Birthday Cake Sprinkle Muffins
These Birthday Cake Muffins are super fluffy, just like a birthday cake—and they taste just like it too! I fold sprinkles into the batter and then add extra sprinkles on top in the muffin pan for bright rainbow color all over. They’re basically Funfetti muffins, but in muffin form!
If you’re looking for a fun alternative to birthday cupcakes, bake a batch of these muffins instead. You won’t even miss the frosting with how sweet and delicious they are! Perfect for birthday celebrations, birthday breakfasts, or just adding a little cheer to your day. They also make a fun snack to share at work or school.
I love baking with sprinkles because they make everything more joyful! Some of my other favorite colorful treats include Sprinkled Butter Cookies, Sprinkle Sugar Cookie Bites, and Confetti Cake Batter Brownies—but now we’re adding a new member to the sprinkle family: Fluffy Birthday Muffins!
How to Store Them
Let your muffins cool completely, then store them in an airtight container at room temperature for up to 3 days. For longer storage, pop them in the freezer for up to 2 months—just thaw or warm them in the microwave for a few seconds, and they’re as soft and fluffy as when they came out of the oven!

Sprinkle Birthday Cake Muffins
PrintIngredients
- 2 cups all-purpose flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2/3 cup milk
- 1/2 cup butter – melted
- 2 eggs
- 2 teaspoons vanilla
- 1 tablespoon lemon juice
- 1 tablespoon vegetable oil
- 1 cup rainbow sprinkles + additional on top
Instructions
- Preheat oven to 400 degrees.
- Grease your muffin cup holder.
- In a bowl stir together flour, sugar, baking powder and salt.
- In a separate bowl stir together milk, butter, eggs, vanilla, lemon juice and vegetable oil.
- Add wet mixture into dry mixture and stir until combined.
- Add in 1 cup of rainbow sprinkles and gently mix with spoon to equally distribute them.
- Spoon batter into muffin cups, filling them 2/3 of the way.
- Sprinkle additional rainbow sprinkles on top of each muffin
- Bake for 14-15 minutes or until slightly browned on the sides.
- Cool and enjoy

Made these for birthday breakfast for my teen son. I loved how simple the recipe is—it came together in no time!
I put them in the Nordicware train cake muffin pan, and they actually came out of the pan better than any cake recipe has. I only used half a bottle of sprinkles (maybe 1/3 to 1/2 cup) and that was plenty. In the future I might add some mini chocolate chips, or white chips, for a little something extra, but I can see where these would be great for little kids. I’ll be keeping this recipe as a base for other experiments.

Adding lemon juice to milk is one way to get a substitute for buttermilk. That curdling is actually supposed to happen in this recipe.

I just made these for my daughter’s 3rd birthday, to bring into school. I wanted something fun but not with a ton of icing 🙂 These are delicious! I actually doubled the recipe and added 1 cup of Fage 2% yogurt for added moistness. It made 24 regular sized muffins plus about 15-16 mini muffins! Delicious. Thank you for this recipe!
