Summer Pasta Salad

Guys, it’s August 21st.  We’re in the 20’s already! Soon it will be September! September…already? Don’t get me wrong you know I love Fall, Halloween and everything that comes along with it but there will be a few memories I miss from Summer.  

Fresh Pasta Salad recipe that tastes just like Summer! Recipe ingredients include cherry tomatoes, radishes, green pepper, lettuce and mushrooms! This is perfect for a healthy dinner or picnic lunch.

It’s not over yet, but that doesn’t mean I can’t be dramatic and romantic about the sweltering garden days of picking tomatoes, weeding out the boxes and nurturing seedlings to grow big and strong.

 Healthy Pasta Salad

A basket full of harvest is one of the proudest things I could carry.   Seeing the fresh colors of red, green, yellow and more topple over the basket makes me a happy girl.  Although we’re picking tomatoes, lettuce, radishes and melons as the Summer continues, we’re also getting ready for the Fall garden.

Some plants have already been transplanted while others wait their turn downstairs for containers to be cleared away on the roof.   There seems to never be a empty day in the garden, there’s always something that needs to be transitioned and moved in or out.

Mushroom Pasta Salad

Mushroom is one of my favorite ingredients to add to a pasta salad! 

For this recipe here I’m really layering in freshness with cherry tomatoes, radishes, green pepper, lettuce and mushrooms! What a combo, right?

Summer Pasta Salad

Summer Pasta Salad recipe that uses fresh seasonal ingredients!  Recipe ingredients include cherry tomatoes, radishes, green pepper, lettuce and mushrooms!  This is perfect for a healthy dinner or picnic lunch. 
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time 15 minutes
serves 6

Ingredients

  • 12 oz penne pasta
  • 1 pint of cherry tomatoes halved
  • 1 green pepper chopped up
  • 3 radishes chopped up
  • 1 packed cup of lettuce chopped up
  • 1/2 sliced mushrooms
  • 1/2 cup Italian salad dressing
  • 1 tablespoon dried basil
  • 1 tablespoon dried oregano
  • 1/2 cup shredded mozzarella

Instructions

  • Prepare your pasta as directed. Drain.
  • Put your pasta in a big bowl.
  • Add your chopped vegetables, salad dressing and dried herbs.
  • Mix together so everything is coated in salad dressing.
  • Add in your mozzarella cheese, toss around.
  • Cover, put in fridge to chill.
  • Enjoy!

    Summer has been great! Built my first raised bed at my first house and am enjoying my first harvest. It has been so nice to eat fresh and am already looking forward to a fall harvest. Now that school has stared its nice to bring in a fresh lunch to remind me of summer.

    Well, I’m all confused about the end of summer because it’s actually the end of winter here in Australia but it’s so lovely right now that I’m sitting in the garden soaking up the rays. When I go back to the UK at the end of last month the weather will be starting to go wintery though, of course … I’ll have 2 winters in a row, one not at all wintery and the other …. well, yes, it’ll be wintery!
    Anyway, love the pasta! Love that you’ve added radishes and all those wonderful herbs … perfect for an end-of-summer lunch!

    Garden has done magnificent in Asheville, NC this summer. Tons of tomatoes, greasy beans, and okra. Greasy beans are native to this area. Saving some heirloom seeds. Will send some up your way if you like.

    Boom Boom… Bring it on, Summer cant come quick enough for me, it has been one long chilly winter. Absolutely cant wait to start eating all the amazing foods you have been suggesting…. AND being able to eat from my garden again, especially my tomatoes. YUM!

    I didn’t plant a garden this year, because I just didn’t have time, and I am sssssooooo missing summer tomatoes! Cold pasta salad is one of my favorite things too, so I’m sure you can imagine how much I wish I had this at my house!

    I am going deep sea for the next 6 weeks and I am definitely going to miss your wonderful fresh seasonal recipes but on the plus side it will be fall when I return and I will be able to see your fall garden in full flow 😀 Great looking salad unfortunately food on the ship is never this good….. or fresh!

    I can’t believe we are nearly to September. I am getting quite worried about my tomatoes. I have lots on my plants, but they haven’t turned ripe red. Our weather isn’t cooperating. I’d love to have this salad for dinner. I love all the veggies!

    This is one pretty and tasty looking pasta salad. Yum! We got our garden planted late this year due to moving. Our tomatoes should be ready in the next week or so, and we picked our first zucchini last night. Yay!

    How is it the end of August already?! We’ve had a great summer getting settled into our new house, doing landscaping projects and going to the pool. I’m trying to hang on to the last moments of summer. Although I’m ready for pumpkin season! 🙂
