Easy to make Egg and Cheese Breakfast Sandwich ready in 5 minutes. Simply microwave the egg and toast on a English muffin!

Easy egg and cheese breakfast sandwiches are perfect for busy families and individuals who don’t always have the time to cook in the morning. Breakfast is the most important meal of the day—so you don’t want to miss it! Breakfast (and often a cup of coffee) will give you the energy you need to get through the morning. Once you see how easy this recipe is, it will be your favorite go-to anytime you need to grab something quick.

Kids love these breakfast sandwiches too! Since a sandwich takes less than 10 minutes from start to finish, they’re a quick breakfast for busy school mornings!

The Best Easy Egg and Cheese Breakfast Sandwich 

You won’t find easy recipes quite like this one! That’s just how easy it is. All you need are a few ingredients and a microwave. This easy breakfast sandwich recipe is so simple yet fully satisfying! It’s a great way to start your morning if you’re in a time crunch or just don’t feel like going all out! Busy days are inevitable, so it’s a good idea to have great recipes like this one in your kitchen arsenal! Having a great breakfast ready each day doesn’t have to be a chore!

The best part about these egg and cheese breakfast sandwiches is that you can make several at once to freeze for later! You’ll just need a few more english muffins, scrambled egg, cheese, and freezer bags!

How to Make Egg and Cheese Breakfast Sandwich 

Whisk the egg in a microwave bowl and cook for 1 minute. This has been my go to egg making method for years when I don’t have time to cook them on the stove or griddle!

Cut English Muffin in half and place the cooked egg on the bottom part of the muffin. You can also use a bagel, which is my husband’s preferred sandwich!

Add a slice of cheese on top of the egg and then place the top half of the muffin on the sandwich. A little note about cheese, you can use whatever cheese you want but Kraft singles in my opinion melt the best in the toaster oven and are our preferred for breakfast sandwiches!

Bake in toaster oven until cheese is melted.

Remove from the toaster oven, allow to cool and eat it!

What To Serve With Egg and Cheese Sandwiches

If you love this easy egg and cheese breakfast sandwich recipe and you’re not in a hurry, you might be wondering what you can pair with it. Here are just a few ideas!

Can I add more to this breakfast sandwich?

Yes! This is just the easy and fast version that I enjoy. You’re more than welcome to add black pepper, oven baked bacon, sausage, hot sauce, sriracha sauce, or even switch out the melty cheese with pepper jack cheese, swiss cheese, or monterey jack cheeses depending on your preference!

Do I have to use English muffins?

No, that’s just my preference since they are small and compact, making them super easy to store in my freezer when I make them in advance. You are welcome to use bagels or slices of bread too. You can try ciabatta rolls, rye bread, or whatever you think will make for a good breakfast! This cheese and egg sandwich recipe can really be molded into whatever you want it to be—as long as you keep it easy!

How to freeze breakfast sandwiches?

Simply make the sandwiches per directions and then allow to cool down. Wrap each sandwich in wax paper so they don’t stick together, and then place in freezer bags and freeze.

Once you’re ready to make them, remove from freezer, unwrap from wax paper and then cook in the microwave or in the toaster oven.

How can I make this recipe healthier?

You can purchase low carb English muffins and pay attention to nutrition labels when deciding what sliced cheese to purchase. You can also add spinach, onion, tomatoes and/or other veggies to top off your sandwich. Not only will this make your sandwich healthier but it will give it much more color and flavor!

Easy Egg and Cheese Breakfast Sandwich

Easy to make Egg and Cheese Breakfast Sandwich ready in 5 minutes. Simply microwave the egg and toast on a English muffin!

Ingredients

  • 1 english muffin
  • 1 egg
  • 1 slice american cheese

Instructions

  • Crack the egg into a microwave safe bowl. Whisk the egg and cook in microwave for 1 minute.
  • Cut English Muffin in half. Remove egg from microwave and place on the bottom part of muffin.
  • Rip the cheese in half and place on top of the egg, criss-crossing the cheese. Place top half of muffin on sandwich.
  • Heat toaster oven to 350 degrees F. Place sandwich on toaster over pan and cook until the top is slightly browned and cheese is melted, about 5-7 minutes.
  • Remove from toaster oven, allow to cool to eat and enjoy!

    You’re doing it all wrong! 🙂 You just *have* to toast your English muffin until it is super toasty but not burned. Then top with egg and cheese. Utter perfection! I also recommend Bays English Muffins –they are in the refrigerated section by the bagels. I eat this sandwich many (many) times a year too.

    Ok, two things:
    1. I love breakfast sandwiches, but never seem to have the time to make them in the mornings, as I’m already rushed enough as it is to get to work on time. I usually take my breakfast (often yogurt, fruit, and granola) along with me and eat it once I’m settled at my desk.
    2. One of the reasons that I didn’t think I had time to make myself a hot breakfast like this egg sandwich is because the idea of frying an egg up in a frying pan just seemed too overwhelming and time-consuming for my early morning brain. I didn’t know I could make the egg in the microwave like that! Eeeeee! This excites me so!
    PS. I’m liking this little space of yours, a lot.
