One of my favorite parts of the holiday season is Christmas morning. As a kid, my parents had a rule that I had to stay upstairs until they went downstairs first and put on the tree lights. When Santa came on Christmas Eve, he would decorate our tree, so the first time I would see it all lit up and decorated was on Christmas morning.
Christmas Breakfast Recipe
Now we decorate our tree weeks in advance, but Christmas morning is still so special. Why? Because it’s one of the most delicious breakfast meals of the year! There’s always bacon sizzling, bread toasting, eggs (always scrambled) and the big plate of pancakes. Oh yes, would it be a holiday morning without the sweet smell of maple syrup poured over moist and delicious pancakes?
I wanted to make a festive pancake recipe. Something that not only the adults will love to eat because of how delicious they are, but the kids will love because they’re festive and fun. First of all, these pancakes are gingerbread flavored. With each bite, it feels like you are eating a soft piece of a gingerbread cookie. And boy, do they smell like gingerbread cookies!
Ingredients For Red Gingerbread Pancakes
These Christmas pancakes include simple ingredients that you likely already have in your pantry from all the baking you’ve been doing this season. This recipe makes enough to feed a small family or you can double the batch and have enough for a crowd. Here’s the lineup of ingredients needed:
- Baking powder
- Baking soda
- Brown sugar
- Red food coloring (I use the color “Christmas Red”)
- Optional: Powdered Sugar, Butter, Icing and/or Syrup
How Do You Make Red Gingerbread Pancakes?
These gingerbread pancakes look all fancy and extra, but they’re actually super easy to whip up. Start by whisking together flour, baking powder, baking soda, salt, ginger, cinnamon and brown sugar in a large mixing bowl.
Make a well in the middle and add egg, vanilla and water. Continue to whisk everything so all ingredients are equally combined.
Next up is the fun color. What says fun food more than bright colors? We toss the batter with some red food coloring to give it a rich Christmas coloring. Feel free to have fun here and get your kids involved. Maybe you want to do half red pancakes, half green pancakes instead? Go for it!
Spray a griddle or pan with nonstick spray. Drop 1/3 cup of batter for each pancake.
Wait until pancakes are cooked on one side, then flip to the other side and repeat. Continue this method until all of the batter is gone. Top pancakes with powdered sugar, butter, icing and/or syrup and enjoy!
I love making these pancakes extra special for the holidays. On Christmas morning, I like to frost up an ice cream cone and put it upside down on the top of the pancake stacks. It looks just like a white Christmas tree.
And we can’t forget the dusting of powdered sugar to represent sweet snow. In this case, let it snow, let it snow, let it snow!
