These pancakes are so good that they quickly became our #1 pancake recipe in the house. They’re soft, fluffy, and the perfect start to any morning. Plus, they’re a great option if you’re out of butter or just want a lighter version of your favorite breakfast treat!

No Butter Pancakes Recipe
- 1 cup flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup milk or almond milk
- 1 egg
- 2 tablespoons vegetable oil
- 1/2 teaspoon vanilla
Dairy Free Pancakes
If you want to make these pancakes dairy free or vegan, that’s easy. Just substitute the milk for almond milk or oat milk and you’re all set!
Vegan Pancakes
If you want to make these pancakes vegan, that’s easy too. Instead of using 1 egg, use 1/4 cup applesauce.
How to Make Pancakes With No Butter
Instead of butter we’re going to use 2 tablespoons vegetable oil and 1 cup milk for the liquid ingredients. Even with no butter, these pancakes are going to be extra fluffy and moist!
First you’ll want to mix your dry ingredients together…like the flour, sugar, baking powder, baking soda, salt and cinnamon!
Now add your wet ingredients to the bowl, the milk, eggs, oil and vanilla! Don’t you love how you probably already have all the ingredients in your kitchen?
Using a pan on the stovetop, or a electric griddle (my new favorite breakfast cooker!), heat the batter over medium high heat for a few minutes, making sure to brown both sides of the pancakes! Breakfast is ready!

And if you really love them, try making a double or triple batch to freeze! You’ll just need to throw them in a freezer bag to freeze. Instructions
- Combine flour, sugar, baking powder, baking soda, salt and cinnamon in a bowl. Make a well in the center.
- In another bowl mix together milk, egg, oil and vanilla until combined.
- Pour wet mixture into dry mixture well. Mix until completely combined.
- Spray a griddle or pan with nonstick spray. Heat over medium high heat.
- Pour 1/3 cup of batter for each pancake on hot griddle. Brown both sides.
- Serve hot with maple syrup on top.

These pancakes were so good I had to come back to find this page and leave a review. I had planned to make pancakes with 3 kids looking forward to them only to open my fridge and see I was totally out of butter. No margarine. And definitely wasnโt going to the store. I googled a recipe and picked the first one I saw with decent reviews hoping we wouldnโt be able to tell a difference in flavor or textureโฆ.. the difference? So delicious! I substituted the sugar for stevia Splenda mix for a healthier option. Ended up being only 120 calories per pancake which I can easily fit into my calorie deficit.
