I absolutely love barley so a bowl of sausage and barley soup is my idea of comfort food, especially when I have a fluffy roll to dip into the soup!
This soup, although only 292 calories per serving, is hearty and will leave you feeling full due to the pearl barley. The barley, combined with sweet Italian sausage and lots of vegetables (potatoes, onions, carrots, celery, frozen green beans and diced tomatoes) makes a healthy bowl of soup, perfect for a chilly evening!

How to Make In the Crockpot
Chop up all the vegetables and place in the slow cooker.
Add sweet Italian sausage that’s been cut up into 1 inch pieces.
Add in the pearled barley.
Add the remaining ingredients.
Stir to fully combine.
Close the lid and cook for 6-7 hours, or until barley and potatoes are fully cooked. Mine is usually always done at 6 hours. Serve and enjoy this delicious Sausage Barley Soup!
Can I make this in advance?
The most time consuming part of making this soup is chopping up the vegetables so you can definitely do that in advance so in the morning you won’t have much work to do.
Chop the onions, carrots, celery and potatoes up and place in the refrigerator. To prevent the potatoes from turning brown completely submerge them in a bowl of water and cover in the refrigerator.
Can I cook it in the Instant Pot?
You sure can! Simply add everything into the Instant Pot and cook for 20 minutes.
How to Serve Barley Soup
Serve the soup in bowls as is, or with a sprinkle of Parmesan cheese on top. To add some color, you can add some finely chopped parley on top too!

- 1 pound Sweet Italian Sausage cut into 2 pieces
- 1 small yellow onion chopped
- 3 carrots peeled and chopped
- 2 stalks celery chopped
- 3 potatoes peeled and chopped
- 4 cloves garlic minced
- 10 ounce bag frozen green beans
- 1 cup pearl barley
- 6 cups chicken broth
- 2 cups water
- 14 ounce can diced tomatoes
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- ¾ teaspoon dried thyme
- ½ teaspoon salt
- ¼ teaspoon pepper
- Add all of the ingredients into the slow cooker and stir.
- Close the lid and cook on LOW or 6-7 hours or until barley and potatoes are tender. Mine usually always takes 6 hours.
- Serve in bowls with a sprinkle or Parmesan cheese on top. Enjoy!
