100 CALORIE brownie is my favorite single serving brownie recipe! This easy recipe makes a fudgy chocolate brownie for one in the microwave in 1 minute!  If you’re anything like me, you will eat a whole tray of brownies if they’re out, so these low calorie brownies are perfect for satisfying a sweet tooth

100 Calorie Brownie

My name is Pamela and I have no self control when it comes to sweets. Yeah, sure I’ll eat one cookie. But then I’m going to come back and eat 4 more. With that in mind I came up with some single serving recipes that satisfy my sweet tooth like my single serving chocolate chip cookie, blueberry sponge mug cake, and this fudgy brownie!

You’re going to love these brownies because not only are they low calorie, but they only take 1 minute in the microwave. That’s right, you don’t have to wait 20 minutes for them to bake in the oven! I hope you try it soon and it becomes your new favorite treat!

How to Make a Single Serving Brownie

Mix your dry ingredients (flour, sugar, cocoa powder, baking soda and salt) in a small bowl or a mug.

Add 2 tablespoons of applesauce, no oil is needed for this recipe. I recommend my homemade applesauce recipe if you want to try to make apple sauce at home sometime.  Yum!

Then mix all the ingredients up.

Cook the brownie in the microwave for 1 minute. Remove from the microwave and marvel at your beautiful brownie for one! Don’t you love how simple it was to make?

Serve as is or add some sprinkles or powdered sugar on top. I always add rainbow sprinkles because like my daughter says “Sprinkles make everything better!”.

Did you know it’s super easy to make homemade powdered sugar? For 1 cup of powdered confectioners sugar blend together 1 cup regular sugar + 1 tablespoon cornstarch until it’s powdery.  Store in a mason jar in your cabinet.

Can you freeze brownies?

You sure can! Wrap each brownie tightly in plastic wrap or aluminum foil to prevent freezer burn. Place the wrapped brownies into a freezer-safe bag or container. When you’re ready to enjoy one, simply microwave it for about 15 seconds to heat it up. These frozen brownies can stay fresh for up to 3 months!

Ingredients

  • 1 tablespoon flour
  • 1 tablespoon sugar
  • 1 tablespoon cocoa powder
  • pinch baking soda
  • pinch salt
  • 2 tablespoons applesauce

Instructions

  • Add flour, sugar, cocoa powder, baking soda and salt in a small bowl or mug and mix.
  • Add applesauce and mix all the ingredients together to make a creamy brownie mixture.
  • Put the brownie in the microwave for 1 minute.
  • Remove from oven and serve as is, or add powdered sugar or sprinkles on top. (optional)
  • Eat it up and enjoy!

Notes

If you want it a little more creamy, add a teaspoon of Nutella when you add the applesauce. Yes, the calories will go up a bit, but this will knock your  brownie loving socks off!

    Love this idea! I find it very dangerous to make full batches of things with the intention of “freezing the rest and eating them slowly” because, let’s face it, that never happens.

    Normally when I make brownies: I binge eat 4, Josh eats a sensible 1 – 2, and my coworkers get the leftovers. Love this recipe, but I think my coworkers might get sad about no leftovers 😉

    I totally hoard baking supplies. I once opened a packing box that I had failed to unpack after moving six month ago, and it was full of various chocolate chips, and bags of marshmallows. An entire packing box.. just like a normal person would have.

    I think have about 8 jars of cocoa powder because I hoard different brands looking for the darkest, deepest chocolate flavor, I understand your dilemma! I’ve also changed jobs and went from working with about 100 people to 5. I can no longer bake for a crowding knowing everything will get eaten, I need to think about portion, these brownies look perfect!

      I know what you mean, but at least we can say we have great selection of cocoa powder when the time calls to be very proud of that! 🙂 This single serving brownies definitely help with the portion issue, it’s always been a problem here… I’ve started doing a weekly Thursday/Friday event where I make a sweet for friends to share at our work space. This makes sure I don’t eat any (ok totally lying – I eat one, I have to try it.. to make sure it doesn’t poison anyone of course).

    I love this – we have the same problem in our house. It’s just me and my husband so I always end up trying to give all our extras away to co-workers so I don’t eat it all! But making a single serving brownie sounds like a good plan for dessert cravings! They tend to hit more often than I’d like : )

      Absolutely! Even with dessert if there’s say 4 brownies left in the pan.. well we might as well finish them off. That’s my horrible train of thought.. instead of eating 1.. you might as well finish them so you can be healthy again tomorrow. But that doesn’t happen because then fudge is made the day after. But these single serving brownies really help! 🙂

    I seldom count my calories intake at all! Especially when it comes to desserts (cos I think most of them the numbers are so high that I would feel guilty consuming!)

      I know what you mean. Yesterday I had lunch at Coney Island and I tried not to look at the calorie board staring at me, but I did after I had lunch.. and then I sighed. But my goodness those cheese fries were delicious! 😉

    Isn’t brownie a a lifesaver when it comes to finishing chocolate? 100-calorie brownies sound pretty good! That looks like a lovely and simple recipe, I love how you made it vegan, too with the addition of apple sauce. Well done, *P*! Now I must devour them all…. and genius, I wish I have a microwave here in Spain. Here in Europe, no one uses microwaves, ever.

      You can do it with an oven too, you just have to preheat the oven first and put it in the oven after turning it off so it would take around 15 minutes to be done or perhaps a few minutes more. Enjoy !
