Pumpkin Dinner Rolls

I’m obsessed with Pumpkin Dinner Rolls! If you follow me on social media you might know I have a thing for baking bread. This past summer I started to get really into it, especially sourdough bread and slow cooker bread. I keep my sourdough starter in the fridge, bringing it out weekly to feed and bake something delicious with it.

With so many garden pumpkins on the counter, I made a big batch of fresh pumpkin purée to freeze for later use. Craving some pumpkin bread, I came up with these soft and fluffy sourdough pumpkin dinner rolls.

I love them because they’re so super easy and this one with the swirl of cinnamon-sugar and topped with even more is absolutely heavenly. A thick slab of it is fabulous with coffee, tea, or hot cocoa as a morning breakfast treat, but it also makes a special afternoon snack.

Jalapeno Buttermilk Biscuits

DELICIOUS easy to make Jalapeno Buttermilk Biscuits recipe!  Recipe includes step by step pictures!  These Southern style homemade biscuits are made from scratch with diced up jalapeno peppers.  They are best served with a warm comfort food casserole!

Want to know a true story?  I made these buttermilk biscuits twice.  In one week.  I nearly ate them all.  I’m thinking about making them again.   Right now.

The Best Buttermilk Biscuits!

These buttermilk biscuits are what magical bread dreams (we all have them, right?) are about.  They’re flaky, they’re moist, they’re full of flavor and you just can’t get enough of them.   More specifically these are buttermilk biscuits which makes them ultra deluxe and ultra moist.   Like my gif shows, buttermilk makes everything better, don’t you agree?

Jalapeno Buttermilk Biscuits

These biscuits also have jalapeno peppers in it for a slight bite of heat.  The jalapenos are a great balance for that buttermilk giving it a little something special.  I chop the jalapenos up pretty fine so they’re evenly distributed and not overwhelming.   Between these biscuits and candied jalapenos I’m eating quite a bunch of jalapenos this Summer!

This Sugar Glazed CUCUMBER Bread is amazing and super moist! It tastes just like zucchini bread, but it's made with 1 cup grated cucumber. The healthy recipe is easy to make and is a great way to eat your vegetables! A powdered sugar glaze is poured on top once baked! Everyone in my family LOVES it!

This weekend there were many surprises in the garden. The monster pumpkin plant just won’t stop growing.  There was pounds of potatoes waiting for us under the soil.   Carrots were pulled.   Jalapeno peppers were picked.   Cucumbers were spotted.

These are all vegetables I was hoping for, but maybe in a few weeks…. but in typical garden fashion, they make their own rules and showed up to the party early.  I couldn’t have been more happy to see them!

I saw a few baby cucumbers growing on the vine last weekend but somehow those babies transformed to multiple large cucumbers in just a few days, ready to be picked and enjoyed.    My Half Sour Pickle recipe and Cucumber Tomato Salad is a favorite way to use cucumbers, but I was trying to figure out how to bake with them.

Baking with Cucumbers!

This Sugar Glazed Cucumber Bread was created because of that!  This bread is similar to Zucchini Bread, but instead is made with grated cucumbers.  After the bread cools, a delicious powdered sugar glaze is poured on top to make it really special.    This is our new breakfast recipe that I’ll be making weekly until the cucumbers finish in the garden.

This is one of my family’s favorite cucumber recipes – perfect for Mom and Dad, but also perfect for toddlers and kids! Even my 1 year old loves a piece of this for breakfast in the morning!

Now let’s get baking!

Flaky KFC Biscuits

Copycat KFC Flaky Biscuits recipe.   These buttery rolls are so easy to make!

What is the best thing to serve with soup? Oh, you got it right Sista.  It’s biscuits.  I like my biscuits flaky.  I like them warm. I like a little butter on top.  I love when they crumble apart.  I also love to give them a little dive into the soup bowl. When I was little my mom worked at KFC (that’s Kentucky Fried Chicken if you didn’t know).  I’m not going to lie, I love that place.  Their biscuits, their mashed potatoes – hello big bucket of goodness.

I’m pretty sure this is illegal to the KFC conduct codebook but my mom would sometimes sneak me a extra biscuit.  That’s when I knew I was a good girl that day.  Off I went with a smile and my 2 warm biscuits.  What I loved about theirs was how flaky yet soft their biscuits were. They didn’t taste “bready” or heavy. They were light but delicious.

Course Side Dish
Servings 12

Ingredients

  • 2 cups flour
  • 2 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 cup butter cold
  • 3/4 cup buttermilk

Instructions

  1. *It's very important that you use chilled butter for this, that will make sure the biscuits are flaky. You can refrigerate or freeze the butter, don't use room temperature or melted butter.*
  2. Preheat oven to 400 degrees.
  3. In a bowl mix flour, baking powder, baking soda, salt and sugar.
  4. Slowly start to cut butter in the flour mixture. You can either grate the butter or I use a knife to cut into small pieces. Keep cutting butter in until it's all gone. You want the mixture to look like crumbs.
  5. Mix in buttermilk.
  6. Knead dough in bowl for 30 seconds.
  7. Transfer to a greased baking sheet and roll out with your hands into a 7x7 piece. With a knife, cut 12 sections but don't don't cut all the way or separate them. This will make them easy to rip apart when done.
  8. Bake 15 minutes.
  9. When out of the oven, cut into sections and serve hot.

Recipe Notes

Makes 12 biscuits.

EASY Chocolate Chip Carrot Bread recipe! This homemade loaf uses fresh carrots and takes 1 hour to bake! The bread tastes just like cake – it’s so moist! This is one of my BEST carrot recipes! Serve for breakfast, dessert or snack!

There’s something magical about a warm piece of homemade carrot bread, isn’t there?  Maybe it’s the love that goes into making it.  Maybe it’s the smell of cinnamon, nutmeg and clove that fills your kitchen.  Maybe it’s the feeling of Fall being around the corner.  Or maybe it’s just the great feeling of knowing there’s a bunch of vegetables in this bread and that makes it healthy, right?  I love this carrot bread recipe!

EASY recipe for CHOCOLATE CHIP CARROT BREAD! This homemade loaf uses fresh carrots and takes 1 hour to bake! The bread tastes just like cake - it's so moist! This is one of my BEST carrot recipes! Serve for breakfast, dessert or snack!

With a whole bunch of carrots just picked from the garden and a whole bed of seeds just planted I’m stocked with carrots.  We’ve been eating some processed junk for dessert lately so I was on the mission to bake something delicious that could use our batch of just picked vegetables.  My mind immediately went to the carrots, what could I make?

What’s your favorite carrot dessert?

There’s carrot cake, carrot cake cupcakes but I wanted something a little more savory without the frosting on top, so carrot bread was what I started daydreaming about.

Moist Jalapeno Cornbread

EASY, MOIST Jalapeno Cornbread! This Southern recipe uses buttermilk to make the cornbread extra soft! The Jalapenos give it a little Mexican taste! I always serve homemade cornbread with dinner casseroles!

Cornbread.   I love you.

Jalapeno Cornbread, I especially love you.

I love how moist you are. I love how brown your edges stay.  I love the kick of the jalepenos.

EASY, MOIST Jalapeno Cornbread! This Southern recipe uses buttermilk to make the cornbread extra soft! The Jalapenos give it a little Mexican taste! I always serve homemade cornbread with dinner casseroles!

Cornbread is such a comfort food.  It’s always a dinner favorite on the side to soak up the juices, gravy or just devour by itself.  When I found myself craving some cornbread to go along with BBQ ribs I whipped up this recipe.  This cornbread is a winner, and for those that love a spicy kick you will love it.  This recipe uses 3 tablespoons of diced jalapeno peppers which makes it spicy enough to give it that extra pop, but not too hot that you can’t eat 6 pieces of cornbread in a row.  That’s real talk y’all.

Buttermilk Cornbread

This recipe asks for 1 cup of buttermilk which makes it as soft as a cloud.  I didn’t have buttermilk but I learned how to make some quickly with ingredients you have in your kitchen.  For 1 cup of buttermilk you need 1 cup of milk + 1 tablespoon lemon juice.  That’s it!   Place your tablespoon of lemon juice in a 1 cup measuring cup.  Add your milk to fill up to the 1 cup mark.  Then let stand for 5 minutes, you will see it will start to thicken up.  Boom, buttermilk! It’s that easy!

Next time you’re looking for a quick cornbread, look away from your usual box mix and make some homemade cornbread.  It’s well worth it.
