These juicy roasted cherry tomatoes with burrata will melt in your mouth!  Simply bake the tomatoes with olive oil until they burst, and then add creamy burrata cheese on top.  Serve over pasta for dinner, add to a salad, top fresh baked bread as a appetizer or just dive in with a spoon (no judgement!).

Juicy Cherry Tomatoes with Burrata Cheese

These juicy cherry tomatoes with burrata cheese are SO GOOD! Sweet tomatoes are roasted in the oven until they pop, and then creamy silky smooth burrata cheese is added straight into the baking dish, making a beautiful cherry tomato recipe!

You can serve this over pasta for dinner, add to a salad, or use as a appetizer to top freshly baked bread with!

However you serve it, wait until you see the burrata ooze all over, letting it’s creamy center turn everything cheesy! Wow wow wow, getting hot in here or is it just me? Enjoy! 🙂

Ingredients

  • Cherry Tomatoes, you will need 4 cups. Grape tomatoes also work if that’s what you’re growing in the garden!
  • Burrata Cheese, this usually comes in a package with 3-4 smaller cheese balls inside. If yours come as just one piece, you can just place it directly in the baking dish, or break it apart before placing in the baking dish. You could also use fresh mozzarella!
  • Fresh Basil, really elevates the freshness of the dish and adds some color.
  • Other: olive oil, minced garlic, salt and pepper

Bake until the tomatoes start to burst, this takes about 30 minutes.

Remove from the oven and allow to cool for a couple minutes (this prevents the cheese from melting immediately!).

Add burrata cheese balls into the baking dish, and then sprinkle with fresh basil.

Storing Leftovers / What to Do

Store any leftovers in an airtight container in the refrigerator, good for 3-4 days. Warm up in the microwave or in the oven.

Not sure what to do with leftovers? If you add everything to a blender and blend until smooth, it makes a cheesy tomato soup!
