This Crockpot Swiss Chard & White Bean Stew is a one-pot meal made with tender white beans, Swiss chard, and vegetables all slow-simmered in a savory vegetable broth. Perfect for busy weeknights, this stew is hearty, flavorful, and easy to throw together.

Crockpot Swiss Chard & White Bean Stew

I love harvesting Swiss chard straight from our garden, and this crockpot meal is one of my favorite garden-to-table meals. It’s the kind of cozy, comforting dinner that practically makes itself in the slow cooker, giving me more time to tend to the garden (or chase after endless kids’ activities). The combination of hearty white beans, fresh vegetables, and tender Swiss chard makes this a filling vegetarian crockpot recipe that’s as easy as it is delicious.

This easy crockpot stew pairs perfectly with my sweet cornbread or fluffy dinner rolls, both perfect for soaking up all the rich, savory broth. Whether you’re looking for a quick weeknight dinner or a slow-simmered weekend meal, this is a simple, delicious way to use up a bunch of Swiss chard from your garden. Enjoy!

How Much Stem to Remove from Swiss Chard?

To prep the Swiss chard, simply slice off the thick stem below the leaf — just the part without any greens attached. I leave the stems and veins that run through the leaf itself; they cook down and add great texture to the stew.

How to Make Easy Crockpot White Bean & Swiss Chard Stew

Add all the ingredients to the crockpot and give everything a good stir to combine.

Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until the vegetables are softened. Mine usually takes 4 hours on HIGH.

Ladle into bowls and serve. I love it with a sprinkle of Parmesan cheese on top!

Make-Ahead Tip

To make this stew even easier, chop all the vegetables and store them in an airtight container in the fridge overnight. The next day, just add everything to the crockpot with the broth and cook!

Storing Leftovers

Store leftovers in an airtight container in the fridge for up to 3-4 days, or freeze for up to 3 months. Reheat on the stove or in the microwave when you’re ready to enjoy!

Ingredients

  • 1 bunch Swiss chard washed, stems removed from bottom, and chopped
  • 2 (15 ounce cans) white beans such as cannellini or great northern beans
  • 1 small yellow onion diced
  • 3 cloves garlic minced
  • 4 cups vegetable broth or chicken broth
  • 1 (14.5 ounce can) diced tomatoes
  • 2 medium sized carrots peeled and sliced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • salt and pepper to taste

Instructions

  • Place all the ingredients into the crockpot, stirring to mix them together.
  • Cover the crockpot and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until the vegetables are tender and the flavors have melded together.
  • Serve in bowls and enjoy! I love it with a sprinkle of Parmesan cheese on top.
