Sprinkle Muffins

Sprinkles and bright colors make everything funner, that’s why I love baking with them!  Birthday Cake Truffles, Birthday Cake, Sprinkled Butter Cookies, Milk Bar Birthday Cake, Chewy Confetti Cookies, and Confetti Cake Batter Brownies are some of my favorite colorful treats but now we’re adding a new member to the sprinkle family – Fluffy Birthday Muffins!

How to Make Birthday Cake Muffins Video

These Birthday Cake Muffins are super fluffy, just like a birthday cake – and they taste just like it too!  I include sprinkles inside the batter and then add additional sprinkles on top once in the muffin pan to give them a bright rainbow color all over!  They remind me of Funfetti cake mix but in muffin form!

Sprinkle Birthday Cake Muffins

Fluffy, SPRINKLE BIRTHDAY CAKE Muffins that taste just like birthday cake! This is a easy rainbow muffins recipe that is pretty and perfect for happy birthday parties and birthday breakfast. Kids LOVE these FUN birthday muffins!

Cook Time: 15 minutes minutes
Total Time 25 minutes minutes
serves 12

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2/3 cup milk
  • 1/2 cup butter – melted
  • 2 eggs
  • 2 teaspoons vanilla
  • 1 tablespoon lemon juice
  • 1 tablespoon vegetable oil
  • 1 cup rainbow sprinkles + additional on top

Instructions

  • Preheat oven to 400 degrees.
  • Grease your muffin cup holder.
  • In a bowl stir together flour, sugar, baking powder and salt.
  • In a separate bowl stir together milk, butter, eggs, vanilla, lemon juice and vegetable oil.
  • Add wet mixture into dry mixture and stir until combined.
  • Add in 1 cup of rainbow sprinkles and gently mix with spoon to equally distribute them.
  • Spoon batter into muffin cups, filling them 2/3 of the way.
  • Sprinkle additional rainbow sprinkles on top of each muffin
  • Bake for 14-15 minutes or until slightly browned on the sides.
  • Cool and enjoy

    This was a great recipe! I added chocolate chips and made it as mini muffins and it was perfect to bring to my son’s Kindergarten. Thanks so much. I love how the texture is more cakey than a muffin.

    Made these for birthday breakfast for my teen son. I loved how simple the recipe is—it came together in no time!

    I put them in the Nordicware train cake muffin pan, and they actually came out of the pan better than any cake recipe has. I only used half a bottle of sprinkles (maybe 1/3 to 1/2 cup) and that was plenty. In the future I might add some mini chocolate chips, or white chips, for a little something extra, but I can see where these would be great for little kids. I’ll be keeping this recipe as a base for other experiments.

      Adding lemon juice to milk is one way to get a substitute for buttermilk. That curdling is actually supposed to happen in this recipe.

    I just made these for my daughter’s 3rd birthday, to bring into school. I wanted something fun but not with a ton of icing 🙂 These are delicious! I actually doubled the recipe and added 1 cup of Fage 2% yogurt for added moistness. It made 24 regular sized muffins plus about 15-16 mini muffins! Delicious. Thank you for this recipe!

    I am curious if you’d made this into a chocolate recipe? and if so, did you just add X amout of cocoa? Thanks!

    We had a snow day today and we made these for our (almost!) 7 year old. We had no eggs (how on earth did that happen?!?) and ended up blending 3/4 cup of cottage cheese to replace them and the oil. They turned out amazingly delicious!!!! Definitely will be making them again! Thanks so much!
