So Fresh and Juicy Roasted Cherry Tomatoes with Burrata
These juicy roasted cherry tomatoes with burrata will melt in your mouth! Simply bake the tomatoes with olive oil until they burst, and then add creamy burrata cheese on top. Serve over pasta for dinner, add to a salad, top fresh baked bread as a appetizer or just dive in with a spoon (no judgement!).
In a 11x8 baking dish, add cherry tomatoes. Pour olive oil, minced garlic, salt and pepper on top, stirring to fully coat the cherry tomatoes.
Bake for 30-35 minutes, or until the tomatoes begin to burst.
Remove tomatoes from the oven. Allow to cool for 10 minutes.
Remove burrata cheese balls from the package and place them on top of the tomatoes in the dish. If yours come as just one piece of burrata, you can just place it directly in the baking dish, or break it apart before placing in the baking dish. Sprinkle fresh basil on top.
Serve over pasta for dinner or fresh baked bread for a appetizer/snack. Enjoy! Store any leftovers in the refrigerator in an airtight container, good for 3-4 days.
