To prep the Swiss chard, simply slice off the thick stem below the leaf — just the part without any greens attached. I leave the stems and veins that run through the leaf itself; they cook down and add great texture to the stew.
How to Make Easy Crockpot White Bean & Swiss Chard Stew
Add all the ingredients to the crockpot and give everything a good stir to combine.
Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until the vegetables are softened. Mine usually takes 4 hours on HIGH.
Ladle into bowls and serve. I love it with a sprinkle of Parmesan cheese on top!
Make-Ahead Tip
To make this stew even easier, chop all the vegetables and store them in an airtight container in the fridge overnight. The next day, just add everything to the crockpot with the broth and cook!
