cakes and donuts.  But this one is a keeper.  Expect to see it often in the next few months in different forms because I have a bunch of donut recipes in my head that  need this frosting!

After multiple requests from tea lovers around the world I have brought the swap out of hibernation!  If you love tea, I invite you to join the Winter Tea Swap!  Running monthly tea swaps was a little overwhelming and took a lot of planning on my part, so instead I am bringing them back seasonally.   I think this is a better idea too since our tea taste changes from season to season!

You and a assigned partner send each other a small package filled with different teas to try, a small snack, and a little note saying hello.  You can send as much tea as want, but at the very least I recommend sending 10 bags.   This allows you to try new teas that you might have never tried.  Plus it will be relaxing to sit down at night, read a small note, nibble on a little snack and drink a cup of tea! The entire swap is about meeting new friends, trying new teas and smiling!

Enceladus’s First Big Road Trip to Maine!

We took our 2 month old baby on a 11 hour road trip and survived! Here’s everything we brought with us and other tips to make it a success! This post is in partnership with buybuy BABY.

Next week Enceladus will turn 3 months old and she’s already a road trip expert!  We took a road trip to North Carolina when I was 35 weeks pregnant so it’s no surprise she’s comfortable with long drives already!  A few weeks ago we headed to Maine for a friend’s wedding and I fell in love… with Maine!  It was my first time visiting and it is BEAUTIFUL!  I’m not sure if we visited during peak season, but I couldn’t get over how beautiful the coast was.  I’m already considering that this might need be our yearly vacation spot!

So there’s no judging here, right? So when I tell you we made these Easy Jelly Donut Holes late at night one evening and the next morning they were gone already, you won’t judge me, right?  Ok good. Because this totally happened and I have no regrets.

 I have been craving donuts.  Bad.  I think I say at least once a day “I want a donut” and I really do want one.  I love chocolate donuts, peanut butter donuts, tea donuts, carrot cake donuts and more but I have a very soft spot for Donut Holes, especially when they are cinnamon sugar covered.  Oh and also when they are filled with homemade jelly that just smells like strawberries and Summertime.  These donuts you guys, they’re made of happiness and magic.

When I originally made these I thought they were going to last so that I could share with friends the following day, but they are so irresistible that they were gone rather quickly before sharing with friends.  So this week I’ll be making 2 more batches.. one for friends and one for us again.  They’re that good!

Jelly Donut Holes

Jelly Donut Holes recipe! These baked donut holes are easy to make and are rolled around in delicious cinnamon sugar! These homemade treats taste just like Dunkin' Donuts Munchkins but are much healthier! 

Course Dessert
Servings 8

Ingredients

  • 1/3 cup sugar
  • 3 tablespoons melted butter
  • 3/4 teaspoon ground nutmeg
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1 cup flour

For the jelly

  • 1/2 cup of your favorite jelly or jam I used strawberry

For the topping

  • 2 tablespoons butter melted
  • 3 tablespoons sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat oven to 375 degrees.
  2. Mix sugar, butter and nutmeg in a bowl until combined. Stir in milk, baking powder and flour until all combined.
  3. Spray your mini muffin pan with a nonstick spray. Fill your mini muffin spots up half way full.
  4. Bake in oven until tops are slightly brown, 15 to 17 minutes.
  5. When donut holes come out of the oven, let them cool until you can touch them.
  6. Fill a piping bag with tip with jelly and fill each donut hole.

For topping

  1. Mix sugar and cinnamon together in shallow bowl.
  2. Brush butter all over each donut.
  3. Roll donut around in sugar mixture until completely covered.
  4. Serve warm and enjoy!

I wasn’t sure if I was going to make these types of posts.  And then I got to thinking more about it and felt it would be fun to look back on one day.  Instead of documenting every 1 or 2 weeks, I’m doing Weeks 1-20… and then probably 20-30 and then 30-40, or something like that.  I guess time will tell as I’m facing new experiences.
