Broccoli Cheese Soup with Velveeta

Do you know how much I love this Creamy Cheese Broccoli Soup? I made  it for dinner on Friday. Then I made it again on Sunday. And now I’m thinking when should I have it again.  

Broccoli Cheese Soup Ingredients:

You will need:

butter
broccoli (frozen or fresh)
carrots
corn
chicken broth
Velveeta cheese
milk
heavy creamy
garlic powder
dried mustard
cornstarch
water

This Creamy Broccoli Cheese Soup recipe is a family favorite! I love serving it as comfort food on a cold night!  This soup is made with broccoli, carrots and Velveeta cheese!

This soup has all the good stuff in it.  There’s cheese and milk to make it creamy, then there’s broccoli, carrots and corn to make it a vegetable dream.     The soup is incredibly creamy and if you serve it with a piece of bread, you have a perfect dinner.

Velveeta Broccoli Cheese Soup

Velveeta cheese in my opinion makes the most creamiest soups, so whenver I can cut up a loaf of Velveeta, I’m in! You will need a 8 ounce block of cheese for this recipe, to cut up and add to the soup!

This soup only takes 20 minutes to make, with  a few minutes to prepare, making it a deliciou 30 minute and under dinner recipe!

With every spoonful you get a good serving of vegetables covered in creamy cheese sauce.

Broccoli Cheese Soup with Velveeta

This Creamy Broccoli Cheese Soup recipe is a family favorite! I love serving it as comfort food on a cold night!  This soup is made with broccoli, carrots and Velveeta cheese!

Prep Time: 5 minutes minutes
Cook Time: 25 minutes minutes
Total Time 30 minutes minutes
serves 4

Ingredients

  • 1/2 cup butter
  • 4 cups frozen or fresh broccoli florets
  • 1 cup carrots – peeled and chopped
  • 1 cup frozen corn
  • 3 cups chicken broth
  • 8 ounces Velveeta cheese – cubed
  • 1 cup milk
  • 1 cup heavy cream
  • 1 tablespoon garlic powder
  • 1 teaspoon dried mustard
  • 1/2 cup cornstarch
  • 3/4 cup water

Instructions

  • Melt butter. Add in broccoli, carrots, corn and chicken broth.
  • Bring to a simmer for 10 minutes.
  • Add in cubed cheese, milk and heavy cream
  • Stir in garlic powder and dried mustard.
  • Mix until cheese is completely melted (5-10 minutes).
  • In a separate bowl mix cornstarch and water until cornstarch is dissolved. Then add to soup mixture.
  • Mix for about 5 minutes on medium high heat until you reach a thickness you like.
  • Serve, Enjoy.

    Love that you put some different vegetables in the soup instead of just broccoli. It looks so creamy and tasty! I can’t offer much advice on winter coats. I’ve had the same cashmere one for about ten years. It’s not that warm because I’m soooo not practical when it comes to fashion, but I like it. I won’t let myself buy a new one because I want to move somewhere warm.

    I have never owned a coat like that…because I am a small gal, I would keep the coat if I were as tall as you! I like it cozy and warming. The cheesy broccoli soup looks divine. Totally enjoy the soup season!

    I like the coat. I totally couldn’t pull off the padded look, but you so can! I have absolutely no idea what Velveeta is?! But this soup looks amazing! I need it in my life.

    Oh, that soup looks perfect for an autumn dinner. I’ve never seen Velveeta in solid form. I thought it only came as a spread in a jar. Interesting. I just made a broccoli cheddar chowder and my daughter Charlotte was cheering tonight. It’s her favourite. I bet she’d love yours Pamela.

    I love broccoli and cheese but I actually have never had it in soup form. And this soup looks pretty. I feel weird when I describe food like that but it is! I love the colors. 😛

    Anyway, the coat looks nice on you! I used to have a coat like that, but it wasn’t warm enough for me. So if you need a warm coat maybe that’s not the right coat but seriously you look cute — love the shoes too!

    The coat fits you well, you have a nice figure. Is this the super light jacket by uniqlo? I was about to by one but I thought it was too light to keep me warm. Love the soup, I’m all about cheese and veggies this days so it’s perfect for me!

      Yup, it’s the Super Light one. I think I’m going to return it, I was hoping for something super warm and light but I think it might be too good to be true. I wore it out today to test it out and didn’t find it as warm as I hoped. 🙁

    Soup looks great! As for the coat, my friend actually has one that looks exactly like that. She got it when she used to commute to NYC for work and had to wait in the cold for the train. It kept her pretty warm!

    Love your red pants – coat looks warm, sorry you don’t think it is…if you don’t like it, you should def. return it – everytime I have kept something I am doubtful of, I never end up wearing it.

    I’m going to go out this afternoon to buy the “fixings” for this soup – I can’t wait to eat it! I’m also going to pick up the fixings for another recipe which came out today for a baked rigatoni. I’m going to have a happy tummy!!
    (You might like my Jalapeno Corn Chowder, called a “chow-da” by people in the eastern part of Massachusetts! But in western Massachusetts, we say “chow-der”!)
