Can we talk about how shockingly (!) delicious this Crockpot Cauliflower Soup is, without having any dairy products in it? It’s kinda life changing (just like these dairy free mashed potatoes which will seriously change your life)!
When you think of creamy soups, you usually think of adding butter, milk or cheese – but this soup is 100% dairy free. The way that this soup gets creamy is by using a blender to blend together the vegetables (lots of vegetables!!!) with the broth. It’s my secret to creamy soups!
Matthew (who is definitely a meat and potatoes kinda guy) couldn’t get over that this was dairy free. “But how’s it so creamy? Wait, there’s no milk or cheese in it? WHAT?” Dark magic! Ok, ok, it’s not dark magic, it’s just crockpot + blender = creamy soup!
Just trust me, you need to try it!
Vegan Cauliflower Soup Ingredients
This Cauliflower Soup calls for 8 simple ingredients, many of them vegetables.
- cauliflower
- potatoes – by the way, there’s no need to peel them!
- celery
- carrots
- onion
- garlic
- vegetable broth
- salt & pepper
How to Make Vegan Cauliflower Soup in the Crockpot
First, gather your ingredients. You’ll need a bunch of vegetables, this will take about 5-10 minutes to chop everything up.
Now throw them all the in slow cooker.
Add vegetable broth into the crockpot along with some salt and pepper.
Cook on HIGH for 4 hours. Alternatively, you could cook it on LOW for 7 hours.
After 4 hours, your vegetables will look something like this and your kitchen will smell amazing!
Now grab your immersion blender. If you don’t have one, you can also use a regular blender, but please be careful as the soup is very hot.
If you’ve been thinking about getting a immersion blender, I would recommend this one. I’ve been using it for 8 years and it’s become one of my favorite kitchen tools for making creamy soups and sauces like this.
A few presses of the blender and you’ll be left with a super creamy soup, ready to serve for dinner for your entire family!

- 1 large head cauliflower cut into florets
- 2 potatoes chopped, you don't need to peel them
- 2 stalks celery chopped
- 2 carrots peeled and chopped
- 1 small onion peeled and chopped
- 2 cloves garlic minced
- 4 cups vegetable broth
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Add cauliflower, potatoes, celery, carrots, onion and garlic to crockpot.
- Add vegetable broth, salt and pepper and stir.
- Cook on HIGH for 4 hours or LOW for 7 hours.
- Use a immersion blender, or carefully transfer to a blender to blend. Please be careful, the soup is very hot. Blend until the soup is smooth and creamy.
- Serve in bowls. Enjoy!
