That’s a direct quote from my family who loves this Chicken Parmigiana recipe (aka Chicken Parmesan!)! I usually make this for Sunday dinner because it takes a bit more work than your typical weeknight meal. Does anyone else’s weeknights usually seem like a blur? Finish work, pickup from preschool, get home, get dinner made, get your little one in the bath, bedtime routine, and then pass out.
Well on weekends things are a slower, a little more relaxed, a little more “We can stay in our pajamas all day and that’s totally ok”. And weekends are for yummy family dinners!
How to Make Chicken Parmigiana
Thinking of making Chicken Parmigiana for the first time? Here’s the steps to make this delicious recipe!
Preheat oven to 425 degrees.
Put your chicken breasts in a plastic bag and use a rolling pin (or meat mallet if you’re fancy like that) to flatten them out. This is a great time to get all your political frustrations out. 🙂 Ideally you’d like them about 1/2 inch thick.
Sprinkle salt, pepper and garlic powder evenly over the chicken breasts. This is to flavor the chicken before we start coating it.
Mix bread crumbs and 1/2 cup Parmesan cheese in a medium bowl. Set aside.
Place flour in a shallow bowl and cover chicken breasts with flour on both sides. Dip the chicken breasts into beaten eggs. Now dip the chicken into breadcrumb mixture, using your hands to press the crumbs firmly into the meat.
Heat olive oil over medium high heat in a large frying pan. Add the chicken breasts to the pan and brown on both sides, about 6-8 minutes total. You don’t need to worry about fully cooking the chicken right now, as we’re going to bake it soon.
Place chicken breasts in a baking dish and pour 1/4 cup of Marinara sauce on top of each one. Now add equal amounts of mozzarella cheese on each. Now add equal amounts of Parmesan cheese on each. Now add equal amounts of fresh basil on each. Finally, sprinkle equal amounts of Parmesan cheese on top. Whew, that was a lot of delicious recipe work there!
Put baking dish in oven and cook for 15 minutes, or until the cheese is bubbly, and the chicken breasts are fully cooked.
Remove from oven and allow to sit for a few minutes. Serve this Chicken Parmigiana over linguine or angle hair pasta, with some Garlic Knots on the side. Now let the rave reviews come in from your family!
Cooking Tips
- Want to up the flavor on this Chicken Parmesan even more? Try making a homemade tomato sauce instead of buying a store bought one.
- You can use chicken tenderloins instead of chicken breasts if preferred.
- Using a cast iron skillet to fry the chicken breasts will result in more flavor!
- I recommend Italian seasoned breadcrumbs for more flavor, but you can also use Panko bread crumbs.
- If you ran out of basil, you can use fresh parsley or oregano instead.
