Can we talk about how shockingly delicious this Crockpot Vegan Cauliflower Soup is, without having any dairy in it? It’s kinda life changing (just like these dairy free mashed potatoes!).
Matthew (who is definitely a meat and potatoes kinda guy) couldn’t get over that this was dairy free. “But how’s it so creamy? Wait, there’s no milk or cheese in it? WHAT?” Dark magic! Ok, ok, it’s not dark magic, it’s just crockpot + blender = creamy soup!

This Cauliflower Soup calls for 8 simple ingredients, many of them vegetables. This is definitely a healthy recipe packed with good things to eat, but it’s very tasty as well. This is one of those recipes that will encourage people to eat their vegetables!
Trust me, I’ve eaten some vegan dinners that definitely didn’t taste good, but this isn’t one of them. Also, I can’t do vegan cheese (yuck!), I just don’t like them and never found a good one that could substitute real cheese, so I didn’t even try adding it to this recipe. In my opinion this soup is creamy enough without cheese, so it’s not needed!

How to Make Vegan Cauliflower Soup in the Crockpot
When you think of creamy soups, you usually think of adding butter, milk or cheese – but this soup is 100% dairy free. The way that this soup gets creamy is by using a blender to blend together the vegetables with broth.
You can use a immersion blender or regular blender to blend this soup together. You can even use a food processor if you have to, but please be careful as the soup will be hot!
First, gather your ingredients. You’ll need a bunch of vegetables, this will take about 5-10 minutes to chop everything up. You don’t even need to peel the potatoes, the peels help making it more creamy!
Now throw them all the in slow cooker.
Add 4 cups of vegetable broth into it. Sprinkle salt and pepper (white pepper if you have it) and stir.
Cook on HIGH for 4 hours. Alternatively, you could cook it on LOW for 7 hours.
After 4 hours, your vegetables will look something like this and your home will smell amazing!
Now grab your immersion blender. If you don’t have one, you can also use a regular blender or even a food processor, but please be careful as the soup is very hot.

A few presses of the blender and you’ll be left with a super creamy soup, ready to serve for dinner for your entire family!
Now serve it in bowls and gobble it up! My entire family loves this recipe, including my 2 year old toddler (she asks for second servings) so if I can please a picky little lady with vegetables, I think your family will like it too. 🙂

Crockpot Vegan Cauliflower SoupPrint
- 1 head of cauliflower cut into florets
- 2 potatoes chopped, you don't need to peel them
- 2 stalks celery chopped
- 2 carrots peeled and chopped
- 1 small onion peeled and chopped
- 2 cloves garlic minced
- 4 cups vegetable broth
- 1/2 teaspoon salt
- 1/2 teaspoon pepper (use white pepper if you have it)
- Add cauliflower, potatoes, celery, carrots, onion and garlic to crockpot.
- Add vegetable broth, salt and pepper and stir.
- Cook on HIGH for 4 hours.
- Use a immersion blender, or carefully transfer to a blender to blend. Please be careful, the soup is very hot. Blend until the soup is smooth and creamy.
- Serve in bowls. Enjoy!
