Easy step by step instructions on how to freeze fresh green beans without blanching.  These green beans will last up to a year. You can use them in casseroles, soups, stir fry and more!

If your garden is anything like ours right now you might be picking pounds and pounds of green beans.  And if you’re anything like me, you really don’t want to turn on your stove to boil water to preserve your green beans during the Summer.

 Last year I started to freeze our fresh green beans this way and they stayed extra fresh, keeping their bright green color and crunch.   These frozen green beans last up to a year in the freezer making them a easy and economical way to save your green beans.

Can you freeze green beans without blanching?

Yes!  You can freeze fresh green beans without blanching.  The method below saves time because it doesn’t require blanching the beans.   You’re just going to trim the ends off, chop into desired sizes, wash them and freeze!  It’s that easy!

This is my tried and tested method that I’ve been using for years with our green beans!  

How to freeze green beans

Step 1: Take a step back and admire your green beans because god damn, you’re amazing, you just grew green beans!

Fresh green beans are one of our favorite foods and they’re so versatile in the kitchen! You can use them in casseroles, soups, stir fry, or even slow cooker meals.   Thanksgiving is only a few months away, so you can even save your garden green beans to make your favorite Green Bean Casserole family!

How cool is it to make a Thanksgiving casserole with FRESH green bean that you grew?  Talk about a dish made out of love!

Step 2: Trim the ends off both sides of green beans.

Step 3: Cut the green beans in half.

Step 4: Wash with water, making sure to get all dirt off them.

Step 5: Dry completely. Place on a cloth towel or paper towel, allowing to dry completely. This usually takes about 20 minutes.

Step 6: Place in freezer bags. I like to make 1 cup, 12 oz and 16 oz bags. Label the bag.

Step 7: Freeze!

How to Defrost Frozen Green Beans

Step 8: Time to eat them? Depending on what you are making, defrost or place in boiling water/soup directly frozen.

How long do frozen green beans last?

I have stored these green beans in my freezer for a year and they still taste great!  Good luck not eating them sooner though – they’re so delicious!

  • Green Beans

Instructions

  • Take a step back and admire your green beans because god damn, you’re amazing, you just grew green beans!

  • Cut the green beans in half.

    Thanks for this recipe. The first 5 gallon pail of french beans and 2 gallons of wax beans were cut, blanched and frozen. Just picked 2 more gallons of yellow wax beans and will try it this way, but I am only going to cut the stem end off. This is my first veggie garden. I may have overdone the beans. hahaha.

    My young daughter and I bought some fresh beans at the farmer’s market and wanted to freeze them. I had her do some research on the internet so we could learn how. Much to my dismay we came across your site. I will admit that I am not a prude and I cuss, but not around my daughter. Who would have thought a recipe site would use foul language- we couldn’t even print off the recipe bc it is on there too. Sadly we didn’t learn anything from your site, as I made my daughter quit reading for fear there would be worse. Maybe you should post a disclaimer that your site is not appropriate for children due to foul language.

    Months ago I bought pounds of green beans at the supermarket because they were so cheap. I found this post and froze them. I just want to tell you that I defrosted one pack and used it in green bean casserole and my family loved it. Looks like I’ll keep buying green beans and freezing them!

    Came as many did to find a faster, easier way to freeze our beautiful harvest! Going to try this tomorrow, and also going to admire our goddamn gorgeous bounty. Thankful for the wonderful gifts Nature gives us. Echoing others that you have been very patient for two goddamn years.

    Well, I came to figure out what to do with the half a bushel of beans I bought yesterday. My eyes were definitely bigger than my freezer, but I will see how many I can cram in. But LORD what a bunch of thin skinned people! If you don’t like what you read, can’t you just go away quietly? Where is it written that we must publicly shame someone for making us feel uncomfortable? This is the internet and you are giving religion a bad name. Me, I will be back. Thanks, Pamela!

    Great tip on freezing green beans. Also love that your step-1 recommendation was to step back and admire the “fruit of your labor”. Also like that you brought God into the equation, but I must wonder how the “Master Gardner” (Creator of all plants) feels about the way His name was used to express gratitude for His bounty.     Hey Pam I was wondering if you had any thoughts on what Nella Blue said previously about the skins coming off? Could something else cause this? Probably lost originally in all the trolling Crusader’s comments… I’m about to try this for the 1st time and nervous about wasting my homegrown.

    I just stumbled across this blog looking for how to freeze green beans. I have several things to note:
    1. Wonderful instructions – I will try it tonight, since my husband came home with way-too-many green beans from Safeway.
    2. I’ve pinned the instructions, because I hope to have our vegetable garden set up for next year’s growing season (new house and retirement!)
    3. You are one classy person. Your patience with the antics of the narrow-minded is to be commended. I thought your comment was wonderfully put – because you are telling us to recognize our achievement. I, too, sincerely believe God has a sense of humor.

    Our gardens have started flowering, so I started reaquainting myself with processing/storing. Double-checking myself about freezing beans, I came upon your post. First, I want to say I cracked up at step one. Then I re-read it. Then I stood a little taller. You’re awesome for reminding people to enjoy growing food & be proud of their accomplishments.     I came for the green bean tutorial, but stayed for the hilarious, lobotomized Chattanooga rants about the 2 unholy words up above. Anyway, I love your blog and returned today to figure out how to freeze gr beans w/out blanching first (turns out – not rocket science:))
    We have way (way) too many and I dreaded having to force fed ourselves green beans in every possible interpretation for the next 2 wks before they became icky.
