Cold Peanut Butter Pasta Salad

Happy Monday everyone!

First of all, do you have World Cup fever?  I get so darn excited every 4 years.   If you’re from America, did you watch the USA vs Portugal game yesterday?  Did you scream, yell, cheer, cry, then become confused why you are crying because after all tying Portugal 2-2 is actually ok?  Yeah, me too.  The game had so many ups and downs and the last 30 seconds.. oh man.  I can’t even talk about it!   Let’s get psyched for USA vs Germany on Thursday though!  Here in NYC they have been showing all the World Cup games on a big screen under the Manhattan Bridge in DUMBO (part of Brooklyn).  Being a Sunday evening, the game was packed with USA USA USA chanting fans.  We went and it ended up being such a blast.  Large groups of people cheering with positivity and little negativity (basically only when Ronaldo is on the screen) is always a good time.

 

Here’s a video I made after USA scored their first goal.  We were PUMPED!

Now let’s talk Cold Peanut Butter Pasta Salad!  I made this recipe for my favorite friends over at Peanut Butter & Co and I thought it was a perfect time to post it that it’s now officially Summer!   When it gets hot here I crave a cold dinner, so this pasta salad hits the spot!  Peanut butter not only is a great ingredient in sweets, but you can also make savory dinners with it. In this make-ahead recipe, this chilled pasta salad includes peanut butter, fresh vegetables, noodles and spices. Because of the red pepper flakes, this salad has a good kick to it, so use 1-2 teaspoons depending on the amount of heat you prefer (I’m more of a 2 teaspoons girl myself). If you’ve never tried peanut butter and noodles before, give it a shot! It has become one of our favorite dinners.

    Oh my goodness YEASSSS… We’ve got World Cup Fever in my office, we are doing a sweep, the entire team have thrown themselves into the spirit of it all, wearing our team colours and even meeting at 2am in bars all over the city to watch the games. Its crazy, but a lot of fun. The socceroos are out, as are my sweep team from the Ivory Coast… 🙁
    Peanut Butter Pasta sauce… Seriously random, I’ve never tried, but Im game.
    That poor kitty looks terrified, but I reckon the game would be a lot more fun with some cats involved.

    I was watching the world cup (it’s like christmas for some people over here) but then England went ahead and got knocked out and now all I hear is whining, so i can’t be bothered!

    Love that pasta though, So glad I’m not the only one who loves peanut butter on salads. Can’t wait to try it!!

    I enjoy watching the World Cup, but unfortunately the time zone difference makes it almost impossible to watch any games live. Plus, England are out already! (boring!) I love peanut butter in noodles and often add a spoonful to more complex Asian recipes. Love the idea of making it more of the star of the show in this cold summer dish, though. Mmm … it’s nearly dinner time here so I can almost taste it!

    I crave cold PB noodles! This looks so great, Pamela. I’d be a 2 tsp girl of those red pepper flakes myself, too. 🙂 I’ve found myself watching lots of the World Cup games as my boyfriend is a big soccer fan. I don’t typically watch the sport but I’m getting behind it this year. It’s exciting to say the least!

    Okay, probably not good to mention that I am not following the World Cup. So to quickly change the subject—-I am running here—–I do love the salad. Quite different and I love peanut sauce anyway—so this should be a winner.

    USA v Portugal was such a thrilling game. I loved every minute of it.
    But then again, I’m like obsessed with the World Cup and watch it all. So I guess we’re pretty much on the same boat Pam!

    BTW that cold pasta looks amazing. Great recipe!

    Holy cow, this looks like heaven in noodle bowl form! I have a major thing for peanut sauce and your recipe sounds amazing. Also, I was in Peru for the beginning of the World Cup and it was so fun to see every single person getting SO into it 🙂

    I wish I had world cup fever 🙁 Normally I really enjoy watching the games and seeing the spirit in Vancouver (on the Italian streets mostly haha), but it just isn’t happening for me here in NZ. I have been watching alot of rugby though… 😉

    That cat is hilarious!

    hahaha…we do have sort of a World Cup fever, even though Poland is not in it. Go USA and Italy!
    No, I have never cooked dinner with peanut butter, so thanks for a tasty inspiration.

    My husband played soccer in high school, so yes, we’ve been watching the games. He YELLS at the TV – you may hear him where you live!! He was just shocked last night! Couldn’t believe it!
    Mmmm … I just had a salad for dinner that had a peanut dressing! I can’t wait to try it with noodles and veggies!! I love hearty salads!

    I must answer yes to all of your questions: cats should be including in sporting events, pb is amazing in dinner, and World Cup fever is AMAZING! This salad looks delicious! Cold pb noodle salads are one of my favorite indulgences.

    I love using peanut butter in savory dishes so I know I would love this! We’ve been watching a little bit of the world cup – and yes, it would be more fun with cats! I personally am a huge fan of the puppy bowl during the super bowl : )

    I totally get peanut butter pasta though! I just tried savory peanut butter dishes a couple months ago and I.am.hooked. They are so delicious! Love this easy dinner recipe!

    Ugh, I couldn’t believe that Portugal scored with seconds left in the game. We all yelled “NO!!!” Darn Reynaldo.
    Ok, on to this amazing noodle salad. This looks so delicious! I love the peanut butter! I could pretty much put peanut butter sauce on anything and be happy 😀

    My daughter is a huge soccer fan so the games are on all the time at our house! That’s a spirited crowd – am hoping everyone had some good deodorant on 🙂

    I actually watched the game! And they kept showing footage of people in NYC watching it in what looked like a park, so you’re practically ESPN famous.

    P.S. I would love to watch cats play soccer. It sounds adorable.
