These donuts taste just like carrot cake with a sweet vanilla glaze on top. Think of a bakery glazed donut + a carrot cake…. all as fresh as possible. The freshness of the carrots really make these donuts something special!
Carrot Cake Ingredients
These donuts basically require the same ingredients as carrot cake.
You’ll need egg, orange juice, melted butter, vanilla, brown sugar, flour, baking powder, baking soda, salt, cinnamon and allspice. And then you’ll need shredded carrots!
The vanilla glaze on top is a tried and tested recipe that I use all the time! You make it with milk, vanilla extract and powdered sugar.

Where can I buy a donut pan?
You can buy one at kitchen supply stores, most large department stores and of course – Amazon! I recommend getting 2 pans as most recipes make 12 donuts.
Is your recipe right, do I really need to use 6 eggs?
Yes, you really do. Coconut flour is super absorbent and needs extra liquid in it. When substituting coconut flour for all purpose flour, you should add 1 extra egg for every 1/4 cup of coconut flour being added. For example, this recipe when using all purpose flour calls for 2 eggs, but since we’re using 1 cup coconut flour we need to add a extra 4 eggs equaling 6 eggs. I know this sounds crazy if you’ve never used coconut flour but you’ll be amazed by how much the flour absorbs the liquid.
Can I use all purpose flour instead of coconut flour?
Yes, use 1 cup all purpose flour and 2 eggs (instead of 6).
My donuts always fall apart when they come out, what did I do wrong?
Most likely you didn’t cook them long enough so please (especially with this recipe) make sure to use a toothpick to insert into a donut to make sure they are fully cooked. When you are absolutely sure they are fully done, remove from the oven and let cool for 15 minutes. After that I use a butter knife and gently scrape around the edges to remove each donut.
Do I have to use beet powder?
Of course not – that just gives them a pretty natural color. If you want to add no color to the frosting, don’t add add beet powder (it will just be a plain white frosting). If you don’t have beet powder you can use blueberries (great for a natural dye) or food coloring (not so natural).
How many donuts does this recipe make?
It makes 12 dozens.

Green tea is totally my favorite cup of the moment. I go in between green jasmine and jasmine pearl because it’s so hard to pick a favorite. I am a donut (or doughnut if you must) lover. As a kid my mom worked at the donut shop and she would always bring me home my favorite blueberry donut. The frosting is magical. I’m serious guys. It casts a delicious spell on you when you can’t do anything but eat it. I went back at least 6 times and took a spoonful of this. It’s so fluffy and has the perfect peanut butter taste to it.
You’ll want to crush up your candy cane until it’s almost powder like. I like when it gets that consistency where is’t not too big you’re going to feel a crunch, instead it’s just like peppermint sugar on top.

Do you hear someone opening a plastic bag at 4AM in the morning? Don’t worry, it’s just me, standing in the dark, eating kisses, while cats circle me because they think it’s time to play. Then with chocolate melting in my mouth, I make my way back to bed. Horrible, aren’t I? Do you have a sweet right now that you are misbehaving with?

Let’s just say I doubled the batch, one for the donuts and one to just eat which Matthew and I both did. We grabbed 2 spoons, and ate the frosting out of a plastic baggie over the next few days (ok, it lasted one day). Did you know you can put frosting in a freezer bag to freeze it? Life changing. The frosting is incredible. Just writing about it has me all worked up and wanting to rush back into the kitchen and make another batch (I probably will).

I had something else set to run today, a yummy cheesy casserole, but that has got to be put on hold. After I made these donuts I skipped happily to my computer (with a donut in my mouth – don’t do this, it’s a choking hazard) to change the post. I had to show you these.

My daughter was 18 months old when she started to ask me to fill up her tea cups with water, her with a smile and happily slurping it down (and then immediately asking for a refill). She saw Mom drinking tea every morning and afternoon, so when she wanted to be part of my daily rituals, I welcomed it. I’m pretty excited that in a few years I’ll finally have a tea house partner!
For now though, tea parties exist in our house, usually on a cozy blanket or her play table. When I was searching for her first tea set, I wanted to get her something special that would last over time. In my heart, I hope that in 20 years, she finds her tea set hidden in storage and I get to tell her stories of how we used to have tea parties, together, with her stuffed animals, and they would just make my day!
I hope everyone is doing great! It’s been ages since I did a weekly catch up post, but I thought I’d try to start doing this again. This gives a glimpse on what’s happening during my week, but let’s be honest, it’ll mostly be food, and pictures of Enceladus (or pictures of Encealdus’s food!).
Last week we headed to Los Angeles for Reed + Rader work, and while we were there we had a few days to explore with Enceladus. We went to playgrounds, ate lots of tacos, went on a date without baby (it involved tacos too), had a video shoot and much more.
The flight to Los Angeles was kinda terrible. Flying with a toddler is hit or miss, and she was pretty finished with the flight while we flew over the Midwest. She was happy when we finally landed and got to stretch her legs. I was also happy to get off the plane so we could get her in a better mood.
