NO BUTTER Homemade Pancakes recipe are fluffy and so easy to make! They’re so good you won’t miss the butter at all, that makes them more healthy too! These made from scratch pancakes are my favorite Saturday morning breakfast, my family considers them the best! Dairy Free/Vegan option too!
How to Make Pancakes From Scratch
Don’t have any butter? That’s ok. Today we’re going to make some Homemade No Butter Homemade Pancakes. They’re just as delicious as butter made ones… maybe even better! We love these pancakes so much in our house that they became our #1 pancake recipe!
How to Make Pancakes With No Butter
I wish I could say these pancakes were created because suddenly I wanted to make healthy pancakes and do without the butter, but the truth is that we were out of butter. Do you often run out of butter too?
No Butter Pancakes Recipe
To make these pancakes you’ll need:
- 1 cup flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup milk or almond milk
- 1 egg
- 2 tablespoons vegetable oil
- 1/2 teaspoon vanilla
How to Make Homemade Pancakes
Instead of butter we’re going to use 2 tablespoons vegetable oil and 1 cup milk for the liquid ingredients. Even with no butter, these pancakes are going to be extra fluffy and moist!
First you’ll want to mix your dry ingredients together…like the flour, sugar, baking powder, baking soda, salt and cinnamon!
Now add your wet ingredients to the bowl, the milk, eggs, oil and vanilla! Don’t you love how you probably already have all the ingredients in your kitchen? Btw, I’ve been buying a big bottle of vanilla extract that lasts forever – it’s so much more economical than buying those small bottles!
Spray a griddle or pan with nonstick spray and then heat the batter over medium high heat for a few minutes, making sure to brown both sides of the pancakes!
Dairy Free Pancakes
If you want to make these pancakes dairy free or vegan, that’s easy. Just substitute the milk for almond milk and you’re all set! You should also check out my Vegan Peanut Butter Cookies recipe!
Vegan Pancakes
If you want to make these pancakes vegan, that’s easy too. Instead of using 1 egg, use 1/4 cup applesauce.
Hope this No Butter Pancake recipe helps you if you’re all out of butter too! It might just become your new favorite pancake recipe!
And if you really love them, try making a double or triple batch to freeze! You’ll just need to throw them in a freezer bag to freeze. Then you’ll microwave them just like you do for any store bought frozen pancakes. Except these ones are so much better than store bought pancakes because they’re homemade!
Enjoy the pancakes everyone!

This is my go-to recipe when I am saving my butter for other recipes. I made them earlier this week. My kids eat them without syrup as a substitute for toast in the morning. Thanks for the great recipes (but I should stop looking for now, I am getting really hungry)!
Pamela says
Hey TJ, thanks for commenting and letting me know you liked these pancakes! Hope you can find some more recipes you like on my blog! 🙂
Ilah says
These pancakes are delicious but they require egg so I had to adjust the recipe a bit to make it vegan friendly. Still good though! 💕
Pamela says
I’m so happy you enjoyed the pancakes! Thanks for commenting!

The title got me intrigued. I love butter but I occasionally want to ditch it considering all the fat it brings with it. Pancakes are my favorite breakfast meal and it is so lovely to see your recipe and the unique idea that comes with it for cooking them. Definitely, nothing beats the homemade pancakes. Thank you for sharing.
Susan Claire says
I never run out of butter, I always have some in the freezer, but I adopted the oil method years ago only because I was too lazy to melt the butter for my pancake recipe. You are right, nobody misses the butter!
Felecia izebehai says
I will try it

Just made them!! Delicious! I made them with whole meal flour and almond milk (and added a little bit of soy cream) so they were also lactose free, and used honey instead of sugar and they were fluffy and tasty as well.
Thank you!
Pamela says
Hey Ilaria, thanks for commenting! I love the addition of almond milk and honey. Glad to hear you enjoyed these pancakes!

Urooba says
Can you bake these in a muffin tin to make pancake bites? What are the requirements? Can I use oat flour that’s homemade? Filling/toppings?
Pamela says
Hello Urooba, I’ve never made these into muffin bites, but if you look up in the comments someone turned them into cupcakes and it worked perfectly. You will need to experiment with the recipe if you are changing them into bites and using oat flour for baking time.
Update: I made them into mini muffins – you can check out the recipe here: https://brooklynfarmgirl.com/2017/05/15/dairy-free-mini-pancake-muffins/ – YUM!

Erin Davenport says
My pancakes always turn out sub-par considering the amount of work. When I checked to see if I had butter I looked up a recipe without thinking “how bad can it be compared to my usual?”. Omg these were FANTASTIC and super simple. No sifting or waiting for ingredients to get to room temperature. They turned out a great shape, color, consistsncy and taste. This will be my new staple Sunday recipe.
Pamela says
So happy you enjoyed these pancakes Erin! You just reminded me to have to have breakfast for dinner sometime soon! 🙂
Katie says

That Salem gif just made my day 😀 And can I confide in you? I recently watched all the seasons of Sabrina The Teenage Witch again. Such a good show!
Anyway, your pancakes are fabulous. I just want to lick that maple syrup off the screen…

I love it when you can overcome an ingredient problem, sometimes the best recipes come from creative thinking. I shop in a bunch of different ways, I do a bulk shop at the beginning of the month then I pop along to the local store as and when I need to, usually for baking stuff! But I also do a bit of online shopping as I don’t drive and if my fella is away working he isn’t around to drive me to the store and like you said a taxi is a crazy way to get home! Also a lot of my baking stuff is only available online, so I am very versatile in my shopping habits 😀
