Haluski is a popular Eastern European dish, especially in Poland, that is quick and easy to make. A big bowl of noodles and vegetables is sure to please your entire Family at dinnertime. Enjoy this delicious Haluski recipe passed on to me by my Polish grandmother!
During the 1800’s women in Europe had an average of six children during their lives, with many families having more than that. Many of these families from Eastern Europe were poor and needed a simple and cheap dish that could feed the entire family (and keep them full). One of their favorite dishes that Polish Grandmothers (babcia!) and Mothers made was haluski.
Haluski is a dish that my mother would make as a kid very often. It’s no surprise that her mother came from Poland so this was a hand me down recipe. The dish is essentially a easy noodles and cabbage dish that is made in about 15 minutes. If you calculate the ingredients, you’ll see that it’s about a $5 meal and can serve 6-8 people. This makes a very bargain friendly dish that is delicious too. Don’t you love that?
In Poland, haluski is commonly made with dumplings, but since the years passed most people now make it with egg noodles. The other key ingredient is green cabbage. This is meant to be a simple dish but if you want to add in some other vegetables (I always add in carrots) or ground beef (my mom would always do that) then go for it!
If you want to indulge in some creaminess on this dish, then throw a nice sized drop of sour cream on top of your haluski. Now mix it around. Oh yeah, isn’t that perfection?
So next time you’re trying to decide what to have for dinner? Think of haluski. It’s a meal your entire family will love! If there’s leftovers, even better. Just throw it in the microwave for 1-2 minutes the next day and the noodles boost right up. I had this for lunch a few times last week, I cant get enough!
Haluski AKA Polish Cabbage and Noodles
- 1 (16 ounce) package of No Yolks Extra Broad Noodles
- 1/2 cup butter
- 1 medium head cabbage chopped
- 1 onion, chopped
- 1 cup carrots, chopped
- salt + pepper to taste
- sour cream (optional)
- Cook noodles according to package.
- Heat butter in large skillet or pan, add cabbage, onion and carrots and cook for 10 minutes or until vegetables are tender.
- Add noodles to pan, stir so combined with the vegetable and butter mixture.
- Season with salt and pepper, serve warm.
- Add a scoop of sour cream on top if desired.
