Healthy Taco Dip Recipe
September is Organic Harvest Month, a time to discover new organic recipes! Organic recipes benefit you, your family, your community and the planet so it’s a fun time to support your local food co-cop, farmers market or backyard garden! Not only is this dip tasty, you can also make it 100% organic along with your tortilla chips!
Having a garden makes me appreciate where our food comes from. Before gardening, I wasn’t even aware of what some plants looked like, but now after years of growing our own seeds, it makes me pretty proud to see our dinner table filled with vegetables.
We were able to see the entire process – from seed, to seedling, to a baby plant being planted in the ground, to becoming a full sized plant, and then being able to harvest its vegetables.
Being able to grow our own vegetables in NYC is pretty special and something I really look forward to. Don’t have a garden? No worries, you can find good vegetables at your local farmer’s market too! Make sure to stop by this weekend to pick up the ingredients for this dip!
Easy Taco Dip Ingredients
- 1 bag of Mission Organics® Yellow Corn Tortilla Chips
- Green Pepper
- Pinto Refried Beans
I wasn’t lying when I told you this dip was packed with vegetables! I’m using tomatoes, lettuce, corn, green pepper and refried pinto beans- all from our garden!
You can use any type of tomato you want in this recipe – but I think Roma or cherry tomatoes makes the best tasting dip! Cherry tomatoes add a little sweetness which I really like.
Best Tortilla Chips for Dipping
Mission Organics Yellow Corn Tortilla Chips are my favorite chip for serving with dip! They are organic, tasty and can handle any dip without breaking. What more do you need? Ok, they’re also non-GMO, gluten-free, have no artificial preservatives or colors and are made with sea salt. They are the best!
Because this dip has layers of vegetables, it’s important you use a tortilla chip that’s hearty enough for dipping! And these tortilla chips hold up to the challenge! Their bold corn flavor made with just a few wholesome ingredients makes Mission Organics Tortilla Chips my go to serving chip! For a store locator and more recipes visit this site!
How to Make Taco Dip
This easy dip takes less than 10 minutes to make! First you’re going to dice up your tomatoes, green pepper and lettuce. That’s pretty much all the prep work – don’t you love it?
Now we’re going to start to layer our dip. I used a regular white bowl, but or presentation purposes, you could also use a glass bowl because then everyone can see how gorgeous this dip is!
This dip is 7 layers, so start adding your ingredients to a bowl. Start with tomatoes because we’re going to duplicate that twice. Add tomatoes, corn, lettuce, pinto refried beans, green pepper, tomatoes and cheese.
And then finally, the cheddar cheese!
Taco Dip With Refried Beans
This recipe calls for pinto refried beans. The refried beans adds a natural creaminess to the dip. You can buy canned pinto beans and throw them in a food processor to make them refried, or you can buy them already made in the can – it’s up to you!
Healthy Taco Dip With No Cream Cheese
Can I even call this the healthiest 7 Layer Taco Dip that you might ever make?
That’s right. This taco dip doesn’t contain cream cheese or ground beef. Really, it doesn’t need these fatty ingredients to make a good dip. And can I be honest? Real honest with you guys? You know I would never lie about food. You won’t miss the cream cheese in this dip at all.
When I first made this Taco Dip for a potluck a few years ago, multiple people told me they loved how light this dip was. That meant they could go back for 2nds and 3rds without the guilt!
Should I Serve Taco Dip Hot or Cold?
You can serve it hot or cold, depending on the occasion. For summer months, I like to serve it cold, but when it becomes fall and winter, I will serve it hot. To warm it up, pop in the microwave for 30 seconds, or until the cheese melts.
I hope you enjoy this Healthy 7 Layer Taco Dip!
