My solar stove of choice is the GoSun because it works great, is super light (ol “weak arms Pamela” can easily carry it) and looks pretty slick. With us spending weekends up on the land with no electricity we rely on campfires and this solar stove to keep us fed. I started using the GoSun a few weeks ago where I easily threw all the ingredients for a cheesy pepper egg omelette into the stove, came back 20 minutes later and breakfast was served. I love this because time is valuable in the garden so I can just walk away from the solar stove and let it cook while I’m playing in the dirt.

The tweak I made to these is first I made them full size, so they’re hearty enough for breakfast. I also added some high quality white chocolate chips to really give each bite a sweet balance with the bananas.
The banana taste is there, but it’s not super strong. I shared these with my banana bread loving friend and my not so much banana loving Matthew and both of them loved them so much they ate multiples. They’re a winner across the board.

Preheat your oven to 350 degrees.
Spray your muffin pan with nonstick spray.
In a bowl mix flour, baking soda, baking powder and salt.
In another bowl mix bananas, sugar, butter and egg until smooth.
Add flour mixture into banana mixture and continue to mix so everything is combined.
Add chocolate chips and stir with spoon to evenly distribute.
Spoon this into the muffin pan, filling each muffin spot 3/4 full.
Bake for 18-22 minutes or until the sides of your muffins are slightly brown.

Preheat oven to 400 degrees.
Grease your muffin cup holder.
In a bowl stir together flour, sugars, baking powder and salt.
In a separate bowl stir together milk, butter, eggs, vanilla, lemon juice and vegetable oil.
Add wet mixture into dry mixture and stir until combined.
Add in chocolate chips and gently mix to equally distribute them.
Spoon batter into muffin cups, filling them 2/3 of the way.
Bake for 13-15 minutes or until slightly browned on the sides.

I’ve been hearing alot about Monkey Bread on all the blogs but I never really knew what Monkey Bread was. When I first heard of it I was expecting something that looked like a monkey, but I didn’t see anything that looked like a primate. Ok what about about the name? Most of my results were helpless, but here’s what I could put together.
There is a African tree called the Monkey Bread tree that has an exceedingly thick trunk and an edible pulp. Some people think that Monkey Bread is named after the tree as it slightly resembles it. Squint, do you see a hot baked good?
Some people believe Monkey Bread gets its name from monkeys. When eating monkey bread, people usually tear it apart with their fingers, much like how monkeys eat. Note: This is a pretty accurate expression of how I look when I eat monkey bread, pure happiness.
So did I solve where the name comes from? Probably not, but I tried!

So with hearing all about Monkey Bread, I was on the mission to make it for the first time! I gathered all the supplies, got my apron on, looked at some pictures and then realized they were all made with bundt cake pans, which I don’t have. I shook my fist to the ceiling, slumped to the floor and sighed. And then like Aaliyah sung, I dusted myself off and tried again, because I thought – what about Monkey Bread Muffins?
This rules for many reasons, but most being that I can physically tell myself only to eat one. With a entire cake, I can slide the knife and make a slice really big, but with individual servings, there’s really no excuse for my behavior when I am throwing 4 of them in my mouth. And within one bite of the first one I realized this was a fantastic idea because my life has been changed forever and I would love to eat 4 of these at once.
So to summarize I have no idea where the word Monkey Bread comes from, but I’m in love with Monkey Bread Muffins.
How to make Monkey Bread Muffins
Here is your biscuits. I know it says on the package never to eat the raw dough but does anyone ever listen to this? To be honest I just realized last year it said this.
Spray your muffin sheet. Spray it good, bottom and sides. Then pour in your butter and brown sugar mixture.
Rip each biscuit into 6 pieces, you don’t have to be exact with sizes, just make them about even.
Get your cinnamon sugar mixture in a bag. Then put the ripped up biscuits inside and shake to coat evenly.
Then start to fill each muffin cup up with about 8-10 pieces. Into the oven it goes..
And out of the oven comes this magic!
Now here’s the scary part. We need to flip these upside down. I know, you’re already scared, trust me I was too. I thought about this in my head about 6x since I read multiple reviews that said they would fall apart. That’s why it’s really important you spray your muffin sheet good with nonstick spray.
So you turn your muffin cup sheet upside down. Take a minute to breathe. Take a minute to hope. Then slowly lift the muffin sheet up…
Yes! Perfect! None fell apart. I grabbed Essy the cat and danced with her. She rumbled her belly so I put her down. Goodness gracious. I’m not sure I can say more. I think I’m just going to say that a few more times.

2cans of 7.5 oz Pillsbury refrigerated biscuitsor other brand
1/2cupbutter - melted
2 1/2teaspoonsground cinnamon
Preheat your oven to 350 degrees.
Spray a dozen muffin cup sheet with nonstick spray.
Mix melted butter and brown sugar together in small bowl, spoon 1 tablespoon into each muffin cup.
Mix white sugar and cinnamon in a plastic bag.
Take each biscuit and rip it up into 6 pieces. Put the biscuit pieces in bag and shake to coat evenly.
Place 8-10 pieces of biscuits into each muffin cup to evenly fill them up. If you have any sugar left in the bag, sprinkle on top of the muffins.
Bake for 12-14 minutes.
Remove from oven and let cool for 1 minute.
Turn upside down, the muffins should fall right out.

These mini muffins are extremely moist. I was blown away by how soft they were inside. They have a banana taste to them, but it’s not overwhelming, although it’s still there. My husband who doesn’t like bananas at all kept saying “I don’t like bananas, but these are really good”. See, they win non banana lovers over too!
I baked these and took them to a house warming party and they were all gone within an hour! They were a big hit!
Let’s get baking and get started with this banana muffin recipe!
Here’s your bowl of flour, baking soda, baking powder and salt. Mix around.
Take your mushy bananas, you probably won’t even need to mash them if they’re super soft. Mine were.
For this recipe you only need half an egg, so I break it apart with my fingers.
Add your other ingredients to the bananas..
Mix bananas, sugar, butter, and egg until smooth.
Then add your flour mixture.
And keep stirring until it’s all combined.
Spray your mini muffin pan with some nonstick spray.
Spoon your banana mix into your muffin pan. Try to distribute it evenly.
Now we want to start to build the crumble. This crumble isn’t your typical crumble as it “melts” onto your muffin for a full impact of taste! Combine flour, cinnamon and brown sugar.
Then add your butter and combine it all.
Sprinkle a little bit of the crumble mixture onto each mini muffin.
Can’t you wait? I can’t!
How long does it take to bake mini banana muffins?
Bake for 10-13 minutes. Mine took 11, keep a eye on them. When their sides are brown (you can see on the edges of each muffin in the pan) they’re good to go.
And when they come out, holy moly. The smell of banana and cinnamon will take over. I can’t wait for you to taste them!
Let them cool for a few minutes, they will be easy to take out of the muffin pan when cool.
