Flaky KFC Biscuits

What is the best thing to serve with soup? Oh, you got it right Sista.  It’s biscuits.  I like my biscuits flaky.  I like them warm. I like a little butter on top.  I love when they crumble apart.  I also love to give them a little dive into the soup bowl. When I was little my mom worked at KFC (that’s Kentucky Fried Chicken if you didn’t know).  I’m not going to lie, I love that place.  Their biscuits, their mashed potatoes – hello big bucket of goodness.

I’m pretty sure this is illegal to the KFC conduct codebook but my mom would sometimes sneak me a extra biscuit.  That’s when I knew I was a good girl that day.  Off I went with a smile and my 2 warm biscuits.  What I loved about theirs was how flaky yet soft their biscuits were. They didn’t taste “bready” or heavy. They were light but delicious.

KFC Biscuits Recipe

Whenever someone tries one of these biscuits, they’re like “This tastes like…” and I’m like, *hold a hand up*, “I know, enjoy”.   I love making these biscuits for soup or Sunday dinner (amazing with mashed potatoes and gravy).  There’s never a biscuit left on the dinner table.

KFC Flaky Biscuits

Copycat KFC Flaky Biscuits recipe.   These buttery rolls are so easy to make!

Ingredients

  • 2 cups flour
  • 2 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 cup butter cold
  • 3/4 cup buttermilk

Instructions

  • *It's very important that you use chilled butter for this, that will make sure the biscuits are flaky. You can refrigerate or freeze the butter, don't use room temperature or melted butter.*
  • Preheat oven to 400 degrees.
  • In a bowl mix flour, baking powder, baking soda, salt and sugar.
  • Slowly start to cut butter in the flour mixture. You can either grate the butter or I use a knife to cut into small pieces. Keep cutting butter in until it's all gone. You want the mixture to look like crumbs.
  • Mix in buttermilk.
  • Knead dough in bowl for 30 seconds.
  • Transfer to a greased baking sheet and roll out with your hands into a 7x7 piece. With a knife, cut 12 sections but don't don't cut all the way or separate them. This will make them easy to rip apart when done.
  • Bake 15 minutes.
  • When out of the oven, cut into sections and serve hot.

Makes 12 biscuits.

    The recipe has a small error. It says to add the butter to the milk (I think that should say mix). I am a more experienced cook, so I caught it right away. Someone just beginning to cook or does not have a lot of cooking knowledge would probably get confused by this error. Can it be fixed? Thanks Donna Y.

    Oh gosh, I’m sorry you both got sick!! My sister got hit really bad after Christmas – no fun!

    when my kids were little, we had soup and sandwich combos, and never the two shall ever, ever meet. Tomato and grilled cheese, and chicken noodle and peanut butter (no jelly). Always the same. Our favorite soups now are baked potato soup at Houlihan’s, clam chowder on the dock in Skagway Alaska, and homemade veggie soup at home. All comfort food. And I like your biscuits too, with honey. Oh yum.

    I love the view from your window – such a contrast to my own view. I never bother with the flu shot as I know so many people who have had it and they end up more sick than the rest of us. I’m so glad you had a night out at Aladdin – that must have been incredible. I’ve never tried this kind of a biscuit but I agree, they would be perfect with soup.     Geez, really really sorry about the flu—-and the tickets, OMG. I am so glad you made that. When I am sick I want Chinese egg flower or Won Ton soup. I guess it’s a version of chicken soup. Living on the West Coast—Asian food is our thing/our norm almost. That’s is a pretty flaky looking biscuit I will say!

    Hello, Pamela! Thank so much for your recent visit to my ‘place’! I’ve just come down with some nasty bug myself so I can totally relate. Soup is on the menu for dinner tonight here as it’s the only thing that sounds good to me right now. I’ve never tried those Slow Kettle soups but will put them on the shopping list! If I have the energy, I’ll try making some of those fantastic-looking biscuits.
