I’m obsessed with Pumpkin Dinner Rolls! If you follow me on social media you might know I have a thing for baking bread. This past summer I started to get really into it, especially sourdough bread and slow cooker bread. I keep my sourdough starter in the fridge, bringing it out weekly to feed and bake something delicious with it.
With so many garden pumpkins on the counter, I made a big batch of fresh pumpkin purée to freeze for later use. Craving some pumpkin bread, I came up with these soft and fluffy sourdough pumpkin dinner rolls.

These buttermilk biscuits are what magical bread dreams (we all have them, right?) are about. They’re flaky, they’re moist, they’re full of flavor and you just can’t get enough of them. More specifically these are buttermilk biscuits which makes them ultra deluxe and ultra moist. Like my gif shows, buttermilk makes everything better, don’t you agree?
These biscuits also have jalapeno peppers in it for a slight bite of heat. The jalapenos are a great balance for that buttermilk giving it a little something special. I chop the jalapenos up pretty fine so they’re evenly distributed and not overwhelming. Between these biscuits and candied jalapenos I’m eating quite a bunch of jalapenos this Summer!

Let’s get the facts out of the way, this bread is made in your slow cooker crockpot on HIGH in 2 hours. It’s a extremely simple recipe with basic ingredients that produces delicious, soft bread. It takes about 40 minutes to prep, with 30 of those minutes dedicated to just letting your dough double in size.
Here’s a 30 minute before and after. I like to leave my dough somewhere warm while rising.

What is the best thing to serve with soup? Oh, you got it right Sista. It’s biscuits. I like my biscuits flaky. I like them warm. I like a little butter on top. I love when they crumble apart. I also love to give them a little dive into the soup bowl. When I was little my mom worked at KFC (that’s Kentucky Fried Chicken if you didn’t know). I’m not going to lie, I love that place. Their biscuits, their mashed potatoes – hello big bucket of goodness.
I’m pretty sure this is illegal to the KFC conduct codebook but my mom would sometimes sneak me a extra biscuit. That’s when I knew I was a good girl that day. Off I went with a smile and my 2 warm biscuits. What I loved about theirs was how flaky yet soft their biscuits were. They didn’t taste “bready” or heavy. They were light but delicious.

Whenever someone tries one of these biscuits, they’re like “This tastes like…” and I’m like, *hold a hand up*, “I know, enjoy”. I love making these biscuits for soup or Sunday dinner (amazing with mashed potatoes and gravy). There’s never a biscuit left on the dinner table.

2 1/2teaspoonbaking powder
*It's very important that you use chilled butter for this, that will make sure the biscuits are flaky. You can refrigerate or freeze the butter, don't use room temperature or melted butter.*
Preheat oven to 400 degrees.
In a bowl mix flour, baking powder, baking soda, salt and sugar.
Slowly start to cut butter in the flour mixture. You can either grate the butter or I use a knife to cut into small pieces. Keep cutting butter in until it's all gone. You want the mixture to look like crumbs.
Mix in buttermilk.
Knead dough in bowl for 30 seconds.
Transfer to a greased baking sheet and roll out with your hands into a 7x7 piece. With a knife, cut 12 sections but don't don't cut all the way or separate them. This will make them easy to rip apart when done.
Bake 15 minutes.
When out of the oven, cut into sections and serve hot.

Cornbread is such a comfort food. It’s always a dinner favorite on the side to soak up the juices, gravy or just devour by itself. When I found myself craving some cornbread to go along with BBQ ribs I whipped up this recipe. This cornbread is a winner, and for those that love a spicy kick you will love it. This recipe uses 3 tablespoons of diced jalapeno peppers which makes it spicy enough to give it that extra pop, but not too hot that you can’t eat 6 pieces of cornbread in a row. That’s real talk y’all.
This recipe asks for 1 cup of buttermilk which makes it as soft as a cloud. I didn’t have buttermilk but I learned how to make some quickly with ingredients you have in your kitchen. For 1 cup of buttermilk you need 1 cup of milk + 1 tablespoon lemon juice. That’s it! Place your tablespoon of lemon juice in a 1 cup measuring cup. Add your milk to fill up to the 1 cup mark. Then let stand for 5 minutes, you will see it will start to thicken up. Boom, buttermilk! It’s that easy!
Next time you’re looking for a quick cornbread, look away from your usual box mix and make some homemade cornbread. It’s well worth it.

In a bowl whisk together butter and sugar. Add in eggs, buttermilk and baking soda. Stir to combine.
Add flour, cornmeal, jalapeno peppers and salt. Continue to stir to combine.
Spray a 8x8 pan with non stick spray. Pour cornbread mixture into pan.
Bake for 35 minutes.
Let cool for 20 minutes then cut into slices.
