I thought about doing this post and thought it might be too simple, but simple recipes are always the best right? So I decided to do it, so here I am. Hello.
I love fresh apple juice bought from the farmers market stands. Last year I got my hands on a juicer (thanks Dad!) and ever since then I’ve been livin la vida juicing! When we went apple picking last year I spent hours making cider over the stove, simmering it and adding spices, and yes it was delicious – but it was a long process.

When we went to our 15 month old doctor’s appointment, we found out that Enceladus was anemic and that she needed more iron rich foods in her diet. She was drinking too much milk, which was causing iron not to be absorbed.
Iron Deficiency is fairly common with toddlers, especially when they drink a large amount of milk everyday. On average, doctors say toddlers shouldn’t have more than 24 ounces of milk, but even at 16 ounces of milk a day Enceladus was anemic.
Always being one to try to naturally cure things, I came up with this Spinach Sweet Potato Fruit Pouch, which helped her get her iron levels to where they needed to be!
Leafy dark greens are one of the best sources of iron, such as spinach or kale. If you wanted to substitute kale for spinach in this recipe, go for it! I find that spinach works for taste and in general, kids love it in fruit puree! Sweet Potatoes are a great iron rich food too, so that’s why I’m including both spinach and sweet potatoes!

Whichever your kind of apple you choose, it depends on your taste. Start by removing the core of the apples. Thinly slice the apple. The thinner the apple slice, the crispier the chips. If you want to get them to look like apple rings (like the photos in this post) use a apple corer. Sprinkle them with some salt. The salt adds a nice contrast to the sweet flavor the crisps.

I love cozy sweaters, coats, boots, the crisp wind on my cheeks in the morning and especially the food. Wrap me up in a blanket at night during dinner over a warm bowl of soup and I’m the happiest the girl in the world. October is the time for my 2 favorite holidays, Halloween and my birthday. :D). Halloween is the best time of the year with pumpkin picking, ghosts covering front lawns (or what New Yorkers consider lawns), spooky spiderwebs over doors and little kids trick or treating up their street of brownstones. I wish our apartment building had trick or treaters!
Why else is Fall the best? Apple picking! We usually rent a car and head to Hurd’s Family Farm in New York during this time of the year. There we pick bags of apple, dance down the orchard and then celebrate afterwards with their delicious apple cider donuts and apple cider. Yeah, there’s alot of apple love happening here!
With a bunch of apples, you can make so many goodies. One of my favorite is homemade cinnamon sugar apple sauce, it’s the perfect snack at night, especially warmed up! Did I mention sea salt apple chips too? I can’t get enough of them! But for this apple recipe I wanted something sweet, something I can sink my teeth into with a nice cup of tea – that’s how Apple Spice Crumble Bars came to be!
These bars are delicious, they will quickly become a family and friend favorite. Take them to a party and they will be gone within minutes. The applesauce makes the bars moist without the oil. The recipe uses a entire cup of applesauce making your kitchen smell like a apple wonderland.

First you need some quality apple sauce. This is some that is made at a local farm. Or you can make your own.
In a bowl mix butter, sugar, egg and flours.
Then add your delicious applesauce and stir.
By this time you’ll be smelling Fall in the air!
Next grab your pumpkin pie spice along with baking soda and salt and stir until smooth. I always make a little jar of pumpkin pie spice to last me all Fall. It’s easy to make, I bet you have all the ingredients in your pantry.
Once everything is mixed then put in your sprayed 8×8 pan.
Now get your crumble on. This is my favorite part because it’s delicious!
Add it on top of your mix and into the oven it goes for 35-40 minutes.
And when it comes out of the oven golly molly it’s Apple Spice Crumble Bars time. You want to make sure the bars sit for about 10 minutes so it has time to settle. We want to be able to run a knife down the sides easily to pull it away from the pan.

1/4cupbutter - softened
1/2cupall purpose flour
1/2cupwhole wheat flour
1teaspoonspumpkin pie spice
For the crumble

Preheat oven to 350 degrees. Spray nonstick spray to 8x8 pan.
In a bowl mix butter, sugar, egg and flours.
Add in applesauce and continue stirring.
Add pumpkine pie spice, baking soda and salt and stir until smooth.
Spread mixture into your sprayed pan.
After crumble is made, sprkinkle on top and bake 25-30 mnutes.
Let cool for 10 minutes and then cut up into sized bars desired.

“Best”. I know that’s pretty bold, but this applesauce is just that good. After eating the first spoonful I nearly fell to the floor in tears. Where has this applesauce been my entire life? The recipe is pretty basic with just apples, sugar, cinnamon and a little bit of lemon juice. You can have this in your belly in about 15 minutes which adds bonus points to the process.
After I made this applesauce I’m finding it hard to ever go back to the jarred version, it’s just so rich and fresh. After you eat it, life will be better. You will start to smile more, you will dance a little bit, you will pick up your pets and hug them, you will yell to your neighbor who you never talked to across the street “Have a great day beautiful!”. It’s that good.
