Ingredients
- Cherry Tomatoes, you will need 4 cups. Grape tomatoes also work if that’s what you’re growing in the garden!
- Burrata Cheese, this usually comes in a package with 3-4 smaller cheese balls inside. If yours come as just one piece, you can just place it directly in the baking dish, or break it apart before placing in the baking dish. You could also use fresh mozzarella!
- Fresh Basil, really elevates the freshness of the dish and adds some color.
- Other: olive oil, minced garlic, salt and pepper
How to Roast Cherry Tomatoes with Burrata
Wash cherry tomatoes and add them into a 11×8 baking dish.
Pour olive oil, minced garlic and salt and pepper on top, mixing to coat them.
Bake until the tomatoes start to burst, this takes about 30 minutes.
Remove from the oven and allow to cool for a couple minutes (this prevents the cheese from melting immediately!).
Add burrata cheese balls into the baking dish, and then sprinkle with fresh basil.
Serve however you want – enjoy!
Storing Leftovers / What to Do
Store any leftovers in an airtight container in the refrigerator, good for 3-4 days. Warm up in the microwave or in the oven.
Not sure what to do with leftovers? If you add everything to a blender and blend until smooth, it makes a cheesy tomato soup!
