Wonton Soup Recipe (That’s easy to make!)

I would say that I cook the majority of the meals that we eat for dinner, but once in a while Matthew cooks up dinner and it’s always delicious.   One recipe he’s really into and made it his goal to perfect was homemade wonton soup.  

Wonton soup is a favorite of ours and is one of the most popular things we order from Chinese takeout (besides chicken and broccoli!), but we wanted to make it ourselves, including making the wontons from scratch.

 Chinese food is one of my favorites but I have to admit that usually after I eat takeout I feel guilty and awful.  Over the years I’ve really been working hard to perfect some Chinese recipes to get them tasting like the restaurant but healthier by making them in my own kitchen.  I even have a section of Chinese recipes favorites here, with a little push that the Chicken and Broccoli is a fan favorite on my blog.

Fresh Green Beans Recipe

Right now we have a bunch of green beans growing in the garden.  I love rooting around in the bush beans trying to find the beans.  I love my Slow Cooker Green Beans recipe, but I wanted to try something new!

With some freshly green beans just picked I  knew what was on the menu: Chinese Green Beans, just like from the Chinese buffet!    To make this a full all around meal ham is a great addition to Chinese Green Beans.  You can used Cubed Ham or Diced Ham, depending on what you like.  It’s also a perfect recipe for leftover ham.

What else do you need?  I love adding green peppers to Chinese meals because they soak up the soy sauce and other sauces so nicely. Whenever I get broccoli and garlic sauce for takeout, they always add green peppers.  I love it!

And 15 minutes later, your meal is done. That’s faster than calling the Chinese restaurant and waiting for it to be delivered!  Not to mention it’s so much more healthy!

These Chinese Buffet Style Green Beans With Ham are delicious! A soy sauce garlic sauce is added on top of the beans in this easy to make healthy recipe that only takes 15 minutes to make!

Ingredients

  • 2 tablespoons vegetable or sesame oil
  • 2 cloves garlic minced
  • 1 pound green beans ends cut off
  • 1 large green pepper chopped
  • 1 cup chopped ham
  • 1 tablespoon sugar
  • 2 tablespoons oyster sauce
  • 2 tablespoons soy sauce

Instructions

  1. Heat oil in a large pan over medium high heat.
  2. Stir in garlic and mix for a minute or until slightly browned.
  3. Add green beans and pepper and stir for 10 minutes.
  4. Add ham, sugar, oyster sauce and soy sauce and heat for a additional 5 minutes.
  5. Remove from heat and serve.

For vegetarian option, follow the recipe but don't add ham.

A few weeks ago I was left with a cup of sauerkraut.  Being a person that doesn’t like any food to go waste I was going crazy with what to do with it.  We used some of it up on chili cheese dogs but what was going to be next?  

Then I thought of all the great family Polish recipes I ate as a kid.  There was always sauerkraut alongside meat and mashed potatoes so that’s how this Slow Cooker Sausage and Sauerkraut recipe was created.  

Sausage and Sauerkraut Ingredients

This is a simple recipe that doesn’t require many ingredients.

  • 1 cup sauerkraut
  • 3 tablespoons brown sugar
  • 1 pound pork sausage cut up into 1-2 inch pieces
  • 1/2 onion sliced
  • 1/4 cup water

How to Make Slow Cooker Sausage and Sauerkraut

  1. In  a bowl combine the sauerkraut and brown sugar. Place this into slow cooker.
  2. Next arrange the sausage pieces and onion over the sauerkraut.
  3. Pour water on top.
  4. Cook on high for 2 hours, checking occasionally to make sure there is still water.
  5. Reduce to low and cook for 2 more hours.
  6. Serve over mashed potatoes or egg noodles

It’s funny how recipes that just came out of no where end up being your favorite.  This slow cooked Sausage and Sauerkraut dish was a huge hit at the dinner table leaving it a now favorite favorite meal.  The meat becomes so tender and juicy in the slow cooker and it picks up the spices of the brown sugar giving it a slight sweet taste.

What to serve with Sauerkraut and Sausage?

I served this on mashed potatoes which I would totally recommend but you could also serve over rice or noodles. This is my favorite mashed potatoes recipe if you’re looking for a new one.

Easy Cheesy Lasagna Skillet

Welcome to a new week, I hope you all had a lovely weekend.   

We have a new favorite dinner that we’ve been making almost bi-weekly now, it’s Easy Cheesy Lasagna Skillet.   Lasagna is hands down one of our favorite dinners, but sometimes you just don’t have the time to organize the layers and bake in the oven, this skillet is quick, cheesy and oh goodness is it delicious.    What makes this lasagna extra special?  Well besides the ricotta cheese which makes everything creamy, there’s Sweet Italian Sausage which I’m pretty  much in love with at the moment.  After I brown the sausage there’s a good 3 minute period where I just stand by the stove and eat it out of the pan.

Added into the lasagna is garden fresh spaghetti sauce, fresh basil, green peppers and some mushrooms.  In my opinion life is better when there is mushrooms and green peppers involved.  Lately, we’ve been putting them on our pizza too – what a great combo.

Easy Cheesy Lasagna Skillet

Ingredients

  • 12 lasagna noodles - broken in half
  • 1 pound sweet Italian sausage - out of their casings
  • 24 oz jar of spaghetti sauce
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 8 oz cut up mushrooms
  • 1 green pepper diced
  • handful of fresh basil

Instructions

  1. Brown sausage in skillet.
  2. Break lasagna noodles in half and cook as directed. Drain.
  3. When noodles are cooked add them to the skillet of browned sausage. Add in spaghetti sauce, ricotta cheese, 1 cup shredded mozzarella cheese, mushrooms and diced green pepper.
  4. Cook until melted and well heated, about 10 minutes on medium heat. Stir so ricotta is distributed evenly.
  5. Put remaining 1 cup mozzarella cheese on top, sprinkle fresh basil on top. Cover and cook until cheese is completely melted.
  6. Enjoy!

Cauliflower pizza casserole is born!

When I first found a great cauliflower pizza casserole recipe it called for pureed cauliflower, but pureeing cauliflower that we grew seemed like a absolute sin to me.  I can’t give so much energy and love to our garden cauliflower and then just blend it up, that would be the saddest thing ever.  If we were ever to sell produce commercially I would put on every single package a (cute) warning sign that says “YOU MAY NOT PUREE ME, IT WILL MAKE PAMELA VERY SAD, PLEASE LOVE CAULIFLOWER WHOLE.  THANK YOU VERY MUCH”.  So in my recipe, we cut it into small bite size pieces.  I prefer it this way as well as the cheese will get in all the nooks and crannies of the cauliflower.    And who doesn’t’ like cheese?    Especially with cauliflower.  This is a absolute win situation.

Cauliflower Pepperoni Pizza Casserole

Ingredients

  • 1 large cauliflower head - cut up into small bite size pieces
  • 4 tablespoons heavy cream
  • 1 tablespoon butter - melted
  • 2 cloves garlic - minced
  • 15 slices of pepperoni - quartered
  • 1/4 cup shredded mozzarella cheese

For on top of the casserole

  • 3/4 cup pizza sauce
  • 12 slices pepperoni
  • 1 cup shredded mozzarella cheese
  • fresh basil to garnish

Instructions

  1. Chop your clean cauliflower into small bite size pieces. Steam for 2 minutes, drain. Put into casserole dish.
  2. In a bowl mix your butter, heavy cream and garlic.
  3. Pour butter mixture over cauliflower.
  4. Add quartered pepperoni slices, 1/4 cup shredded mozzarella on top of your cauliflower.
  5. Mix everything up so cauliflower is coated.
  6. Spread your pizza sauce evenly on top of your cauliflower.
  7. Pour your 1 cup shredded mozzarella evenly on top.
  8. Put your sliced pepperoni on top.
  9. Cook at 375 degrees for 15 minutes.
  10. Garnish with basil when it comes out of the oven.
  11. Enjoy!
