Pancakes Without Milk and Eggs

If you’re out of milk and eggs but still craving pancakes, don’t worry—I’ve got you covered with this delicious, fluffy pancake recipe! I already have a No Butter Pancakes recipe, but this one takes it a step further. Instead of milk, we’re using water. Yes, water! You’ll be shocked at how light and airy these turn out, even without milk and eggs.

Sometimes I run low on simple ingredients like milk and eggs, and I don’t realize it until I open the fridge and find them missing—right when I’m ready to make breakfast. But don’t worry, you can still whip up the perfect stack! These pancakes are so fluffy that even my family couldn’t believe they were made without milk and eggs! Pair them with crispy bacon (check out how to cook bacon in the oven for an easy method), or serve them alongside my No Butter Waffles for a full breakfast spread.

How to Make These Pancakes

These pancakes are simple to make, you only need 1 bowl and 1 pan.

In a large bowl mix all purpose flour, sugar, baking powder and salt. Mix it up.

These pancakes are extra fluffy because we’re using 4 teaspoons of baking powder. Make sure to use the full amount for full fluffiness!

For the main liquids we’re using butter and water. For the butter, you’ll want it to be melted. I throw mine in the microwave for 30 seconds.

The main liquid though is water. That’s right, just good ol water. There’s nothing fancy here. You’ll need 1 1/2 cup water, I just turn on my tap!

Add melted butter, water, vanilla and vegetable oil on top of the dry ingredients. 1 bowl – don’t you love it?

Continue mixing with a spoon until it’s pretty smooth and you don’t see many clumps. You don’t have to make it completely clump free, a few clumps isn’t going to hurt anything.

Heat up a frying pan over medium high heat, making sure to spray with nonstick spray if its not a nonstick pan. Add 1/3 cup batter to the skillet. Each 1/3 cup will equal a pancake.

Allow to cook for 2-3 minutes or until you can easily flip them without them falling apart. Flip and then lightly brown the other side.

The recipe makes about 10-12 pancakes which is about 4-6 servings depending on how many pancakes per person everyone is going to want.

Now add your favorite syrup on top, or top with butter and fresh fruit preserves (like blueberry jam!). My favorite is just simple maple syrup, nothing else!

How to Freeze Leftovers

We have a family of 3, so often we’ll have leftovers. I actually love having leftover pancakes because this is a simple breakfast that I can pull out of the freezer on weekday mornings, throw in the microwave for 30 seconds, and ta-da! Mom made homemade pancakes again!

All I do is throw the pancakes into a freezer bag, I don’t separate them or anything. When it’s time to take out of the freezer, they’re pretty easy to just peel apart from each other. Then they go straight into the microwave. These easily freeze for months, so you don’t have to eat them quickly.

Ingredients

  • 2 cups all purpose flour
  • 1/4 cup sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup butter melted
  • 1 1/2 cup water
  • 1 tablespoon vanilla
  • 1 tablespoon vegetable oil

Instructions

  • In a large bowl mix flour, sugar, baking powder and salt.
  • Pour in melted butter, water, vanilla and vegetable oil and mix with a spoon until mostly smooth.
  • Heat a frying pan up over medium high heat, spraying it with nonstick spray. Add 1/3 cup batter to pan, for each pancake. Allow to cook for about 2-3 minutes, or until firm enough that you can easily flip them over. Lightly brown the other side. Once browned on both sides, remove from stove. Repeat this until all batter is gone. Batter should make 10-12 pancakes.

    My son has severe allergies to milk and eggs (anaphylaxis). He’s 2 so just getting to the age where he wants to be eating the same thing as his brother and sisters. Have tried other egg and dairy free recipes that were not so great. This one is a winner! Followed the recipe exactly and it turned out great! I actually liked it better than the recipes that contain milk and eggs! The texture is great, very cakey. This is our go to pancake recipe from now on. Thank you!!!

    This was awesome.. I am out of EVERYTHING! Tried these I made these gf, I milled rice flour, buckwheat, millet 1..25 cup and added starch 3/4cup with 3/4 guar gum. Worked out perfect thanks so much!

    So I have made these a few times and have decided that these are great in a pinch. I agree with other people that they are a bit doughy in the middle. I tried adding water to make it less thick so that the middle would could better which helped. I tried making a bigger pancake once and that was a fail because the middle really didn’t cook well at all. I could have cooked it lower for longer but in the past I have found doing so usually causes dried out pancakes. I’m not right sure of the flavour but it could be because I am using margarine instead of butter. Real butter always tastes better. So overall I will give it 5 stars because it exceeded my expectations for a no egg or milk recipe but the main thing to remember is to add more water for sure!

    I love this recipe 😍😍 it’s the best when you have no eggs although I used vegetable oil for a substitution for the butter 😒 but still this was amazing 🤩 if I could I would rate it a 1000/10

    i loved it, i had no milk or eggs and was craving pancakes after watching norris nuts who can eat the most pancakes video. would recommend. it had an extremely strong taste of olive oil and I really like olive oil so its a thumbs up from me. it was thin and small and fragile and it makes me happy because it is a small petite little thing just like me UwU.

    Very tasty and easy to make (for the most part)! The batter was a little thicker than I’m used to, so while trying to reshape one, I launched a UFO across the cook top! Hey, I never claimed to be Julia Child. ;-} LOL!

    Thank God I found a recipe with no eggs and milk. My kids love pancakes and we are a family of six so I make a lot. So of course we run out of the eggs and milk. But with this recipe I also added cinnamon and really sweet fresh bananas OMG!!! So Good. Thanks try it

    I don’t know how I feel about this recipe… the flavor is absolutely amazing however the batter is a little hard to work with for round pancakes. I ended up adding quite a bit more water to try and get the batter more pourable; didn’t quite work out with the shape of the pancakes. They were doughy in the middle, so thankfully no raw egg; I’ve been making dairy-free gluten-free egg free pancakes for a long time these are strange to me but they’re really good. I still give five stars and I will probably use this recipe again.

    I have tried the recipe for Easy fluffy pancakes but I have tried it with ghee instead of butter. Ghee offers higher smoke point, hence for deep frying ghee is a better butter. Now you may ask how to use ghee? I prefer using Milkio grass-fed ghee for all culinary purposes. . ghee is a safe cooking oil. I use it as cooking oil of my pancakes.

    I was scared to try this becouse I still say little issues with it and I burnt it a little on the edges and it was a little liquidity but I’m eating it now and they are amazing thanks

    I subbed out half cup of flour and the sugar for a very sweet birthday cake protein powder.
    Excellent recipe! So much more fluffy than I thought was possible.

    This was great when I found myself out of milk and eggs! I did find that adding an extra 1/4 C of water helped them pour and get more of a pancake shape on the griddle.
