Burrito Bowl Recipe

Day 3 of Tomato Week!  Monday was Italian Diced Tomatoes.  Tuesday was Roma Tomato Soup.  Now I want to show you how to easily use fresh tomatoes in this 5 Minute Burrito Bowl!

Vegetarian Mexican Burrito Bowl that includes rice, refried beans, corn, tomato, pepper and salsa.  Perfect for work lunches or quick dinners as it only takes 5 minutes to make!

I am loving this 5 minute burrito bowl right now because it’s quick, filling, delicious and uses fresh vegetables from our garden.   It’s perfect for lunch (at home or take to work) because it’s so fast to make.  

Vegetarian Burrito Bowl

I like preparing 2-3 bowls worth of ingredients in the beginning of the week, so I can just throw everything in a container, head to work and then microwave it once it’s lunch time.   If you’re craving a quick Burrito Bowl for dinner, this is the recipe for you too!  You could even add some extra protein to it, such as chicken or more beans.

I bet you have all the ingredients already in your kitchen for this Burrito Bowl. First you’ll need brown rice.  I recommend Minute® Ready to Serve Rice because each individual container equals 1 cup of rice (made in 1 minute!).    

You’ll also need refried beans (canned or you can make my slow cooker refried beans!), corn, tomato, jalapeno pepper (if you like spice) and your favorite salsa.   As I mention repeatedly, I love salsa verde so I use my own salsa verde recipe to add on top.

Once the dish is all prepared, then throw some salsa on top. Use fresh salsa or salsa from a jar.  It can be your favorite chunky tomato salsa, or black bean salsa, or salsa verde.  Use what’s your favorite!

Ingredients

  • 1 cup cooked brown rice I used 1 Minute Ready to Serve Rice container
  • 1/2 cup cooked refried beans
  • 1/2 cup cooked corn
  • 1 small tomato - chopped
  • 1/2 jalapeno - seeds removed chopped
  • salsa of your choice I use salsa verde

Instructions

  • Add all ingredients into a bowl. Pour salsa of your choice on top. Enjoy.
