How to Make Pancakes From Scratch

Don’t have any butter? That’s totally okay. Today, we’re making Homemade No Butter Pancakes—and trust me, they’re just as delicious (if not better) than their buttery sisters! These pancakes are so good that they quickly became our #1 pancake recipe in the house. They’re soft, fluffy, and the perfect start to any morning. Plus, they’re a great option if you’re out of butter or just want a lighter version of your favorite breakfast treat!

If you’re looking for a dairy-free option, try my No Milk No Eggs Pancakes—they’re just as fluffy and satisfying, and perfect for anyone with dietary restrictions. And while you’re at it, why not pair your pancakes with a batch of crispy bacon? I’ve got a foolproof method for how to cook bacon in the oven, so it comes out perfectly crispy every time.

Dairy Free or Vegan Pancakes

If you want to make these pancakes dairy free or vegan, that’s easy.  Just substitute the milk for almond milk or oat milk and you’re all set! 

If you want to make these pancakes vegan, that’s easy too.  Instead of using 1 egg, use 1/4 cup applesauce.  

How to Make Pancakes With No Butter

Instead of butter we’re going to use 2 tablespoons vegetable oil and 1 cup milk for the liquid ingredients.  Even with no butter, these pancakes are going to be extra fluffy and moist!

First you’ll want to mix your dry ingredients together…like the flour, sugar, baking powder, baking soda, salt and cinnamon!

Now add your wet ingredients to the bowl, the milk, eggs, oil and vanilla!  Don’t you love how you probably already have all the ingredients in your kitchen?

Using a pan on the stovetop, or a electric griddle (my new favorite breakfast cooker!), heat the batter over medium high heat for a few minutes, making sure to brown both sides of the pancakes! Breakfast is ready!

You’ll just need to throw them in a freezer bag to freeze.   Then you’ll microwave them just like you do for any store bought frozen pancakes.  Except these ones are so much better than store bought pancakes because they’re homemade!

NO BUTTER Homemade Pancakes recipe are fluffy and so easy to make!  They’re so good you won’t miss the butter at all, that makes them more healthy too!   These made from scratch pancakes are my favorite Saturday morning breakfast, my family considers them the best!

Cook Time: 10 minutes minutes
Total Time 15 minutes minutes
serves 4

Ingredients

  • 1 cup flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup milk
  • 1 egg
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon vanilla

Instructions

  • Combine flour, sugar, baking powder, baking soda, salt and cinnamon in a bowl. Make a well in the center.
  • In another bowl mix together milk, egg, oil and vanilla until combined.
  • Pour wet mixture into dry mixture well. Mix until completely combined.
  • Spray a griddle or pan with nonstick spray. Heat over medium high heat.
  • Pour 1/3 cup of batter for each pancake on hot griddle. Brown both sides.
  • Serve hot with maple syrup on top.

Notes

If you want to make them dairy free/vegan, then use almond milk instead of regular milk.   Use 1/4 cup applesauce instead of egg.

    These pancakes were so good I had to come back to find this page and leave a review. I had planned to make pancakes with 3 kids looking forward to them only to open my fridge and see I was totally out of butter. No margarine. And definitely wasn’t going to the store. I googled a recipe and picked the first one I saw with decent reviews hoping we wouldn’t be able to tell a difference in flavor or texture….. the difference? They’re the best pancakes I’ve ever made lol. These ended up being so perfect they will undoubtedly be the go to recipe for pancakes in our house butter or not from now on!! They taste buttery. The texture is perfect. The cinnamon and vanilla amps up the flavor. 10/10 pancake recipe. You won’t be disappointed.

    So delicious! I substituted the sugar for stevia Splenda mix for a healthier option. Ended up being only 120 calories per pancake which I can easily fit into my calorie deficit.

    This was such a good recipe. I was looking for a recipe that didn’t require butter because I didn’t have any in the fridge. I’m going to lie, I was a little skeptical at first, but one bite made me a believer. It’s super fluffy and you can adjust the sweetness to your taste after making it. My parents are diabetic and pre-diabetic, so I love that it only uses a tablespoon of sugar. Cheers!

    OMG I LOVE THIS SO MUCH well I made the pancakes there good but if you put some chocolate chips in the inside while you cook them… mmmmmmmmmm so good y’all need to try this also the pancakes without the chocolate is SUPER good yum!!!

    I found i needed to add an extra half cup flour, because the batter was a bit runny. I also added a quarter cup of oats and half cup of blueberries. It was very tasty

    I just made this recipe for the first time with my granddaughters. Everyone loved them. Very easy to make. I’m not vegan, but I didn’t have butter in the fridge, so I looked for a butter-less recipe. We will definitely make them again.

    Absolutely fantastic! Thank you so much for this recipe! My 8 yr old loved the addition of the chocolate chips I added after pouring the batter onto the flat top. They cooked in, flipped and DONE!! After hearing the excitement from her my 15 yr old actually came to eat breakfast. Lol He was also equally impressed. My wife came home from running errands and was able to have a few as well. What started as trying to fit in a quick breakfast for my daughter (and not having any butter in the house). Turned into everyone enjoying breakfast and me (Capt. Dad) being the hero of the morning. Thank you. I hope you have a wonderful day and God Bless.

    Hands down the best pancakes I have ever made! Followed the recipe almost exactly (omitted the cinnamon). My husband didn’t even believe they were made without butter. Thanks for an amazing recipe!
