You all have been loving my no butter pancakes so I had to share my no butter waffles recipe next!
If you’re looking for a solid go-to waffle recipe that skips the butter but still gives you that fluffy, satisfying texture, this is it. These waffles are simple to make, come together fast, and always cook up perfectly in the waffle iron—no weird ingredients or complicated steps.
What I like most is how versatile they are. The applesauce swap keeps the texture light, and the flavor works with whatever you want to throw on top—maple syrup, fruit, yogurt, you name it. I usually make a double batch so we can freeze the extras and have a quick breakfast ready for busy school mornings.
How to Make Waffles With No Butter
In a large bowl, whisk together the flour, baking powder, salt, and sugar.
Add the eggs, warm milk, applesauce, and vanilla extract. Stir until the batter is smooth and well combined, with no lumps.
Scoop the batter into a preheated waffle iron and cook for about 4 minutes, or until the waffles are golden and cooked through.
Serve warm with your favorite toppings—maple syrup is always a good choice!
Storing and Freezing Leftovers
To store leftover waffles, let them cool completely on a wire rack so they don’t get soggy. Once cooled, place them in an airtight container or zip-top bag. Store in the refrigerator for up to 3 days.
For longer storage, freeze the waffles in a single layer on a baking sheet until solid (about an hour), then transfer them to a freezer-safe bag or container. They’ll keep well in the freezer for up to 2 months. To reheat, just pop them in the toaster oven straight from frozen until warmed through and crisp.
Can I make them vegan?
If you want to make these waffles fully vegan, it’s an easy switch. Use almond milk (or any plant-based milk you like) in place of regular milk, and swap in flax eggs instead of eggs.

So yummy and definitely very fluffy! You can’t taste the apple sauce in it at all! I did use an extra tbs of vanilla because I could still smell the apple sauce but it turned out amazing!

Hey Murrell, if it had a bitter after-taste I would look at the waffle iron (what it’s made out of – including how it’s coated), as well as making sure the baking powder isn’t expired. I’ve never had bitter tasting waffles from this recipe – hope this helps!
