These soft gingerbread cookies are some of my favorite Christmas cookies to enjoy during the holidays. We always make my homemade sugar cookies, chocolate pretzel cookies and these delicious gingerbread cookies with a dusting of powdered sugar sprinkled on top!

They have that classic gingerbread taste that everyone craves, especially around the holidays. I’m not very good at decorating gingerbread men with icing, so instead I went the easy route of sprinkling powdered sugar on top, which makes such a pretty cookie.

I have been baking a few at a time to preserve and enjoy the pumpkin inside of each.   As we’re nearing the end of September I think it’s time we dive right into pumpkin season with a pumpkin cookie that is delicious and light on the calories.  

How to Make Easy Pumpkin Cookies

These cookies are so easy to make and only require 5 ingredients: pumpkin, quiak oats, maple syrup, peanut butter and pumpkin pie spice. They’re all healthy, simple ingredients.

You’ll add your 5 ingredients to a large bowl and use a hand mixer to blend for about 30 seconds. Then you’ll form the dough into tablespoon sized balls, that you will press down to form a cookie. Bake at 350 degrees for about 15 minutes.

That’s it! This simple cookie recipe makes 18 cookies!

Christmas Cream Cheese Sugar Cookies

Ingredients

For the Cookies

  • 1 1/2 cup sugar
  • 1 cup of butter softened
  • 8 oz cream cheese
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 3 1/4 cups flour
  • 1 teaspoon baking powder

For the Frosting

  • 1 cup powdered sugar
  • 2 tablespoons milk

Additional

  • Sprinkles Decorative Sugar, Crushed Candy Canes

Instructions

For the cookies

  1. Preheat oven to 375 degrees.
  2. In a large bowl cream together the sugar, butter, cream cheese, egg and vanilla. Add salt, flour and baking powder and continue to mix until combined.
  3. On a nonstick cookie sheet or silicone baking mats, add tablespoons of dough for each cookie. With the back of a spoon gently press down each cookie to slightly flatten.
  4. Bake for 9-11 minutes.
  5. Let cool before frosting.

For the frosting

  1. Mix powdered sugar and milk together in bowl with a spoon.
  2. Once cookies are cool, dip each one into the glaze. Add additional sprinkles or chopped up candy canes on top.

NOTE: If you are using cookie cutters, you must chill this dough overnight before rolling it out and baking it.
