Slow Cooker Scalloped Potatoes and Kielbasa

Easy to make slow cooker scalloped potatoes with kielbasa, ready in 4 hours. This creamy crockpot recipe is an easy solution for a weeknight dinner.

Slow Cooker Scalloped Potatoes and Kielbasa

This Slow Cooker Scalloped Potatoes and Kielbasa recipe is pure comfort food. The potatoes cook until perfectly tender—your fork slides right in—while the creamy sauce, melted cheese, and hearty bites of kielbasa turn it into a full meal all on its own. It’s the kind of cozy, no-fuss crockpot dinner that always disappears fast in our house. We love easy kielbasa recipes like this one, along with our Candied Kielbasa and Instant Pot Kielbasa and Cabbage.

These crockpot scalloped potatoes with kielbasa need just a few ingredients and cook in 3 1/2 hours on HIGH or about 7 hours on LOW, making it an ideal set-it-and-forget-it dinner. If you’re craving a creamy, cheesy, hearty dish that requires almost no effort, I really hope you give this recipe a try!

Do I need to peel the potatoes?

This part is totally up to you. I usually skip peeling the potatoes—mostly because who has time for that? Plus, we grow a lot of our own potatoes, so I like using every bit of them. The skins also give the scalloped potatoes a nice rustic look.

If you’re not a fan of peels, though, go ahead and peel them. The recipe turns out great either way!

How to Make

First, spray your slow cooker pot. This will prevent the potatoes and cheese from sticking to the sides.

Slice potatoes as thin as you can possibly can. I throw mine in the food processor with a slicing blade and they’re done in a minute. Another magical thing the food processor does!

Spread potatoes in the bottom of slow cooker.

Layer with onions/minced garlic. You can slice your onions up smaller if you’d like. We leave them big as we have some “non onion” eaters in the house (it’s me).

Grab your ring of cooked kielbasa and chop it up.

Now add the chopped kielbasa in the slow cooker.

Sprinkle cheese in.

In a small bowl mix cream of mushroom soup, milk, garlic powder and pepper. There’s no need for salt, the mushroom soup already has enough salt in it.

Pour creamy mixture on top.

Close the lid and cook. Serve on plates and enjoy!

Can I bake this in the oven instead?

Yes, you sure can! Prepare as instructed in 9×13 baking dish, cover with aluminum foil and bake for 75 minutes at 325 degrees F. Remove the foil and bake for 15 more minutes.

Ingredients

  • 3 pounds potatoes sliced thin (peeling is optional)
  • 1 small onion sliced
  • 2 cloves garlic minced
  • (1) 12 ounce kielbasa ring chopped
  • 2 cups shredded cheddar cheese
  • (1) 10.75 ounce can cream of mushroom soup
  • 3/4 cup milk
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon pepper

Instructions

  • Spray slow cooker pot with nonstick spray.
  • Add potatoes to the bottom of slow cooker, spreading them out.
  • Add onions and garlic on top of potatoes.
  • Add chopped kielbasa to slow cooker.
  • Sprinkle cheese on top.
  • In a small bowl mix cream of mushroom soup, milk, garlic powder and pepper. Pour this mixture into slow cooker on top.
  • Close lid and cook on HIGH For 3.5 hours or LOW for 7 hours. Serve and enjoy!
