This fresh summer salad features crisp kale, lettuce, and radishes, all drizzled with a zesty olive oil and lime dressing. It’s a light and refreshing dish that’s perfect for warm weather!
Fresh Kale and Lettuce Salad
This kale salad is 100% picked from our garden which always makes me very happy. It’s made with chopped kale, lettuce and slices of radishes.
I prefer oil based dressings instead of creamy, so I made a simple lime dressing to go on top. To balance out the sour taste of the lime, we add in a little bit of sugar.
This is one of my favorite Summer salads to eat for lunch, or as a side salad for dinner. To bulk up for lunch, sometimes I add in cherry tomatoes, avocado chunks or chopped nuts on top for a good crunch!

Kale Lettuce and Radish Salad Ingredients
- kale, you can use regular kale chopped up or baby kale.
- lettuce, chop up the lettuce. Romaine, Butterhead and Iceberg all work good! You could also use arugula if you want more of a peppery taste.
- radishes, slice them up thin.
- for the dressing: olive oil, lime juice, sugar, salt and pepper
How to Make This Simple Salad
In a large bowl, combine the washed kale, lettuce, and radishes.
In a small bowl, whisk together the lime juice, olive oil, sugar, and salt and pepper until the sugar dissolves.
Drizzle the lime dressing over the vegetables and toss to coat. Serve and enjoy!

- 3 cups kale washed and chopped
- 3 cups lettuce washed and chopped
- 2 radishes washed, sliced thin
- 3 tablespoons olive oil
- 3 tablespoons lime juice
- 1/2 teaspoon sugar
- salt + pepper to taste
Instructions
- After washing everything, add kale, lettuce and radishes into a large bowl.
- Mix lime juice, olive oil, sugar and salt + pepper together in a small bowl until sugar is dissolved.
- Pour lime dressing over vegetables in the bowl and toss to coat. Serve and enjoy!

Love the lime in this. And the radishes. My favorite radishes are icicle radishes and I never see them anymore. Great salad though!
