Peppermint Hot Chocolate

I know it’s only early November but I’m already in the holiday spirit.   The Halloween directions are still up but they will soon be replaced with snowmen and penguins.  The aisles of the stores are slowly starting to fill up with colorful holiday lights and ornaments.  Soon we’ll be smelling fresh pine (after we begrudgingly carry the tree home), the cats stockings will be hung and I will start to hum Christmas songs while baking cookies.   I love this time of the year, don’t you?

What’s another reason why I love this time of the year?  Seasonal products are out and recipes  are ready to be made.   One of my favorites is Coffee-mate’s Peppermint Mocha Creamer!

When I saw it in the grocery store I screamed in excitement and told Matthew quickly, and then I continued talking to him crazily to only turn around and realize I was talking to a much older gentleman who was confused. I apologized quickly, found Matthew and glared at him, and then continued to discuss this Peppermint Mocha and all the ways I planned on using it.

What’s one of my favorite Winter time drinks? Hot chocolate of course! I can drink hot chocolate all day long to be honest, but that would leave me napping all day, so I like to save it for when we come in after a cold day or for dessert.    As soon as I brought home the Peppermint Mocha I gathered the supplies and hot chocolate was made!  We clinked glasses, sipped our hot chocolates and stared at each other nodding.  You know the nod, it’s one of those “Oh yeah, this is good.  Oh yeah, let’s just cherish this moment.”.

Ingredients

  • 1/4 cup Sweetened Condensed Milk
  • 1/2 cup Coffee-mate Peppermint Mocha
  • 1/4 cup Chocolate Chips
  • 2 tablespoons Unsweetened Cocoa Powder
  • 1/4 teaspoon Vanilla Extract
  • 1/8 teaspoon Salt
  • 1 1/2 cup Hot Water
  • Candy Canes optional
  • Mini Marshmallows optional

Instructions

  1. In a saucepan over medium heat combined condensed milk, Coffee-mate Peppermint Mocha, chocolate chips, cocoa powder, vanilla and salt. Mix until well combined and heated.
  2. Add hot water, continue stirring until mixed thoroughly. Do not let it boil.
  3. Add mini marshmallows on top and a candy cane on the glass edge.
  4. Enjoy.

This soup has all the good stuff in it.  There’s cheese and milk to make it creamy, then there’s broccoli, carrots and corn to make it a vegetable dream.     The soup is incredibly creamy and if you serve it with a piece of bread, you have a perfect dinner.

Velveeta cheese in my opinion makes the most creamiest soups, so whenver I can cut up a loaf of Velveeta, I’m in! You will need a 8 ounce block of cheese for this recipe, to cut up and add to the soup!

Ingredients

  • 1/2 cup butter
  • 4 cups frozen or fresh broccoli florets
  • 1 cup carrots - peeled and chopped
  • 1 cup frozen corn
  • 3 cups chicken broth
  • 8 ounces Velveeta cheese - cubed
  • 1 cup milk
  • 1 cup heavy cream
  • 1 tablespoon garlic powder
  • 1 teaspoon dried mustard
  • 1/2 cup cornstarch
  • 3/4 cup water

Instructions

  1. Melt butter. Add in broccoli, carrots, corn and chicken broth.
  2. Bring to a simmer for 10 minutes.
  3. Add in cubed cheese, milk and heavy cream
  4. Stir in garlic powder and dried mustard.
  5. Mix until cheese is completely melted (5-10 minutes).
  6. In a separate bowl mix cornstarch and water until cornstarch is dissolved. Then add to soup mixture.
  7. Mix for about 5 minutes on medium high heat until you reach a thickness you like.
  8. Serve, Enjoy.

Funfetti Ghost Cookies

Who doesn’t love Funfetti?   Funfetti means fun! It makes you want  to throw on a party looking apron, grab some sprinkles and go wild.  And who doesn’t love the Pillsbury Doughboy? His bashfulness makes me love him even more. He’s a adorable little guy, with such a cute belly and he makes delicious treats – what’s not to love?

I can only imagine what it would be like to bake with the Pillsbury Doughboy.    You would pour 2 glasses of ginger ale and as the cookies are baking in the oven, he would tell you all his secrets.    He would give you his baking knowledge full of soft cookies and sweet treats.  You would forever owe your life to him.  Then you would reach into your pocket and shyly pull out 2 best friend necklaces.  They would be shaped like a cookie, but broken into 2 bitten pieces.  Then you would put the necklace on him and he would put it on you.  You would have a moment.   Pillsbury Doughboy- let’s be friends.  Call me. 

Here are facts I found out while googling for too long about the Pillsbury Doughboy:
His real name is Poppin’ Fresh.
He became a household love in the 1960s.
He giggles in both “hee hee” and “hoo hoo” form.
He used to be created by stop motion clay animation. Now he’s CGI.
He has a family of Poppie Fresh (his wife),  Granpopper, Granmommer, Popper (son) Bun-Bun (baby daughter), Flapjack (dog), Biscuit (cat) and Uncle Rollie.

I know. Who knew The Pillsbury Doughboy had such a large family! I’m pretty much in shock that my best friend didn’t even tell me about his children.

When I was in Target a few days ago (I’m there all the time, I’d like to think of it as a place that helps me relax) I came across Funfetti Halloween Cake Mix.  I had to have it.  I mean it’s Halloween and Boy is holding a pumpkin on the box!  It’s a must have! So off I went skipping down the aisle…

After I got home I started to think about what I was going to make, but I wasn’t sure yet. Then a few days later I was in one of my other favorite stores, Whisk. Whisk is a cooking store in Brooklyn where I like to spend all  my money. I came across a adorable ghost cookie cutter. I must have it.

Then it was decided, Funfetti Ghost Cookies!
These cookies are colorful, fun and festive.  They have the Funfetti taste we all love, but it also tastes like a sugar cookie.   Best of all, they’re super soft, like little clouds of sweetness.  When you bite into the cookie, it’s super moist.  It’s just a delicious cookie, one that will have you reaching for a second very quickly.

Funfetti Ghost Cookies

Ingredients

  • 1 Box Halloween Pillsbury Funfetti Cake Mix
  • 1/2 cup butter - softened
  • 2 eggs
  • Splash of Vanilla

Instructions

  1. Beat together cake mix, butter, eggs and vanilla until it becomes dough like.
  2. Cover and put in refrigerator. Let chill for 3 hours.
  3. Roll out dough on floured surface and use your cookie cutter for shapes.
  4. Put on cookie sheet and bake at 350 degrees for 8-10 minutes, until bottoms are golden brown.
  5. Decorate if desired, let cool.
  6. Enjoy!

Recipe Notes

Makes 2-3 dozen cookies depending on size of cookie cutter.

Here is the dough all made.  Funfetti dough is my absolute weakness. I could eat this and call it dinner. Ok maybe I have.

The key to making Funfetti shaped cookies is letting the dough chill.  This will make it easy to roll out.  We’re going to chill this in the fridge for 3 hours.

Xanadu is the Boss of our kitty family, she’s on constant duty of keeping all the other cats in line. She likes to sit up above watching the others to make sure they are behaving. If they aren’t, don’t you worry, she will jump down and proceed to push them back to work.   Here’s where I found her.

Ingredients

  • 2 pounds pork spareribs
  • 1 cup barbecue sauce
  • 1 tablespoon brown sugar
  • 1 onion - chopped
  • 1 bell pepper - chopped
  • 1 clove garlic - minced
  • salt + pepper

Instructions

  1. Rub your spareribs on both sides with salt and pepper. Set aside.
  2. Add onion, pepper and garlic to the bottom of your crockpot.
  3. Add spareribs on top.
  4. Pour barbecue sauce and brown sugar on top.
  5. Cook on low for 8 hours.
  6. Serve and enjoy!

 

Fizzy Trix Vodka

Last week I was invited to a Hello Cereal Lovers event hosted by General Mills serving creations by Justin Warner.    As soon as I arrived and started to taste all these amazing cereal dishes my mind started to wonder quickly.   I usually think of Cereal as something I splash milk on and call it a day, or occasionally bake cookies and make granola bars with. But savory?  I never thought of cereal as savory but that has all changed.  By thinking out of the (cereal) box I can totally see  how cereal can be incorporated into dinner dishes and you will see a few recipes in the upcoming weeks as I try them out.   While at the event I had one amazing rotini pasta dish and one extra delicious split pea soup – both had cereal in it. I hope you’re intrigued by this, because you’re soon to be hungry!

Recipe for delicious Fizzy Vodka with Trix Cereal. For adults only!

As soon as I got to the event I was greeted with smiles, then quickly offered a Fizzy Trix drink. Let me tell you a few things:
I accepted this drink because all I heard was “Trix”.
I don’t drink Vodka.
I started to drink it and quickly felt my cheeks become flushed.
I found a recipe book at a nearby table and quickly realized I was drinking Vodka.
I really enjoyed this Fizzy Vodka Trix drink.  Alot.
I quickly started to dance on tables.
They asked me to leave.

Ok the last 2 things aren’t true.  In fact I was offered another Fizzy Trix drink but declined because I have a fear with alcohol that I will become that stranger on the subway home.    Random:  Once on the way home Matthew and I were sitting on the subway, and a intoxicated man placed his hand on Matthew’s thigh and quickly stroked very high up.  Matthew removed his hand. I giggled crazily. The man awoke embarrassed, confused, and then passed out again.  It was a highlight of my year.

So for you Fizzy Drink and Cereal lovers out there, I think you’re going to love this recipe.  Enjoy!

Fizzy Trix Vodka

Servings 4

Ingredients

  • 1 cup 8 oz vodka
  • 1 cup Trix® cereal
  • 1/2 cup whipping cream
  • 1/2 cup sugar
  • 1/2 cup water
  • 1/4 cup fresh lemon juice 2 lemons
  • 1/4 cup fresh lime juice 2 limes
  • 2 pasteurized egg whites
  • 2 cups ice cubes not crushed

Garnish

  • Dash of aromatic bitters
  • Trix® cereal

Instructions

  1. Place vodka in small bowl. Stir in 1/2 cup of the cereal, let stand 15 minutes.
  2. Place cream in another small bowl, stir in remaining 1/2 cup cereal. Refrigerate 15 minutes, stirring once.
  3. In 1-quart saucepan, combine sugar and water. Heat to boiling, stir until sugar is dissolves. Remove from heat, set aside to cool.
  4. Stir vodka and cream mixtures. Strain mixtures into 2-cup glass measuring cup to remove cereal, discard cereal. Pour vodka-cream mixture into beverage shaker or quart-size jar with lid. Add lemon and lime juices, egg whites and sugar mixture. Shake drink like crazy. Add ice cubes to shaker, shake again like crazy.
  5. Strain drink into 4 chilled martini glasses. Hit the foamy top with a dash of bitters.
  6. Garnish With Cereal.

Halloween Decorated Peanut Butter Chocolate Chip Pretzel Granola Bars!  These are great for snacks, breakfast and Halloween parties! Use black and orange chocolate chip morsels to make them festive looking!

While walking around the Halloween section at Target I came across these festive chocolate morsels.  They are Nestle Toll House Semi-Sweet Chocolate and Orange Morsels.   I threw them immediately in my buggy, not really knowing what I was going to make with them, but how could I turn them down?

Dried Edamame Recipe

EASY to make dried edamame recipe using soybeans!  This healthy edamame is slow roasted and salted!  If you’re growing soybeans this year you need to make this snack!

I love soybeans so I love dried edamame!

I think I start every post with “I love (insert something”). 

I love cheese.  I love cats.  I love donuts.  I love snowmen.  I love pumpkins. I love you. 

But soybeans, yeah, I love them guys.    We had a great soybean year and it’s still going on with more plants to pick.  The last few days have been chilly and windy but the garden calls, so I throw on a hat and a dramatic attitude (“I’m so cold! I’m not going to survive!”) and get picking soybeans.

Ingredients

  • 1 pound ground beef
  • 1 10 oz can of enchilada sauce
  • 1 cup of salsa
  • 1 can of black beans
  • 1 large bell pepper - chopped
  • 2 cups cooked corn
  • 12 6 inch corn tortillas
  • 8 oz shredded cheddar cheese
  • handful of cilantro - chopped

Instructions

  1. Preheat oven to 350 degrees.
  2. In a skillet, brown ground beef. Stir in enchilada sauce and salsa. Set aside.
  3. In a bowl combine your black beans, chopped pepper, corn and cilantro.
  4. In a 13x9 baking pan place 6 tortillas.
  5. Cover with 1/2 of the meat mixture.
  6. Cover with 1/2 of the corn, beans, pepper mixture.
  7. Sprinkle 1/2 of the cheese on top.
  8. Place remaining 6 tortillas on top.
  9. Cover with 1/2 of the meat mixture.
  10. Cover with 1/2 of the corn, beans, pepper mixture.
  11. Sprinkle with 1/2 of the cheese on top.
  12. Bake, uncovered, for 30 minutes.

French Fries,  I have a real big crush on you.  I love you straight. I love you crinkled. I love you curly.  I love you covered in cheese.  And chili.  And beans. 

Are you like me and stock up on certain items but don’t notice until you open your freezer and multiple bags of frozen french fries are staring at you?  I’m that way for a few things.  When Goya  is on sale I think I need 8 cans of hominy or pinto beans.  Pasta, yes, let’s buy 10 boxes.  Ketchup, well maybe I will have a cookout, better buy a few bottles.  That 20 pound bag of rice is super cheap, what a deal, better buy it.  Whenever French Fries are on sale, usually 2 bags for $5, I better get them too.

A few nights ago I was going through the process of “What to make for dinner”.  There were a few rules:
-I wanted french fries.  
-I wanted to use up heavy creamy which was close to it’s end date.
-I needed to use some type of garden vegetable.
-I wanted to prepare it quickly. This means frozen french fries.
-I wanted it to be delicious.

So French Fry Casserole was born!

When I took this out of the oven, I pulled back the foil and I wish I had a video to document Matthew’s reaction.  It was pure excitement for this casserole.  

If you like cheese fries then you’re going to love this casserole because it’s basically glorified chili cheese fries that we can call dinner and everyone will be ok with it because we added the word casserole to the end.  

The chili comes from chili beans which I could eat out of the can with a spoon.  On top is also a green pepper chopped up, this gives the casserole a great crunch and it just makes me happy to use anything we grow in the garden with french fries.

We ate this casserole as a main dish and it was extra filling. There is no meat in this, but you could add chicken, ground beef, or bacon bits to the top if you choose to.

  • 1 32 oz bag frozen french fries
  • 2 cups heavy cream
  • 8 oz shredded cheddar cheese
  • 1 can chili beans
  • 1 bell pepper - chopped

Instructions

  1. Preheat your oven to 400 degrees.
  2. Cover the bottom of a 9x13 baking dish with frozen french fries.
  3. Pour your heavy cream on top.
  4. Sprinkle cheddar cheese on top.
  5. Put chili beans and bell peppers on top.
  6. Cover with foil and poke a fork or knife through the foil 3 times - this helps the steam escape.
  7. Bake for 1 hour.
  8. Remove from oven and let sit for 5 minutes.
  9. Enjoy!

How to Ship Cookies

This year I plan on lots of baking for holiday presents to friends and family.  I have been looking for ways to ship baked goods the best way possible to prevent cookie breakage (and heart breakage).  

I found that if you use plastic pint containers (even better, just reuse your takeout pint containers after washing out) and layer each level with parchment paper, your cookies stay safe in the mail!   • ½ cup butter – softened
  • ½ cup sugar
  • ½ cup brown sugar
  • 1 egg
  • 1 cup grated zucchini
  • 2 cups flour

  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ¾ cup chocolate chips

Instructions

  1. Preheat your oven to 375 degrees.
  2. In a bowl stir together your butter and sugars until creamy.
  3. Add your egg and zucchini and stir to combine.
  4. Add flour, vanilla, baking soda, salt, cinnamon and cloves and continue to stir till everything is mixed good.
  5. Add your chocolate chips and stir.
  6. Drop cookie dough on parchment lined or greased cookie sheet.
  7. Bake for 11-13 minutes until bottoms are slightly browned.

Cornbread is such a comfort food.  It’s always a dinner favorite on the side to soak up the juices, gravy or just devour by itself.  When I found myself craving some cornbread to go along with BBQ ribs I whipped up this recipe.  This cornbread is a winner, and for those that love a spicy kick you will love it.  This recipe uses 3 tablespoons of diced jalapeno peppers which makes it spicy enough to give it that extra pop, but not too hot that you can’t eat 6 pieces of cornbread in a row.  That’s real talk y’all. 

Buttermilk Cornbread

This recipe asks for 1 cup of buttermilk which makes it as soft as a cloud.  I didn’t have buttermilk but I learned how to make some quickly with ingredients you have in your kitchen.  For 1 cup of buttermilk you need 1 cup of milk + 1 tablespoon lemon juice.  That’s it!   Place your tablespoon of lemon juice in a 1 cup measuring cup.  Add your milk to fill up to the 1 cup mark.  Then let stand for 5 minutes, you will see it will start to thicken up.  Boom, buttermilk! It’s that easy!

Next time you’re looking for a quick cornbread, look away from your usual box mix and make some homemade cornbread.  It’s well worth it.

  1. Preheat oven to 375 degrees.

  3. Add flour, cornmeal, jalapeno peppers and salt. Continue to stir to combine.
  4. Spray a 8x8 pan with non stick spray. Pour cornbread mixture into pan.
  5. Bake for 35 minutes.
  6. Let cool for 20 minutes then cut into slices.

Recipe Notes

Creamy Beef Stroganoff

Beef Stroganoff, Beef Stroganoff, Beef Stroganoff, Beef Stroganoff.   I’ve had this word written in my “to do” page for months now because Matthew has been craving Beef Stroganoff.  How bad has he been craving it?  See above for hints.  So finally I made the first step, I bought sour cream.  This is a pretty big step for me considering sour cream scares me beyond belief.  The texture of sour cream reminds me of my archnemesis, mayonnaise.  I know they taste nothing alike but I worry the mayonnaise companies might be following me, watching me when I shop (how embarrassing) and then sneak mayonnaise into my sour cream tub instead.  Can you imagine the nightmares I would have?   Actually there is a mayo dream I have had a few times but that’s for another time entirely…

Beef Stroganoff.   So I made it, with sour cream.  And onions.  Are you shocked?   I pretty much am.  When Matthew saw me frying onions up with the beef I think he nearly fainted with surprise.  Look at me, throwing onions in a pan, buying sour cream,  life changing actions right here folks!  And get this, I absolutely loved it.  It was creamy, moist and delicious.  Give me mushrooms in a creamy sauce and you have one happy girl!  Beef Stroganoff – thanks for a great dinner!

Creamy Beef Stroganoff

Ingredients

  • 2 pounds beef chuck roast or beef sirloin steak
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 ounces butter
  • 2 cloves minced garlic
  • 1 onion cut up into slices
  • 1 1/2 cup beef broth
  • 3 tablespoons cornstarch
  • 1 tablespoon worcestershire sauce
  • 1/2 teaspoon ground mustard
  • 12 oz mushrooms canned or fresh
  • 1/3 cup sour cream
  • parsley to garnish

Instructions

  1. Remove any fat from your beef and cut into pieces that are about 1/2 inch thick and 2-3 inches long.
  2. Season meat with salt and pepper, rub so all meat is evenly coated.
  3. In a large skillet over medium high heat, melt the butter and garlic. Add the beef and cook until browned. Add onion slices and continue to stir for 3 minutes.
  4. Place beef broth in small bowl and add cornstarch slowly, continuing to stir.
  5. Add beef broth/cornstarch mixture to beef and onion skillet, bring to a boil. Lower the heat and add in ground mustard and worcestershire sauce. Stir until combined.
  6. Cover and simmer for 1 hour.
  7. When your 1 hour is up, remove lid and stir in mushrooms and sour cream.
  8. Once heated, serve over egg noodles or rice.
  9. Add parsley to garnish on top.

First, I would like to give a shout out to the ever changing Sun that enters our loft around 5:30PM and blinds me until about 7PM.  The light is dramatic, feels great on the skin, but it’s all over the place for pictures.

Do you know how good this was already smelling?  Essy showed up and tried to jump from the table to the counter, which is a enormous jump that her 19 year old body would have never made.  She had her eye on the prize (the beef) and her nose knew it was nearby.

Get your cinnamon sugar mixture in a bag.  Then put the ripped up biscuits inside and shake to coat evenly.

Then start to fill each muffin cup up with about 8-10 pieces. Into the oven it goes..

Now here’s the scary part.  We need to flip these upside down.  I know, you’re already scared, trust me I was too.  I thought about this in my head about 6x since I read multiple reviews that said they would fall apart.  That’s why it’s really important you spray your muffin sheet good with nonstick spray.

So you turn your muffin cup sheet upside down.  Take a minute to breathe.  Take a minute to hope.   Then slowly lift the muffin sheet up…

Ingredients

  • 2 cans of 7.5 oz Pillsbury refrigerated biscuits or other brand
  • 1/2 cup butter - melted
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 2 1/2 teaspoons ground cinnamon

Instructions

  1. Preheat your oven to 350 degrees.
  2. Spray a dozen muffin cup sheet with nonstick spray. 

  3. Mix melted butter and brown sugar together in small bowl, spoon 1 tablespoon into each muffin cup.
  4. Mix white sugar and cinnamon in a plastic bag.
  5. Take each biscuit and rip it up into 6 pieces. Put the biscuit pieces in bag and shake to coat evenly.
  6. Place 8-10 pieces of biscuits into each muffin cup to evenly fill them up. If you have any sugar left in the bag, sprinkle on top of the muffins.
  7. Bake for 12-14 minutes.
  8. Remove from oven and let cool for 1 minute.
  9. Turn upside down, the muffins should fall right out.
  10. Serve warm, enjoy!

 

White Bean and Kale Pesto Soup

I am loving this soup.  I am loving this weather.  I am loving this soup in this weather. 

Reasons why I love this White Bean and Kale Pesto Soup:
It’s quick.
It’s easy.
It has white white beans which I love.
It has kale pesto which I love, but you can use any type of pesto.
It uses roasted peppers which I’m officially in love with and can’t stop thinking about.  
It’s perfect on a chilly night.  
It’s healthy!
It will make you happy!

I was a bit worried how this soup would turn out, it was a new soup adventure but I was so happy with the results.  There were leftovers I kept warm for Matthew to eat after he came home later and he kept exclaiming how great this soup was as usually if there is no meat involved  it’s not always a favorite, but this was a homerun out of the soup ballpark.

White Bean and Kale Pesto Soup

Ingredients

  • 2 Tablespoons Kale Pesto Or any type of pesto you prefer.
  • 2.5 cups Chicken Broth
  • 2 15 oz cans of Great Northern Beans
  • 3/4 cup of Roasted Peppers
  • 2 Tablespoons Parmesan grated
  • pinch of black pepper

Instructions

To roast the peppers

  1. Preheat your oven to 375 and wash 3-4 medium size bell peppers (any color you want). Leave the stems on. Place the peppers on a aluminum foil covered cookie sheet. Place the sheet in the oven. Every 20 minutes turn the peppers using the stems you left on until 1 hour is up. At this time you should see that all your pepper skins have wrinkled and turned blackish. Take peppers out and cool them for 20 minutes so you can touch them. Once cool peel the peppers so the skin comes off easily. Make sure all seeds are removed from the peppers and disregard them. You should have now have slippery beautiful peppers. Cut them up into small pieces to have 3/4 cup for this recipe.

Directions

  1. Pour your chicken stock into a pot at medium-high heat.
  2. Add beans and bring to a boil.
  3. Once boiling, reduce to a simmer and add your pesto, roasted peppers and pinch of black pepper. Simmer for 5 more minutes.
  4. Add Parmesan cheese and stir soup.
  5. Serve in bowls. Enjoy!

Recipe Notes

You can substitute Vegetable Broth for Chicken Broth instead.

This soup is done so quick.  If you have the roasted peppers done ahead of time, even better!  I’m going to freeze a bunch up so I can make this all winter long for quick dinners!

Today we are making Strawberry Peach Jam.  I am a believer in never letting fruits or vegetables go to waste, I will find something to do with them always.   I had a peach that had a short life span but you better believe it – this peach was not going to waste! (Sadly I didn’t have enough to make my favorite Peach Cake!)

15 Minute Strawberry Peach Jam

Homemade 15 MINUTE Strawberry Peach Jam recipe that makes a small batch 8 oz jar without pectin!  This healthy, easy recipe is a low sugar jam made with honey that makes a perfect jam for toast, dessert and more.  I love canning this recipe too!

Servings 8 ounces

Ingredients

  • 2 cups strawberries - hulled
  • 1 small peach - cut up into slices peach pit removed
  • 1 tablespoon lemon juice
  • 1/4 cup honey

Instructions

  1. Put strawberries and peach slices into a food processor and pulse about 10 times until it's a consistency that is slightly chunky.
  2. Transfer into saucepan, add lemon juice and honey. Bring to a light boil on medium-high heat.
  3. Cook for 10-12 minutes, stirring often so it does not burn. Once it's reached a jam texture, remove from heat and let cool.
  4. Put into jar and store in refrigerator.

Recipe Notes

Makes 8 oz of jam.

 

Easy Kale Pesto

Happy Thursday everyone! 
How’s the weather where you are?  Let me tell you yesterday was not pretty! And by not pretty I mean melting hot in the mid to high 90’s!  The good news is that after today there is nothing in the 10 day forecast above 80 degrees!  That means the air conditioning can shut off while we sleep!  I need the hum of something while I sleep so if the air conditioner is not on, the fan is, and last week we had 2 chilly nights where we slept with the fan on and I got some deep sleeps! I hardly woke up, slept in and overall was a great sleep.  Who doesn’t love a deep sleep?  

Also who doesn’t love waking up to a cat under the blanket on your belly, a cat on top of your pillow curled into your head, and a cat sleeping next to the bed so it can be the first one to rub against your ankles?   I love my babies.. but that’s another post!   Note to self: Start making more cat posts.  They are necessary for a healthy life! 

Can I tell you something about this kale pesto below?  It’s delicious.  Can I tell you something else?  I didn’t know what pesto was until I was in my 20’s.  Noone back at home in the hills of the Appalachian Mountains every muttered the word “pesto”.  We  never had it n my house, friends parents never made it when I was over at their house, it was never offered at the deli counter to dip your crackers in.  So you can imagine how amazed I was to find many years later what pesto was and how good it was.  That is my excuse for the amount of pesto I eat, to catch up on all those years lost!  And I can eat pesto! I can eat it all day!

LUNA Bar Love + Giveaway

I love LUNA Bars.  Do you? If not, I’m here to hopefully change that because when I find something good I just need to share it! And stick with me to the end where one lucky reader will win a box full! It’s worth it.. trust me!

It totally tastes like Carrot Cake too, you will love it!  I love them so much that once in Target I got down on the ground, practically on  my stomach as the Carrot Cake bars were on the lowest shelf and rooted my hands around trying to find if there was any left in stock while people walked down the aisle asking me if I was ok. I didn’t look ok. I looked crazed.  I needed my Carrot Cake LUNA Bars!


And if we’re talking delicious, the Chocolate Dipped Coconut bars taste just like Samoa Girl Scout Cookies.  I’m not lying to you, I would never lie about such a  serious subject! These bars are perfect for a quick breakfast in the morning, just grab and eat!

My other favorite are LUNA Protein Bars.  Here are some facts about them:

Whenever I’m on the go, I always have a Protein bar in my bookbag.  I always carry a book bag by the way.  There’s never books in it though, just a change purse that constantly spills out coins (including non US coins that I never remove from a trip), chapstick that always loses the cap and so many reusable grocery bags you wouldn’t know what to do.   Enough about my messy book bag, back to the Protein bars, I always have them for a pick me up which I often need in the afternoon when out in the city.

Also how cool is this?  LUNA launched the “Feed Your Strength…At Work!” contest earlier this year and selected two winners – 4Moms and Yurbuds – to receive a LUNA-fied vending machine and nutrition counseling sessions from LUNA’s in-house nutrition team. I’d get to work early for that!

Ingredients

  • 3 cups watermelon frozen or fresh
  • 1.5 cups strawberries frozen or fresh – hulled
  • 1 teaspoon lime juice
  • 10 mint leaves
  • ¼ cup water
  • 5 ice cubes

Instructions

  1. If using frozen watermelon and strawberries, defrost in your microwave for 1 minute until slightly soft. If using fresh watermelon and strawberries, defrosting isn’t needed.
  2. Add all fruit, lime juice, mint and water in blender. Blend for about 30 seconds-1 minute until it’s smooth.
  3. Add your ice cubes and blend for about 10 seconds more.
  4. Serve and enjoy!

Who doesn’t like tacos?  Good, I am glad we all love them!

I could probably have tacos every single day. There’s so many varieties, so many things I can put on them, so many side dishes that go perfectly (like cilantro lime rice!).  Oh tacos, how are you so great? One of my favorite recipes is Crockpot Chicken Tacos so I was interested in trying other Crockpot taco recipes because let’s be honest, I’m in love with my crockpot (or slow cooker if you must call  it that too).

Slow Cooked Pepper Steak Tacos were born!   I was especially happy with these tacos because I got to use garden grown green peppers, onions (are you proud of me?), stewed tomatoes that I made from our tomatoes and then our tomato salsa on top!   These tacos were so fresh!

We were both in love with these tacos when we had them for dinner and since it’s 2 pounds of beef, it’s enough for leftovers – so 2 taco nights in a row?  Yes please!

This pepper steak is so great smelling!  Just thinking about the smell makes my belly grown with hunger and love.
I dare you to not just take one piece and eat it right away.

Throw some pepper steak on a tortilla, then add some salsa on top if you’d like.  I added my Garden Tomato Salsa!
Oh, can you wait  to eat these? I cannot!

I highly suggest taking some of the juices from the crockpot and pouring it on top. This just makes it MORE PERFECT!

Slow Cooker Pepper Steak Tacos

RECIPE for easy to make Slow Cooker Pepper Steak Tacos!  This crockpot meal is one of my family's favorites.  We serve it on tortillas with fresh tomato salsa!

Ingredients

  • 2 pounds beef sirloin
  • 1 teaspoon garlic powder
  • 3 tablespoons vegetable oil
  • 1 beef bouillon cube
  • 1/4 cup hot water
  • 1 tablespoon cornstarch
  • 2 green peppers - chopped
  • 1/2 cup chopped onions
  • 14 oz of stewed tomatoes
  • 1 teaspoon pepper
  • 1 teaspoon cumin
  • 2 teaspoons chili powder
  • 1 tablespoon oregano
  • 1 teaspoon salt

Instructions

  1. Cut your beef sirloin into about 2 inch strips.
  2. In a skillet over medium high heat, add your vegetable oil then beef strips. Sprinkle 1 teaspoon garlic powder on top. Brown sirloin strips, then transfer to crockpot.
  3. Mix your beef bouillon cube with the hot water so it dissolves. Then add cornstarch and stir until it's dissolved. Pour this wet mixture into the crockpot.
  4. Add in all the rest of your ingredients.
  5. Cook on high for 3-4 hours or low for 6-7 hours.
  6. Serve on flour tortillas or hard shells, garnish with salsa, avocado or whatever else you'd like!
