It’s been a little while since my last donut recipe, but don’t worry, I’ve been eating my share of donuts!    With T-Minus 30 days before the baby comes (if she’s on time!) I’ve having my share of sweet tooth cravings.    This past weekend I was craving chocolate chips and donuts so I decided to combine these 2 beautiful worlds and make these Chocolate Chip Chocolate Frosted Donuts which are amazing! The donuts themselves are a vanilla cake donut with mini chocolate chips baked in.  Each bite gives you a little bit of chocolate chip taste – yum!

These donuts are stunning.   They are beauty pageant material.    With a golden brown baking finish, and the prettiest natural pink color frosting on top  you might as well call them Miss Donut World 2017.  And the taste?  Oh my! Give the donuts their sash and crown already because they’re delicious!

FAQ for this recipe:

Where can I buy a donut pan?
You can buy one at kitchen supply stores, most large department stores and of course – Amazon!  I recommend getting 2 pans as most recipes make 12 donuts.

Is your recipe right, do I really need to use 6 eggs?
Yes, you really do.   Coconut flour is super absorbent and needs extra liquid in it.   When substituting coconut flour for all purpose flour, you should add 1 extra egg for every 1/4 cup of coconut flour being added.  For example, this recipe when using all purpose flour calls for 2 eggs, but since we’re using 1 cup coconut flour we need to add a extra 4 eggs equaling 6 eggs.   I know this sounds crazy if you’ve never used coconut flour but you’ll be amazed by how much the flour absorbs the liquid.

Can I use all purpose flour instead of coconut flour?
Yes,  use 1 cup all purpose flour and 2 eggs (instead of 6).

My donuts always fall apart when they come out, what did I do wrong?
Most likely you didn’t cook them long enough so please (especially with this recipe) make sure to use a toothpick to insert into a donut to make sure they are fully cooked.  When you are absolutely sure they are fully done, remove from the oven and let cool for 15 minutes. After that I use a butter knife and gently scrape around the edges to remove each donut.  

Do you have any other frosting recipes?
Sure, try chocolate or peanut butter frosting.

Do I have to use beet powder?
Of course not – that just gives them a pretty natural color. If you want to add no color to the frosting, don’t add add beet powder (it will just be a plain white frosting).  If you don’t have beet powder you can use blueberries (great for a natural dye) or food coloring (not so natural).

How many donuts does this recipe make?
It makes 12 dozens.

I have to tell you something.   I made these donts to take to work to share with everyone, but instead I kept them at home because I wanted to eat them all. And I did, I ate them all, and I didn’t regret it one bit. 

These donuts are the best of all worlds, moist chocolate donuts, vanilla frosting that sticks perfectly to the donuts, mini chocolate chips on top, and the sublte taste of coffee.  What gives the donuts a special taste is that I used 1 tablespoon of Folgers instant coffee granules in the batter.   Use 1-2 tablespoons depending on how “coffee” you want it to taste.  I love how simple Instant coffee is to use in recipes!

I have a thing for donuts.  Ever since I was a little girl I loved heading to the local bakery to get a freshly made vanilla frosted donut with sprinkles.  On mornings when I was lucky, Mom would take us to Dunkin Donuts where I’d get a blueberry frosted donut.  Now, grown up (sorta) and living in NYC, I’m exposed to some of the best donuts in the world.  I have a confession. When I’m out by myself in a new neighborhood I will open Yelp and type in “donuts” to see if there’s any new spots nearby that I haven’t visited.    Just a few blocks away from me is the dangerously delicious DOUGH.  DOUGH is the best NYC donut spot.  No arguments allowed,  they are the best!  They are these pillowy soft donuts with the best icing.  They taste light but you know you just ate a whole meals worth of calories.  It’s worth it.    When I’m home and craving a sweet, or need to bring a dessert to a party, I usually grab my handy donut pan and get to work. Sometimes I’m feeling vanilla, other times chocolate, and maybe I’m feeling crazy so I add some tea or berries to make a new flavor.   If you don’t have a donut pan, buy one, it will be a life changing moment when you make donuts for the first time.

Green tea is totally my favorite cup of the moment. I go in between green jasmine and jasmine pearl because it’s so hard to pick a favorite.  My tea preference changes on the weather, so with Spring visibly right around the corner (hopefully) my morning cup has changed from dark to a light green tea.  In the Spring I crave freshness, seeing the markets slowly have more fruits gets me excited.  I’ve been buying raspberries and watermelon to get ready for our own garden season (coming soon).

I used the matcha green tea powder to make a super smooth frosting that is perfect for spreading on a donut or a cupcake.  For these, I threw the frosting in a piping bag and put on top of vanilla with a touch of peanut butter donuts.  These were a big ol hit and gone within minutes.

The frosting not only looks pretty but it tastes amazing too.  Wish just 2 teaspoons of green tea matcha powder, it transforms the frosting to give it that green tea taste.  Even if you aren’t serving these to tea lovers, I can be pretty sure they’ll be none left at your party!   I also love how pastel this frosting turned out, doesn’t it scream Spring?

Vanilla Matcha Green Tea Frosting Donuts

Donuts
  1. 2 cups all-purpose flour
  2. 1/2 cup white sugar
  3. 1 teaspoon salt
  4. 1 tablespoon baking powder
  5. 1/4 teaspoon nutmeg
  6. 2 tablespoons melted butter
  7. 1/2 cup milk
  8. 2 eggs, beaten
  9. 1 teaspoon vanilla
  10. 2 tablespoons creamy peanut butter
Matcha Green Tea Frosting
  1. 6 tablespoons butter, softened
  2. 1 1/4 cup powdered confectioners sugar
  3. 1 tablespoon milk
  4. 2 teaspoons matcha green tea powder
Instructions
  1. Preheat oven to 400 degrees.
  2. Lightly grease your donut plan.
  3. In a large bowl mix your flour, sugar, salt, baking powder and nutmeg together. Beat in butter, milk, eggs, vanilla and peanut butter
  4. Fill each donut cup 3/4 full. Bake for 8-9 minutes or until toothpick comes out clean. Allow to cool for 10 minutes before removing them from pan.
For frosting
  1. Beat together butter and sugar. Add milk and green tea powder.
  2. Frosting only needs to be mixed for a few seconds.
  3. Frost donuts with knife or piping bag.
Notes
  1. Makes 8-10 donuts.

I am a donut (or doughnut if you must) lover.  As a kid my mom worked at the donut shop and she would always bring me home my favorite blueberry donut.  At Halloween she’d bring me home little festive munchkins that were decorated like Frankenstein and pumpkins.   Sometimes before school for breakfast on a busy day, I’d run into the gas station and buy a donut.  So what I’m saying is that the donut love has been strong for a long time.

The frosting is magical. I’m serious guys. It casts a delicious spell on you when you can’t do anything but eat it.  I went back at least 6 times and took a spoonful of this.  It’s so fluffy and has the perfect peanut butter taste to it.

You’ll want to crush up your candy cane until it’s almost powder like.  I like when it gets that consistency where is’t not too big you’re going to feel a crunch, instead it’s just like peppermint sugar on top.

I know I’ve already told you I eat M&M cookies in bed, but I also want to tell you I ate a donut in bed a few nights ago.  Again, I started with a half, and then went back, grabbed the other half and crawled back into bed.  I just remember falling back asleep with sweet sugary dreams!

Chocolate Donuts with Peanut Butter Candy Cane Frosting

For the donuts
  1. 3/4 cups all purpose flour
  2. 1/2 cup white sugar
  3. 1/4 cup cocoa powder
  4. 1/2 teaspoon baking soda
  5. 1/4 teaspoon salt
  6. 5 tablespoons vegetable oil
  7. 1/2 teaspoon vanilla extract
  8. 1/2 cup water
For the frosting
  1. 1/4 cup butter
  2. 1/2 cup chocolate peanut butter
  3. 1 cup confectioners sugar
  4. 2 tablespoons milk
Extra
  1. 1 Candy Cane - crushed up
For the donuts
  1. Preheat oven to 350 degrees. Spray your donut pan with nonstick spray.
  2. Stir together flour, sugar, cocoa powder, baking soda and salt.
  3. Add oil, vanilla and water and continue to stir until smooth.
  4. Pour into donut pan and bake 10-12 minutes. Let donuts cool.
For the frosting
  1. Use softened butter and mix with peanut butter (I use a hand mixer).
  2. Slowly add in confectioners sugar and milk. Continue to mix until frosting is fluffy.
  3. Spread frosting on donuts. Sprinkle crushed up candy cane on each one.
Notes
  1. Makes 6 donuts.

The Best Carrot Cake Glazed Donuts!  These homemade baked donuts are made with carrots (healthy!) so they taste just like carrot cake!  This recipe is easy to make and the donuts are moist and full of flavor!  These donuts are perfect for breakfast or dessert – they’re so yummy!

This Winter we got very lucky with our carrots.  We didn’t have high hopes for them but upon one Spring cleanup day we were surprised to find pounds of carrots hiding under the soil waiting for us to find them.  It was a giant surprise and it created some giant garden smiles

Aren’t they just beauties?  I just can’t get enough of fresh carrots.  There’s nothing like the taste of a carrot that was just picked.  Sometimes I nibble on one as soon as I pick it, I just can’t help myself.  So I took the carrots down to the kitchen and pondered… What to make?  I was craving carrots for dinner so I made some brown sugar glazed carrots that were delicious but I wanted to make a dessert with them too.

Glazed Carrot Cake Donuts

Ingredients
  1. 1 egg
  2. 1/2 cup orange juice
  3. 1/4 cup melted butter
  4. ½ teaspoon vanilla
  5. 1/4 cup brown sugar
  6. 1 cup flour
  7. 1/2 teaspoon baking powder
  8. 1/4 teaspoon baking soda
  9. 1/4 teaspoon salt
  10. 1/2 teaspoon cinnamon
  11. ¼ teaspoon allspice
  12. 1 ¼ cup shredded carrots
For the glaze
  1. 2 tablespoons milk
  2. 1/2 teaspoon vanilla extract
  3. 1 cups confectioners powdered sugar
For the donuts
  1. Preheat oven to 350 degrees.
  2. Beat egg in large bowl. Add orange juice, butter, vanilla and sugar, beat well.
  3. Stir in flour, baking powder, baking soda, salt, cinnamon and allspice and mix till moistened.
  4. Gently fold in shredded carrots.
  5. Fill donut pan up.
  6. Bake for 9-11 minutes. Let cool for 2 minutes.
For the glaze
  1. Combine milk and vanilla in a saucepan and heat over medium heat.
  2. Stir in confectioners powdered sugar into milk mixture. Whisk slowly, until well combined.
  3. Remove from heat and dip each donut into glaze.

There’s not a day that goes by that I don’t wish I had a donut.  Are you that way too?

I have a bit of a sweet tooth that I’ve always battled, basically my eyes tell me to eat all sugar treats in front of me.   Most recently I broke open a bag of Halloween Oreos that I have been saving.  Do you want to know what is the most depressing thing about these delicious cookies? They’re 100 calories, a cookie.  My heart breaks just thinking about that.  These cookies are so good I’d like to eat 6, not 1.    And then there’s my middle of the night chocolate kisses I have been eating.  I found a bag of kisses in the back of my cabinet and suddenly I feel like I need to eat multiple ones when I wake up during the night.  Do you hear someone opening a plastic bag at 4AM in the morning?  Don’t worry, it’s just me, standing in the dark, eating kisses, while cats circle me because they think it’s time to play.   Then with chocolate melting in my mouth, I make my way back to bed.  Horrible, aren’t I?  Do you have a sweet right now that you are misbehaving with?

What else do I love? These peanut butter donuts with vanilla frosting.  I had it in my head I wanted to start baking more with peanut butter so these sweets were made.  I’m so happy I made this choice, the peanut butter is a great addition and it sure makes a filling donut. For the donuts
  1. 1/3 cup chocolate peanut butter
  2. 1/4 cup sugar
  3. 1/3 cup plus 1 tablespoon milk
  4. 1 tablespoon vegetable oil
  5. 1 egg
  6. 1/2 teaspoon vanilla
  7. 1 cup flour
  8. 1 teaspoon baking powder
  9. 1/2 teaspoon cinnamon
  10. 1/4 teaspoon salt
For the vanilla frosting
  1. 1 1/2 cup confectioners sugar
  2. 2 tablespoons milk
  3. very small pinch of salt
  4. 1/4 teaspoon vanilla
  5. 1 teaspoon melted butter
Optional
  1. Sprinkles
For the donuts
  1. Preheat oven to 325 degrees and spray a donut pan with nonstick spray.
  2. Mix peanut butter and sugar until fluffy. Add milk, oil, egg and vanilla and continue to mix.
  3. In separate bowl combine flour, baking powder, cinnamon and salt. Then pour this dry mixture into your wet mixture. Mix until combined.
  4. Pour into your donut pan bake 9-10 minutes.
  5. Let cool for a few minutes.
For the vanilla frosting
  1. Add all ingredients together in small bowl and mix until creamy.
  2. One at a time, dip your donuts into the vanilla glaze. If you using sprinkles, then dip into bowl of sprinkles.

Maybe this blog should be called Brooklyn Donut Girl.   If you haven’t noticed I’m a bit donut obsessed lately…

What else I’m obsessed with? Tea.  The craze started when I was elementary school and my mother started to serve me a cup each morning.  Let’s just say it rapidly increased to me declaring a lot of tea whenever I go through a airport.  It’s a strong love. 

First, let’s talk dandelions. Yeah, I’m talking about those pesky flowers you probably curse under your breath about when you spot them in your garden.  Of if you’re like me, you cut them up, tie a string around them, throw on a garden dress and pretend to have a wedding in the garden.  30 years old and forever a flower girl.    But did you know dandelions are good and healthy for your body?  Dandelions support the body’s natural detoxification process by stimulating the liver (oh lala) and supporting healthy digestion.    It also helps bloating (girl, you know what I mean), water retention, inflammation, upset stomachs, high cholesterol, helps you fight off viruses and boosts immunity, helps control weight control, works well with muscle building programs, great for Type-1 and Type-2 diabetes, amazing  minerals and viamins.  You can even use it as a face wash or use it in the bath tub for a great smelling time.  Did you know that Dandelions are named “the small postman” in Persian because of the thought that they bring good news?   So next time you’re craving a cup of tea,  look for the dandelion variety on the shelf, your body will love you!

I love these donuts for lots of reason (besides the obvious that I am obsessed with this chocolate frosting and I look like a 3 year old who licked the bowl afterwards).    The Dandelion tea is such a great friend to these donuts in taste.  They add sweetness (which means less sugar, high 5) but also a hint of licorice which is a nice addition.   The dandelion is not overpowering at all, but instead acts like a supportive friend.

Here are 2 great Dandelion teas made by Traditional Medicinals.  I really love the Leaf & Root variety for these donuts because it adds that slight licorice taste that I like (again, it’s slight, not overpowering).  Note: I’m actually drinking this in tea form while posting this. Obsessed.

You’ll want to put 2 tea bags with some milk on the stove. Most likely tea will escape your bag during this process.  No worries, just strain it afterwards.  Wait till you smell this.

Dandelion Tea Donuts With Chocolate Frosting

Ingredients
  1. 1/2 cup unsweetened almond milk or regular milk
  2. 2 dandelion tea bags
  3. 1 cup flour
  4. 1/4 cup white sugar
  5. 1 teaspoon baking powder
  6. 1/2 teaspoon ground cinnamon
  7. 1/2 teaspoon salt
  8. 1 egg
  9. 1 teaspoon vanilla
  10. 1 1/2 teaspoon vegetable oil
Frosting
  1. 1 cup powdered sugar
  2. 2 tablespoons butter or dairy free butter - melted
  3. 2 tablespoons unsweetened almond milk or regular milk
  4. 1/4 cup cocoa powder
  5. 1/4 teaspoon vanilla
  6. Optional: Sprinkles of Choice
Instructions
  1. In a saucepan heat up milk and 2 tea bags over low medium heat for 15 minutes, stirring occasionally. Remove from heat and strain tea bags and any loose tea that fell out of the bags. Squeeze tea bags to get all the milk out. Throw away used tea bags.
  2. Preheat oven to 325 degrees. Spray a donut pan with nonstick spray.
  3. In a bowl mix flour, sugar, baking powder, cinnamon and salt together.
  4. In another bowl stir together milk/tea, egg, vanilla and oil until combined.
  5. Add milk mixture to your flour mixture and stir until mixed well.
  6. Pour into donut pan and bake 10-12 minutes.
  7. Remove from oven, cool.
For the frosting
  1. In a bowl using a hand mixer, mix together powdered sugar and butter until creamed well.
  2. Add milk, cocoa powder and vanilla and continue to mix until creamy and well combined.
  3. Once donuts are cool, dip them into the frosting to cover the tops.
  4. If using sprinkles, dip into bowl of sprinkles.
  5. Enjoy!

If you were to ask me right now what is one of my most proud baking moments it would be these Chocolate Donuts with Creamy Chocolate Frosting.    These are good.  I’m talking real good.  I’m talking magical.  I’m talking swoon worthy, take a seat and enjoy the next minute of your life (it will be eaten quickly, you won’t be able to stop yourself).

And get this, they’re dairy free.

I know.

Are you amazed as I am? I hope so.

If I knew I could be making dairy free donuts that taste this rich and chocolaty I would have tried dairy free baking a while ago.    I really can’t get over how good these are.    They lasted about 2 days in my house because I could not control myself.   The donuts themselves are so rich, soft and cake like.  And the frosting? Goodness gracious.   How good is the frosting? Let’s just say I doubled the batch, one for the donuts and one to just eat which Matthew and I both did.  We grabbed 2 spoons,  and ate the frosting out of a plastic baggie over the next few days (ok, it lasted one day). Did you know you can put frosting in a freezer bag to freeze it?  Life changing.   The frosting is incredible.  Just writing about it has me all worked up and wanting to rush back into the kitchen and make another batch (I probably will).

So what I’m saying is if you love donuts, if you love chocolate, if you are dairy free or aren’t dairy free, you need to try these donuts. If there’s one thing I have posted on this blog that I really want you to try, these are high up there.    I’m begging here, please try them.  I want you to feel the chocolate sensation!

For the donuts
  1. 3/4 cups all purpose flour
  2. 1/2 cup white sugar
  3. 1/4 cup cocoa powder
  4. 1/2 teaspoon baking soda
  5. 1/4 teaspoon salt
  6. 1/4 cup vegetable oil
  7. 1/2 teaspoon vanilla extract
  8. 1/2 cup milk or unsweetened almond milk
For the frosting
  1. 1 cup powdered sugar
  2. 2 tablespoons butter or dairy free butter - melted
  3. 2 tablespoons milk or unsweetened almond milk
  4. 1/4 cup cocoa powder
  5. 1/4 teaspoon vanilla
For the donuts
  1. Preheat oven to 350 degrees. Spray your donut pan with nonstick spray.
  2. Stir together flour, sugar, cocoa powder, baking soda and salt.
  3. Add oil, vanilla and milk and continue to stir until smooth.
  4. Pour into donut pan and bake for 12 minutes. Insert toothpick and if it comes out clean, donuts are done. If toothpick is not clean, bake for 2-3 more minutes or until clean.
  5. Let donuts cool for 15 minutes before removing from pan.
For the frosting
  1. In a bowl using a hand mixer, mix together powdered sugar and butter until creamed well.
  2. Add milk, cocoa powder and vanilla and continue to mix until creamy and well combined.
  3. Once donuts are cool, dip them into the frosting to cover the tops.
  4. Enjoy!

I had something else set to run today, a yummy cheesy casserole, but that has got to be put on hold.  After I made these donuts I skipped happily to my computer (with a donut in my mouth – don’t do this, it’s a choking hazard) to change the post.  I had to show you these.

If you follow me on Instagram or Twitter you might know I got a donut pan a few days ago.  A donut pan is one of those baking items I tell myself I need about 8x a month but then I never buy it.  Even if it’s only $12, I see it a a investment piece.  How often will I really make donuts?  Do I really need it?  Maybe I should buy $12 worth of things I don’t need instead.  In reality, buy the donut pan and bake donuts until your heart is content.

So what was the first donut in my life?  Well I already had a Pinterest board full of inspiration but I wanted pumpkin.  But really, when don’t I want pumpkin?  Also I wanted sugar.  But really, when don’t I want sugar?  I wish I could say something like when don’t I want a salad? But that’s never true because I really don’t want a salad ever.     Give me donuts.  Give me Cinnamon Sugar Pumpkin Donuts, please!

Here’ the scoop about these donuts:
They’re pumpkin.  I used our homemade pumpkin puree.   I am the happiest in the world when I get to do this.
These are cakey.  We’re talking cake donuts.  We’re talking moist.  We’re talking fluffy.  We’re talking donut ecstasy.
They are cinnamon sugar coated.  I was going to go the route of a glaze but then decided to keep it simple.
You will eat these by the end of the day.  I’m warning you.

Cinnamon Sugar Pumpkin Cake Donuts

For the donuts
  1. 1/4 cup vegetable oil
  2. 2 eggs
  3. 3/4 cup sugar
  4. 3/4 cup pumpkin puree
  5. 1 teaspoon pumpkin pie spice
  6. 1/2 teaspoon salt
  7. 1 teaspoon baking powder
  8. 1/2 teaspoon vanilla
  9. 3/4 cup + 2 tablespoons all-purpose flour
For the sugar coating
  1. 3 tablespoons sugar
  2. 2 teaspoons cinnamon
Instructions
  1. Preheat oven to 350 degrees.
  2. Spray donut pan with nonstick spray.
  3. Mix together oil, eggs, sugar, pumpkin puree, pumpkin pie spice, salt, baking powder and vanilla until combined.
  4. Stir in flour and continue to mix until smooth.
  5. Fill the donut pans up about 3/4 of the way.
  6. Bake donuts for 15 minutes.
  7. Remove from oven, let cool for 5 minutes, then remove donuts from pan.
  8. Combine sugar and cinnamon in large plastic bag.
  9. One at a time, put your donuts in bag and shake lightly to cover.
  10. Remove from bag and let cool completely.
  11. Store in container.
Notes
  1. Recipe makes (12) 3 inch donuts, or (6) large donuts.

First 20 Weeks of Pregnancy

Talking about the first 20 weeks of pregnancy for a first time mom.  Symptoms, Mood, Weight, Ultrasound Pics, Doctor Visits and more discussed! 

I wasn’t sure if I was going to make these types of posts.  And then I got to thinking more about it and felt it would be fun to look back on one day.  Instead of documenting every 1 or 2 weeks, I’m doing Weeks 1-20… and then probably 20-30 and then 30-40, or something like that.  I guess time will tell as I’m facing new experiences.

So here we are..  I’m in Week 24 now but we’re going to just discuss the first 20 weeks for now.  We’ll save talking about how baby is now participating in zumba classes in my belly for another post.  I guess we can get the stats and dates out of the way first.  We had sex on October 14 to make the baby (hello TMI).  Yes, I know the exact date.  My Doctor never believes that I know the exact date but I know because we were working hard on a job and only had time/energy to do the sexy dance once during my peak ovulation week.  You know how they tell you in school it only takes once to get pregnant?  They’re telling the truth.   My ovulation was peak on October 15.  Before trying to get pregnant I had no idea you could track your ovulation with test strips.   I would highly recommend them, even if you aren’t trying to get pregnant as it’s pretty wonderful to really start to witness how amazing your body is and how in tune we can get.  If you’re trying to conceive I’d also suggest using a app (I used Ovia) that tracks your period, symptoms, etc and lets you know when you’re most fertile.   We took a pregnancy test on October 29, which would be DPO (that’s days post ovulation) 14.    It was positive.   So calendar speaking, we found out around Week 4 we were with baby (to make things more confusing the first day of the last menstrual period becomes the date from which pregnancy is counted to start even though conception occurs about two weeks later.)
