How to Make Tomato Rice Soup
Pop-out to your garden and grab some fresh tomatoes! There’s nothing like fresh tomato rice soup. If you don’t have access to tomatoes, store-bought tomatoes will work just fine.
To make this deliciously comforting soup, you’ll need:
- Olive oil
- Minced garlic
- Celery stalks
- White rice
- Fresh tomatoes
- Chicken broth (you can use vegetable broth if you prefer)
- Salt and pepper
- Fresh basil
Once you have your ingredients together, you’re ready to start cooking!
First, heat up olive oil in a large pot (I love this soup pot!). Once heated, add garlic, chopped onion, celery, and carrot, and cook until the garlic is fragrant and the vegetables soften.
Add uncooked rice, tomatoes, chicken broth, and a sprinkle of salt and pepper to taste.
Bring to a boil and then reduce heat, cover and simmer until rice is fully cooked.
Stir in basil, and then serve.
Don’t have fresh tomatoes? You can use (2) 15 oz cans of diced canned tomatoes.
Don’t want to use white rice? You can use brown rice or even orzo pasta instead.
We prefer it chunky, but if you want it more smooth, use an immersion blender or regular blender to blend until desired creaminess. You can even add a little bit of cream if you want!
Need it to be more hearty or do you want to up the protein content? You can add shredded leftover chicken, shrimp, or scallops to this recipe.
You can customize this soup to your liking! Serving it just how it is in this recipe, add additional veggies and protein sources, or swap white rice out for a different type of rice!
Should I Cook Rice Before Putting It in Soup?
No, use uncooked rice for this soup recipe. By cooking the rice in the soup it will soak up the yummy tomato flavor! Cooking the rice before will just add an unnecessary step to your process. Instead, just toss it in.
What to Serve With Tomato Rice Soup
Tomato rice soup is great on its own, or served as a side dish. A great way to enjoy a warm cup of tomato rice soup is to serve it alongside a grilled cheese sandwich! You can enjoy this soup and a grilled cheese for a comforting lunch or dinner! But be careful, it’s all you’ll want to eat for the next week!
How to Store Tomato Rice Soup
If you find yourself with some leftovers, you can store them in an airtight container in the fridge to enjoy the next day or up to 5 days later.
Can You Freeze Tomato Rice Soup?
Absolutely! This hearty soup has such a short cooking time, making it easy to meal prep in large batches to freeze and keep for the coming weeks—or even months! Allow the soup to cool before placing in freezer bags or freezer safe containers.
Once you’re ready to enjoy your soup, just pull it out of the freezer, defrost overnight in the refrigerator or in the microwave. Now toss it in a pot to heat up, and enjoy! This will save you tons of time and make serving dinner on those busy weeknights a breeze!
This tomato soup is the perfect recipe for picky kids too. What kid doesn’t love tomato soup and grilled cheese? And the best part is you can feel good about serving it because it’s filled with vegetables! Plus, it helps you use up your tomatoes from the garden! This delicious soup has become one of our favorite meals. I hope you enjoy it as much as we do!
