Breakfast is one of my favorite meals of the day. On fast days I grab a bowl of cereal. In the Winter time it’s usually toast, figs and tea. But on extra special days and weekends, it’s a full on breakfast. Sometimes it’s pancakes. Sometimes it’s waffles. Sometimes it’s a egg burrito. But my favorite breakfast? Scrambled eggs. As a kid my Mother would make me scrambled eggs while she enjoyed hers “dippy” style. I would usually lather my scrambled eggs in ketchup. Ok I’m lying, I still do this.
This recipe mixes my favorite scrambled eggs recipe (I only use this!) with bacon.
Oh bacon, bacon, bacon. You beautiful thing. Who doesn’t love bacon? Just the smell of it will make me jump out of bed and run to the kitchen shouting “Bacon! Bacon!”. I get really excited about bacon guys.
Also who doesn’t love breakfast for dinner? I think this has to become a weekly meal in my house. Do you do eggs for dinner sometimes? What’s your favorite way to serve them?
Like I mentioned, this is my favorite scrambled egg recipe that I live by. It’s only a few ingredients, it’s quick and it’s the best. At least to me it is. I can’t get enough of these.
The 2 main ingredients are eggs and bacon. I usually always use Butterball Turkey Bacon. I could snack on this all day long but that’s another story. Butterball turkey bacon is a great choice for eating right. The bacon has 65% less fat than pork bacon with only 25 calories per slice.
Here’s why I love this bacon though, the taste! It’s crunchy when cooked. It doesn’t taste “fatty”. It tastes like Mama’s bacon. It tastes delicious. It tastes like I could eat 6 slices. I’m kidding, I would never do that. I’m lying, I totally would do that. I love that I can have a piece of bacon that is wholesome and fresh but still has a big punch in the flavor department. I have a crush on this bacon, I admit to it. The other ingredients are milk, salt and a tablespoon of butter.
And a few minutes later your scrambled eggs are ready for plating! (My husband hates the word plating so that’s why I’m using it).

Scrambled Eggs With BaconPrint
- 2 pieces bacon pork or turkey
- 3 eggs
- 3 teaspoons of milk
- 1/4 teaspoon salt
- dash of pepper
- 1 tablespoon of butter
- Cook turkey bacon according to directions on package. Once cooked break each piece of bacon up into small pieces.
- Crack open eggs in small bowl.
- Add milk, salt, dash of pepper and crumbled up bacon. Mix together until eggs are beaten.
- Melt butter in skillet on medium heat. Ad egg mixture.
- Once egg mixture seems to have set (about 2-4 minutes), break up with spatula to scramble and flip. Continue cooking and scrambling until eggs are fully cooked and no longer runny.
- Serve hot on plate.
