Confetti Cake Batter Brownies

Easy to make sprinkle Confetti Cake Batter Brownies recipe. These funfetti brownies are moist, fudgy and so ooey gooey good!  They make the best birthday cake brownies!

Confetti Cake Batter Brownies

I love everything and anything cake batter, so it comes as no surprise that I am absolutely in love with these super fudgy Confetti Cake Batter brownies! 

This recipe uses a box of confetti/funfetti cake mix, along with other simple ingredients to make the best fudgy brownies ever!

Now you can call them blondies if you want, but I’m going to go with brownies because it feels right.   A vanilla brownie, let’s call it that.  Or an albino brownie, we can do that.  I’ve googled this brownie vs blondie debate and the wounds go deep with those on both sides, but I think we can come together and just enjoy these together!

How to Make Fudgy Birthday Cake Brownies

You want to use a boxed cake mix for these brownies, the Funfetti or Betty Crocker’s Confetti variety.  I used Confetti.  It’s the same thing.

Mix cake mix, oil, egg and milk together in a bowl.

sprinkle confetti cake mix in bowl mixed with wet ingredients.

Add your white chocolate chips and rainbow sprinkles.  The white chocolate chips are what helps make them so moist and fudgy so don’t skip them!

Mix until sprinkles and chocolate chips are fully combined in the batter.

Pour into baking dish and bake for 25-30 minutes. You want to keep them in the oven just until the edges are very slightly brown.  This takes around  25-30 minutes, mine took 26 minutes to be very exact.  The time and dish size is important in making them fudgy!

And soon these gorgeous cake batter brownies will appear! Let them sit for 15 minutes so they can set in the dish.  If you cut them too early, they might fall apart.  I know it’s hard to resist.

What Size Baking Dish for Brownies?

If you want ooey gooey Confetti Cake Batter Brownies, your baking dish size matters.   I used a 11×9 dish (you can also use 11×8) and I feel this made them just the right amount of soft and gooey that I wanted, so try to use a baking dish around this size.   Some readers have used larger dishes and they end up more cake like, not fudgy like we want.

These brownies are one of my family’s favorite and I love making them with my daughters. We also love eating them together! 🙂

Confetti Cake Batter Brownies

Easy to make sprinkle Confetti Cake Batter Brownies recipe. These funfetti brownies are moist, fudgy and so ooey gooey good!  They make the best birthday cake brownies!

Ingredients

  • 1 box Confetti/Funfetti cake mix
  • 1/4 cup vegetable oil
  • 1 egg
  • 1/3 cup milk
  • 1/4 cup rainbow sprinkles
  • 1/2 cup white chocolate chips

Instructions

  • Preheat oven to 350 degrees F. Spray a 11×9 baking dish with nonstick spray (you can also use 11×8 dish)
  • Combine cake mix, vegetable oil, egg, and milk into a bowl, mixing with a hand mixer.
  • Add sprinkles and white chocolate chips, continue to mix with a spoon until all combined. 
  • Spoon batter from bowl into the prepared baking dish, sprinkle a few more rainbow sprinkles on top.
  • Bake 25-30 minutes until your edges are slightly brown.  Mine took exactly 26 minutes.
  • Since the brownies are very fudgy, please allow them to cool completely or they will fall apart! 🙂  After cooling, cut into brownie square and enjoy!

    The video for the recipe doesn’t look like it reflects the ingredients at all- wayyy more chocolate chips/sprinkles are used, and the mix looked like it made a lot more than the typical boxed cake mix. I tried these last night and baked them in an 8×8 pan for 24 minutes and they tasted fine but came out like cake. I was so disappointed! I’m not sure if baking them for only 20 minutes would have been better ?

      Hey Nicole, the video is accurate to the recipe listed here (I made it). 🙂 The recipe calls for a 11×9 pan, and it sounds like you used a 8×8 pan. If you want to make them more fudgy with a 8×8 pan, I’d cut the time by 2-4 minutes, or next time time try with a 11×9 pan. Hope this helps.

    The trick is definitely to NOT over cook! Mine came out thick and delicious, but the center is definitely better than the edges. I took them out when the center still came out a little “doughey” with a toothpick and that made them the perfect consistency! I also used 1/2 cup of liquid egg whites instead of the egg since i had some on hand!

      Per recipe directions, I recommend a 11×9 baking pan for these brownies. That makes them extra fudgy.

        This what I used it still is turning out like a cake am I baking it to long? Please try and help

    Same i used phillsbury funfetti follow directions exactly not enough liquids im assuming was not able to “pour” i have to smear out with spatula would be interested to see if anyone could figure out how this recipe works with phillsbury

      Hey Jessica, I’ve used Funfetti many times for this recipe. You will need to spoon the batter out of the bowl and into the baking dish, not pour it. If you scroll down the photos you can see the consistency of the batter on the spoon. This is a family favorite recipe so I wish it would have worked out for you. I will try to make a video of this recipe soon just so you can make sure you aren’t skipping a step. Thanks for commenting!

      I seem to be having the same issue. I ended up adding about 1 cup of milk to the mixture to get it easy to stir. Otherwise it was more like cookie dough consistency. Haven’t out then in the overnight yet but will let you know how they turn out. I just used walmart brand Funfetti cake batter.

    I’m so sad! I was so excited to make these, but when I added my milk, oil and egg to the dry cake mix there was not enough liquid to incorporate all the dry mix. I tried and tried, but it looked nothing like yours and I ended up with a sore arm! Finally I added 1/4 cup more each of oil and milk and also another egg. Fingers crossed they turn out!

    Any suggestions, though? I’d like to try to make them again your way!

      Hey Sara, 1/4 cup vegetable oil + 1/3 cup milk should be plenty of liquid to 1 box cake mix. What brand of cake mix did you use? I’m wondering if it was something that was more heavy on the flour. This is one of my family’s favorite recipes so I’d like to help you figure out what happened! Thanks!

        Thank you for replying! I used the 15.25 oz box of Pillsbury Funfetti cake mix (that’s all my store had in stock). I wondered if maybe it might have been the difference in brand. With the 1/4 + 1/3 I wasn’t able to stir it all together. I definitely want to figure out what went wrong so I can have those beauties from your pics!

    Hey I tried to make these but I think I went wrong somewhere.
    I followed the instructions exactly but I found it wasn’t enough Milk. I couldn’t even stir the cake batter with 1/3 cup. And then when I added the chocolate chips it make it even tougher. I had to add more milk just to be able to stir it.

    I went to pour into a 11×9 baking dish and it didn’t spread evenly (the batter wasn’t enough to fill the whole dish). I had to transfer the batter to a smaller baking dish. Unfortunately these didn’t turn out in a brownie consistency.

    I was really looking forward to these too.

      Did you add vegetable oil too? 1/4 cup vegetable oil + 1/3 cup milk should be plenty of liquid to 1 box cake mix. Here’s the consistency you should have when adding in the oil/milk/egg (easy to stir!): http://farm3.staticflickr.com/2881/8883933834_85c7bcf652_c.jpg

      You don’t have to, but it helps make them ooey gooey. If you want to use regular chocolate chips you can, it will just give the brownies a different appearance.
