These delicious, savory Mashed Potato Patties are crispy on the outside and soft and creamy on the inside. They’re the best way to use up your leftover mashed potatoes and make for a tasty side dish recipe!
It seems that whenever I make mashed potatoes, I always make way too much. No matter how much I’ve tried to calculate and estimate, at the end of the dinner, there’s always a leftover container filled with mashed potatoes. We could just eat them with tomorrow’s dinner, but day-old mashed potatoes aren’t quite as good as fresh.
There are a couple ways to get around this. You could freeze the mashed potatoes to enjoy with another meal. If you’ve got enough leftover potatoes, you could simply add the potatoes to a saucepan and add in milk and stir up a batch of potato soup. Or you could make everyone super duper happy and make some of these easy leftover mashed potato patties. Read More

Christmas Cookies to Make With Kids
With a 1 year old, I decided it was never too early to start creating baking memories so we decided to bake some Christmas cookies.
Yes, that’s right. You can bake with a 1 year old. My advise? Take a deep breath and go with the flow. Yes, there will be spills. Yes, there might be egg shells in the batter. Yes, she might wear the bowl on her head. But all of that is ok.

Easy to make fruit puree pouches – perfect for baby and toddler! My daughter is anemic, so I came up with this Spinach Sweet Potato Fruit Pouch recipe to give her more Iron Rich foods! She loves these!
Food for Anemic Toddlers
When we went to our 15 month old doctor’s appointment, we found out that Enceladus was anemic and that she needed more iron rich foods in her diet. She was drinking too much milk, which was causing iron not to be absorbed.
Iron Deficiency is fairly common with toddlers, especially when they drink a large amount of milk everyday. On average, doctors say toddlers shouldn’t have more than 24 ounces of milk, but even at 16 ounces of milk a day Enceladus was anemic.
Always being one to try to naturally cure things, I came up with this Spinach Sweet Potato Fruit Pouch, which helped her get her iron levels to where they needed to be!
Leafy dark greens are one of the best sources of iron, such as spinach or kale. If you wanted to substitute kale for spinach in this recipe, go for it! I find that spinach works for taste and in general, kids love it in fruit puree! Sweet Potatoes are a great iron rich food too, so that’s why I’m including both spinach and sweet potatoes!

Sweet Potato Baby Cookies
Can you believe Enceladus just turned 8 months? How time flies! With month 7 came her craving for finger food! No Mom, she doesn’t want to be fed with a spoon, she wants to feed herself!
I admit, it does get a little messy when she feeds herself but it’s lots of fun to watch! And honestly, nothing warms my heart more than to know she loves Mama’s cooking (she’s a big fan of my dairy free mashed potatoes too!).
Life has been filled with happy moments of “first foods”. The first pureed baby food, the first sticky time she ate watermelon, the slippery first time she ate avocado, the sour face lemon taste, the happy face of tasting jam on toast, etc. Sweet potatoes have been a favorite of hers for a few months, but I had to figure out a way to serve them in a way that she could feed herself since she prefers finger foods over purees nowadays.
Baby Led Weaning Cookies Recipe
I felt like her breakfast choices were lacking so I got to thinking in how I could incorporate sweet potatoes in breakfast or a snack. I came up with these soft and yummy Sweet Potato Banana Cookies, perfect for baby led weaning eating adventures!
