You will be using most of the parsley (stems and leaves!) but you’ll want to cut off about 2 inches from the bottom so the recipe isn’t bitter tasting.  More stems = more bitter, so lose 2 inches from the bottom.  Keep the top section!

Besides the parsley you’ll need broth (chicken or vegetable), parmesan cheese, lemon juice and olive oil.

You’ll also need a pasta that’s going to soak up that great tasting parsley sauce.  I recommend rotini, rigatoni or ziti!

Add parsley, broth, lemon juice and olive oil to a food processor and give it a few pulses until creamy.

Now taste a spoonful of it! It’s delicious, isn’t it?

PARSLEY PARMESAN PASTA takes 15 minutes to make! This healthy meal using fresh parsley costs less than $4! Blend the parsley with other simple ingredients to make a nut free pesto sauce and then pour on top of pasta! It's delicious and easy to make!

Ingredients

  • 1 16 oz box rotini pasta
  • 1 bunch parsley
  • 1/4 cup chicken or vegetable broth
  • 1/2 cup olive oil
  • 1 tablespoon lemon juice
  • 1/2 cup parmesan cheese

Instructions

  1. Cook your pasta according to box in salted water.  Drain, put back in pot and set aside.

  2. Cut the bottom of the stems off the parsley bout 2 inches from the bottom, too much parsley stems and it might taste too bitter.  See blog post if you need more details.    Keep top section of parsley and put in food processor.

  3. Add broth, olive oil and lemon juice to food processor and pulse until creamy.

  4. Pour parsley sauce on top of pasta.  Add parmesan cheese and a sprinkle of salt for taste.  Stir until cheese is melted and pasta is coated in the parsley sauce.

  5. Enjoy!
