Bread Machine Italian Bread recipe. These easy step by step instructions show how to make crusty Italian bread in your machine. I make this homemade bread weekly for family!
Italian Bread Recipe For Bread Machine
One of the main reasons why I got a bread machine was because I found myself stopping at the local general store twice a week to pick up a Italian loaf. One of my first recipe goals was to make a Italian Bread that my family would love served with dinner. This bread is now made weekly in my kitchen!

Bread Machine Recipes
If you’re new to the bread machine world you’ll want to first read the manual that came with it. Not only will the manual give you some basic recipes, but it’ll also talk about the order you should add your ingredients into the pan.
This is a important step that shouldn’t be overlooked, so please follow your bread machines ordering for the best possible bread. Most likely the order will look something like this:
- Water (Liquids)
- Flour
- Sugar
- Dry Milk (note: you don’t need milk for this recipe)
- Salt
- Butter / Oils
- Yeast
It’s important to add them in the right order as it will affect the bread quality when it’s kneading it.
I have a Zojirushi BB-SSC10 bread maker which makes 1 pound loaf sizes, perfect for my family.
If you are looking for something a little larger check out Cuisinart 2 pound bread maker. If you aren’t sure what bread maker to get, check out my bread machine guide.
Italian Bread Ingredients
Here’s the ingredients you’ll need to make this Italian Bread. The ingredients are so basic you probably already have everything in your pantry.
- water
- bread flour
- sugar
- salt
- olive oil
- active dry yeast
How to Make Homemade Bread
Time to make Italian Bread! Grab your bread machine and plug it in. Bread machines take on average 3 hours to make bread from beginning to end. The only work you’ll do is in the first 5 minutes!
Add your cold water to the bread pan. Cold water is important for this bread, so don’t use warm water.
Now add your bread flour.
Everyone has their favorite bread flour but in my opinion they aren’t all created equally. I stick with King Arthur or Bob’s Red Mill, I’ll buy whichever one is on sale at the grocery store.
Next, add your sugar. You only need 1 tablespoon.
And now your salt..
And now 1 tablespoon of olive oil.
Finally add your dry active yeast on top.
Now place your bread pan into the machine and close the lid. If your machine has a Italian bread setting, choose that.
If it doesn’t, just select the basic bread option. Now press start.
Now the bread will start the process of rising, kneading, rising some more and finally baking.
Here’s how it looks in the kneading process in the very beginning.
And this is after it has risen.
And this how it looks when it’s fully baked. Beautiful, isn’t it?
When it’s done baking your machine will probably let out a fun little jingle. Do a little dance because you just made delicious Italian Bread! (Want to know something really crazy? While I was typing the last line my loaf of bread finished and it started playing the jingle! How’s that for perfect timing? Now I’m worried that my bread machine is watching me!).
After it’s finished baking, your machine will most likely turn on warm mode to keep it warm. You can keep it like this, or if you’re impatient like me you’ll take it out of the machine (careful: it’s hot!) and then remove the bread from the pan. No matter how many times I bake bread I’m always amazed by how easily it slides out of the pan!
Now it’s time to cut a slice of this bread and enjoy! I love my Italian bread with a little bit of butter, or raspberry jam if I’m looking for a treat!

This bread is perception. The taste, and consistency, mild and fluffy with just the right golden crisp crust, beats all my other bread recipies! I thought I had a problem when after two hours I realized nothing was happening in tbe machine. For some reason my kneeder was nit turning. So, I transfered it to my secondary (hand me down)machine (I have 2 breadmackers so I can make a loaf for my family and share a loaf with friends). I was worried about the dry and wet ingredients being plopped in together and my poked hole with yeast in it having collapsed, but it did not matter. The bread turned out divine. Also, I took apart my broken breadmacker to reveal an old, dried out and broken belt. The replacement is only $6. Glad I took the time to investigate rather than trash it. So great experience and thanks for the recipe. It’s a no fail!

2 nd one I doubled the Recipe and it turned out perfect! I used vegetable oil not olive. Delish!
Patricia Thome says
This is by far the best white bread recipe that I have made. My kids love it for once. I notice that to make a 2 lb loaf basically it just says to double the ingredients. Is that correct? Thank you!
Pamela Reed says
Thanks Patricia! Yup, that’s right.
Sheryl says
Love love this recipe. Made it multiple times and it NEVER lasts 😊. I have a question..if I want to make it with fresh grated Romano cheese, how much should I increase liquids by?
Delba says

Michelle says
I haven’t made it yet, but can I use king Arthur all purpose flour instead of bread flour
Candace Hall says
To make a 2 lb. Loaf, do I just double the recipe?
Pamela says
Yup, just double the recipe! Lots of people in the comments have made a 2 pound loaf and turned out great. Enjoy!
Cheryl says
This was AWESOME! THE BEST BREAD I’VE EVER MADE
Pamela says
Thanks Cheryl, so happy you liked it! 🙂

I have to say, this was the best tasting, texture bread I have made in my bread machine. I’ve mad some good bread over the years in my 1990 Welbilt, The Bread Machine. But this was the best. I used your order of ingredients (which is opposite from Mfg. directions) Cold water ( I had been using room temp. water) and only one tsp. yeast (usually use 2)
It’s fun to get such good results with some twists from my usual steps.
Thanks!

Thank you so much for this recipe. We also have bought loaf after loaf at the grocery store. However my husband and I are both diabetic and the store loaf is so big we overeat. This loaf is the perfect size. A couple of slices for each of us and it’s gone. Also, I have a special needs son who doesn’t eat a lot of things but he just came and asked me to make bread again (third time this week). Thanks again

10/10, I went through the comments and did the 1.75 measurements and baked on the French Bread setting and it was light but also dense, fluffy and chewy (in the best way). I will make this bread again and again thank you!
Sophie says
This recipe is the best, I’ve ltried many. In bread machine and oven not successful. I will make again very simple recipe to use. The family enjoyed it.
Rhonda says
This is the first bread machine recipe I used that didn’t come with my machine. It worked perfectly! Everyone loved the italian bread. Thanks so much!
Christine says
I love the bread. So tasty! But. My machine makes only 1/2 lb and 2 lb loaves and this one comes out only about 3 inches tall. But perfectly formed. Do you have suggestions for a 1 1/2 lb loaf??
Denise Kelly says
What size loaf does this recipe make ? I’m assuming by the small amount of flour a 1 lb. All my machine recipes say the pound size of the loaf to cook . Maybe you can help me here ?
Pamela says
Hi Denise, this makes a 1 pound loaf. Hope that helps!
KimberlyDW says
This has been my go to, everyday white bread since I found your recipe over a year ago. Everyone loves this one and so easy. I use the 1lb, light crust, “quick Italian” setting. Perfect every time.
Becky Williams says
If you use the regular bake setting, which is 3::40 mins, do you remove the bread at 3 hours. I have Zojirushi BB-HAC10 model with no Italian setting.
MarieB says
I made this recipe it came out really deformed, it tasted good but would not serve it. Help!!!
Rosalind Wiechart says

Tap the hoverscale for 2lb loaf! It is a 12 serving loaf and I baked it in my Hamilton Beach bread machine. . Sometimes hoverscale is stubborn but recipe is as follows:
1.13 cups water
3 cups bread flour
1.5 tablespoons sugar
1.5 teaspoons salt
1.5 tablspoons olive oil
1.5 teaspoons active dry yeast

Have to make a double batch because the small loaf disappears so fast.

I am sure this bread is delicious but it is not Italian Bread. The crumb in Italian bread is not like this.
